Hot Artichoke and Spinach Dip II
This is a hit every time! Like some other reviewers, I use sour cream instead of mayonnaise, sometimes leave out the basil, and I stir the mozzarella into the mixture before baking, rather than putting it on top. I do put a little bit of extra parmesan on top prior to baking, perhaps 1/4 cup or so at most, and that works well. It goes quickly and there is never any left over, so make enough!

Best Spanish Rice
I made this at a work party for a large group, so we scaled up the recipe and it still turned out great! The cooking time had to be adjusted until all the liquid was absorbed, but this was easy to monitor, so not a big deal. This is very simpler to make, and easy to customize, such as different types of salsa based on how spicy you like it. It keeps for a few days, so you can make a large batch and have it for a few days, too. A great side or base for many other options!

Chicken Tortilla Soup I
This was my first attempt at making chicken tortilla soup and I chose this recipe after looking at several on the site, and was not disappointed. This is a great recipe! I followed it exactly with a few minor changes based on other reviews: I used 40 oz of chicken broth, substituted cumin for the oregano, added the juice from half of a lime, I shredded the chicken instead of cutting it into pieces, and I omitted the black beans as a personal preference. I let it simmer for about an hour as others had suggested and this seem to really set the flavors. I also made my own tortilla strips using corn tortillas cut into strips and baked in the oven until crispy. I used the toppings as called for in the recipe and it was just perfect. I'll definitely make this again!
