Sizzlin' Fajitas

Great marinade! I had a sirloin steak & didn't know what we wanted to do with it & came across this recipe. I used regular flour tortillas & dried cilantro (bad, I know) because it's what I had on hand. Hubby, who isn't much of a fajita fan, went on and on about how delicious these were. Thanks, Tara, for a definite keeper recipe!

Simple Spicy Hummus

Alfredo Medallions

Absolutely delicious! I used boneless pork chops and dried thyme. Put the chops back in the sauce & let simmer until all the side items were finished. We LOVED this! Thank you, Marianne!

Rigatoni with Duck, Onions, Apple and Red Wine

Very good! We really enjoyed this dish. It didn't blow me away (hence 4 stars), but it was definitely good. It's not pretty, but has a very nice flavor. I thought the wine would be overpowering - it wasn't. I did forget the parsley, but doubt that made a difference, and I used penne since my grocery didn't carry Barilla rigatoni. My only real complaint was difficult timing with things cooking in 3 different pans. Another winner from Barilla!

Lentil and Sausage Soup

Yum! I followed the advice of others (Bakingnana) and used the full package of sausage (18-19oz) and all chicken broth (not water). It was a huge hit with my husband and the full house of surprise guests. We will make this soup again & again!

Honey Lemon Glazed Salmon with Spinach Saute

This was Wonderful! I followed the recipe to the letter. The only tiny issue is we wanted more of the spinach! Without the spinach, we found the salmon needed a little oomph, but when eaten together (as the recipe intends) it was really fantastic! Thank you, Mazola!

Wavy Lasagna with Meat Sauce, Fresh Ricotta and Spinach

We enjoyed this simple, basic lasagna. I did add 12oz. of Italian sausage, browned, as we're real meat-eaters. I also needed additional sauce, about another half jar. The Barilla sauce is a little sweet for my taste, so next time, I would probably add additional seasoning - garlic, onion powder and some crushed red pepper flakes.

Roasted Loin of Pork with Pan Gravy

We absolutely LOVED this! I brined my roast first then applied the rub per instructions and let it sit overnight in the fridge. It is a little spicy, which we thought was great, but you might cut down on the cayenne if that's not your thing. The gravy was SO delicious! This recipe is absolutely a keeper!

Whole Grain Spaghetti with Cherry Tomatoes, Marinated Chicken Breast and Pesto

This was great! I had already marinated & grilled chicken breasts with garlic & herbs the night before, so this came together in no time! I'd never tried whole grain pasta & to be honest, I couldn't taste any difference (Yay, Barilla!). This dish will be made many more times in our house.

Bacon and Cheddar Stuffed Mushrooms

These are great. I have made them replacing the bacon with 1/4lb Italian sausage (uncooked)and baked for 25min. They turned out excellent as well.

De-lish! And so pretty! I loved the potatoes on the bottom. Next time I might cook the potatoes a little longer just to crisp them up some. I did use about half the cheese called for, but that's personal preference. We will definitely make these again.

Mom's Secret Chocolate Pie Recipe

Yummy! This was so easy & we LOVED it! It's very similar to a recipe we've done in a casserole dish for years. I swirled a little caramel sauce on top, honestly, just to make it pretty, but everyone thought it added a very nice compliment to the chocolate. This is a keeper! Thanks, sjryan! Youre Mom's a genius!

Sweet and Spicy Salmon with Grapefruit Salsa

My salmon was cooked perfectly at 20 minutes. The grapefruit salsa was a little overpowering but did complement the fish well. Without the salsa, coating on the fish was too sweet for my liking.

Original Irish Cream

Yum! This is delicious! And my friends have devoured it! Per some reviewers suggestions, I did 1/2 heavy cream & 1/2 half 'n half, cut the almond extract to 1/2 tsp and added 1/2 tsp coconut extract. You can really adjust the whiskey (I used Bushmill's) to suit your tastes. For us, we decided about 1 1/2 cups was perfect. Thanks for the recipe - I'm off to make more now!

Salted Caramel Sauce

Delicious! Although not as easy as I'd hoped. Like many others, my first batch burned - I didn't know that at first, but it did taste a little bitter. So I tried again, lower & slower. And Eventually I got the butter & cream incorporated - with NO bitter taste. (Yay, me!) So that's your clue - if it's bitter, you burned it. Sorry. Thanks, Chef John for making me get back on that horse!

Jazzy Green Bean Casserole

A nice change - not quite your standard Green Bean Casserole, also not the same Shoepeg Corn & Green Bean Casserole I'm used to. I did use yellow corn (frozen) because it's what I had on hand and I used fresh onion sautéed in a little butter (again, because I had it & needed to use it up). I also replaced half the cheddar with pepper-jack cheese. Everyone enjoyed it!

Chicken With Mushrooms

Quite tasty! I used half white mushrooms & half baby bellas. Sautéed them with a bit of onion & garlic and added a splash of white wine before layering with the chicken. And I thickened the sauce afterward with some corn starch. Not certain I'll make it again as I have a similar recipe that's all done in one skillet, but it was good enough that even leftovers were gobbled up quickly.

Rather than mixing the sugar with boiling water, I used SPLENDA granulated (which dissolves perfectly) and used milk in place of the cream (I'm sure cream would have been More Delicious). So easy & a great morning pick-me-up for us "non-coffee" drinkers.
