Chicken 'n' Biscuits

My husband and I LOVE this recipe. I'm making it tonight - it will be our 4th time in a couple of months. The only changes I make - and this is for our personal tastes, but again we REALLY like it - are: I add some diced onion to the veggie mixture - maybe one small onion. Then instead of putting shredded cheese on top, I use a package of cheddar-garlic biscuit mix (which you combine with water rather than the milk) and drop that by spoonfuls on top. Also, I've never been a big fan of french-fried onions, but DO NOT leave them out of this recipe. They really make the flavor of everything stand out.

Broiled Tilapia Parmesan

Yummy, Yummy, Yummy! I've now made this SEVERAl times and I've done it with a variety of fish - Tilapia, Catfish, and now Redfish. I do season w/ Old Bay or Tony's first and just adjust the time as needed for the thickness of the fish. Usually I also throw in a handful of breadcrumbs, BUT this weekend I decided to use Panko crumbs instead - OH MY! Perfection!!!! It really added a nice crispiness to the coating! Try it!! Mmmmm Mmmm Mmm!!!!

Cheddar Sausage Muffins

Yummy! I've done these twice now - once as written and once I added a can of chopped green chilies (sp?). My guys love them and I know they'll be great for them to keep in the freezer at the hunting camp.

Brown Sugar Smokies

These were Great!! I think I was most tickled by the fact that 1pkg of smikies fit perfectly on my broiler pan (LOL).Definitely line the bottom of the pan and spray the top with cooking spray before adding smokies. I served with the Brown-Sugar Smoky Dip from AR and they were fab!

Mini Ham And Cheese Rolls

LOVE these! I'm only giving 4 stars because I do them slightly differently - but they are ALWAYS gobbled up. Use the little dinner rolls you find in the regular bread section of the grocery - not the larger ones, the ones in the throw-away rectangular pan where the rolls are only about 1x2 inches - three rows of about 8 or 10 rolls. Remove from pan still connected and slice across the whole thing horizontally. Put the bottom half back in the pan. Brush part of the butter mixture on inside - bottom and top. Add your ham & cheese (easier if you chop it all up first) then replace the top half. Pour/brush the rest of the butter mixture on top. Cover with foil & bake 20 minutes. Let rest at least 5-10 minutes before cutting between the rolls. You'll NEVER have left overs, so I advise doubling your recipe!

Mushroom, Leek, Chicken Sausage and Tortellini Soup

This was really great. I used spicy smoked sausage because I have a lot in the freezer, so I cut down a little on the hot sauce (used Louisiana Hot Sauce) and we loved it! Really nice on a cold evening! Thanks, Jane!

Sausage Jalapeno Poppers

Really good! I had to cook mine a about 10 min. longer to get the bacon done, and I did microwave it for about 45 seconds prior, and the peppers were probably a little bigger than I would have preferred, but that's MY issue. Didn't turn out very pretty, but QUITE tasty!

Oh my Heavens! This stuff is FINE!!!! Made it exactly as directed (even dug my food processor out of the garage) and LOVED it! Put it on fish tacos. Now I'm trying to figure what all else it would be good on..... Crab cakes anyone?!?! Thank you, Amykin!

Absolutely delish! I pounded the breast & rolled them around stuffing. Only changes were I upped the garlic (We love it) and threw in a few chopped & sauteed mushrooms & some parmesan. Served over buttered angel hair with parsley and reserved the remaining spinach mixture to make this again, which I most certainly WILL be doing!!!

Simple Carnitas

Holy Guacamole! This is some fine stuff! Just kicking myself that I waited so long to make it! Only change was to cook it in my slow cooker - recipe exactly as written. Smelled fabulous and tasted even better! Made Mexican Rice II (Using broth from this) and Refried Beans w/out the Refry. Had it for breakfast, lunch and dinner over the last couple of days! And told DH I'd be content to eat it every meal from here on out!YUMMY!!! Thanks, Ken!

Great recipe, WW! I doubled it and added two seeded & chpped jalapenos. It was the first and only thing cleaned out at our Memorial Day gathering! Can't wait to make it again - and LOTS of requests for the recipe. Awesome!
