About this Cook
Recent college graduate and have taken steps to improve myself through weight loss and healthy eating.
My favorite things to cook
I really enjoy challenging myself by discovering new ways to prepare fresh produce and cooking from scratch. Butternut Squash Soup II is the most recent favorite at home, and I highly recommend it :-)
My favorite family cooking traditions
My daughter and I cook a Christmas breakfast for friends and family every year. We always try new recipes, but one staple is Blueberry, Lemon Poppyseed bread. It just wouldn't be the same without it.
My cooking triumphs
I have finally mastered over easy eggs!!!! (thank you
My cooking tragedies
Pretty much everything I ever made from scratch before joining the online cooking school I was the queen of overcooking, improper food prep techniques, drying out chicken. Also, my first Thanksgiving dinner. I was REALLY over my head and made several things I had never cooked before, including mashed potatoes (which turned out like paste, no joke). *sigh* SOOO glad those days are behind me now :-)

President Ford's Braised Eye Round Steak
My man and I loved this! I don't cook steak or even eat steak because it's always so tough, but I bought the eye of round hoping that I could make it edible for my meat-and-potatoes man. I have never seen steak simmered before and wow, I'm going to do this a lot now. It was so easy and the sauce was fantastic. I took the advice of others and eliminated the seasoned salt and added garlic powder in its place; the wine and beef broth added just enough salt. Next time I will make the sauce thicker by adding in some corn starch, and I'll probably simmer it longer than 1 hour (I think 1.5 hours would make it perfect). Thanks so much!

Easy Broccoli Salad
I've always liked adding a little something to broccoli, usually a bit of parmesan cheese. My man is a a big fan of all things lemony, so I gave this a try. We both loved it. If I change anything at all, I'd reduce the amount of vinegar by a wee bit.
