Bacon and Tomato Cups

I followed it as written, except I did cut back on the mayo. However, I just didn't like the canned biscuit taste for the crust. Maybe I was expecting something more akin to quiche. Overall, the filling was fine, but the crust wasn't great. I had a lot left over. Maybe if I make this again, I might try pie crust, or filo as another reviewer suggested.

Creamy Salmon and Leek Pasta

I'll have to try this recipe again another time, and next time cut the lemon. I found that the wine, mustard and lemon was just too sour.

Creamy Pesto Shrimp

This is a really wonderful recipe. I used the suggestion of other reviewers to cut the butter way back. Actually, I ended up using approx. 2 TB of butter to saute mushrooms, but that was all. After upping the amount of pesto (yum!) and adding a splash of sherry, the result was fantastic. One note, the yield is actually more like 12 servings, not eight. I made this for company, and even after seconds, there was enough for leftovers.

Meatball Nirvana

Wow! These are fantastic! Because of my kids, I left out the red pepper and hot sauce, but those ingredients aren't what makes this. It's the PARMESAN!! I ended up adding more parmesan than was called for, then ended up needing more bread crumbs because the mixture was too wet. The result was fantastic.

Garlic and Herb Cream Cheese

I was looking for a cream cheese spread like what is found at Panera. As published above, this recipe wasn't exactly to my liking. I felt the butter "weighted" the spread down and added unneeded calories. And the both the amounts of garlic and oregano overpowered the taste of the cream cheese. However, this is a 4-star recipe because of its adaptability. I personally omitted the butter and oregano, and used powered garlic and onion, and bumped up the dill. It turned out very similar to the spread used on the fantastic tomato herbed cream cheese bagels at my local coffee shop. You will enjoy the creativity of this recipe.

Pink Fruit Dip

I've tried this twice, with and without the mayo. And I must say that the mayo does "weigh" the flavor down - the distinct mayo taste comes through even after melding in the fridge overnight. I tried adding more (powdered) sugar, but that just made it more sweet. I tried a touch of white balsamic vinegar, and that helped. However, the second time I made it without the mayo it came out quite great, much "fresher" and light. The grenadine is what makes this dip.

Broiled Tilapia Parmesan

My family really enjoyed this recipe, even my picky toddler. I felt all the seasonings worked very well, but next time I plan on reducing the amount of butter. 1/4 C. butter is a bit much, and I ended up with a bit more grease at the bottom of the pan than I generally like. This one is going into my "to make for guests" file!
