Stuffed Green Peppers

I like others made changes based on what I had on hand, but I think the recipe would be great either way! I used red peppers because that's what I had, and couscous instead of rice. I also substituted a sprinkle of fat free mozzarella instead of cheddar. I also used leftover sauce I had made. They were filling and delicious!

Meatball Nirvana

I absolutely love these meatballs! They were my first attempt at meatballs ever. I made them with ground turkey and made a few (very few) swaps in ingredients because I didn't have what I needed, but overall kept almost exactly the same. SO good! I agree they are a little spicy, which I love, but I might use a little less red pepper flakes when making them for my toddler. Overall - fantastic!

Hot and Spicy Tofu

I was incredibly please with this recipe and the result! I have never made tofu before, though I love it, and this was a winner in my book. I did change the recipe a bit, but it was still quite good. I left out the onions because I don't care for onions, and I didn't have chili peppers. And it was still quite spicy! It's a great dish - I will absolutely make it again.

Baked Haddock

I loved this recipe! I am new to cooking so I wasn't sure how hard this would be, and it is incredibly easy to prepare! The only changes I made in the recipe were I skipped the thyme because I didn't have any and I didn't add butter because I don't use butter very often. It was fantastic! Even my husband liked it and he doesn't like anything! I will definitely be making it again.

Easy Spicy Chicken and Rice

This was extremely easy. I followed the recipe for ths most part and I thought it was quite good. I did add hot pepper flakes to give it a bit more kick. After I made it I realized I liked it better without the chicken so next time I'll probably make it just as a rice dish! Either way - very good!

Quick and Easy Chicken Noodle Soup

I was looking for a homemade chicken noodle soup recipe and this one looked great. The only change I made was I added cut spaghetti instead of the egg noodles, and I wasn't in a hurry so I simmered for several hours. I didn't add the noodles until about six minutes until I was going to eat. It is FANTASTIC! Much better than I thought and I will not be eating canned/boxed chicken noodle soup again.
