Eggplant Chips
Everyone, including eggplant haters, kids and teens, loved these. But I did what other reviewers did. I did the salt trick and also dipped in egg before dipping in bread crumb mixture. Baked at 350 for 20 min. Flipped them. Baked 15 more min and then raised temp to 425 and baked 5 more min. Perfectly crisp. Thanks to the other reviewers for those tips.

Sweet Herb Scramble
My eggs did not turn green or grey. They actually looked like restaurant-quality herbed eggs. The trick is to add the herbs AFTER you pour eggs in the pan. And don't over mix your eggs. Just fold them a few times. DO NOT stir frequently as the recipe suggests. Also, be sure you like sweet eggs. The name doesn't lie. The herbs make the eggs pretty sweet. PS. Add a tablespoon of pancake mix to make them fluffy.

Moroccan Tagine
Used grilled lamb from leftovers and added extra can of garbonzo beans as was suggested by another reviewer. It was really good.
