Midg's Mouth Watering Beef Jerky

I emptied my freezer of venison over Memorial Weekend and made 3 different jerky recipes. With the exception of substituting venison for beef I made as written. This came out perfect. All three came out great but I did prefer the red pepper flakes the others called for. Regardless, I will make this again and just add some too it. Great recipe!

Western Style Beef Jerky

I had the smoker going all of Memorial Weekend and decided to empty my freezer of venison. I did use the smoker instead of a dehydrater and because I was using the smoker I left out the liquid smoke. Out of the 3 recipes I tried on this site, this one was probably my favorite. The beer really tenderized the venison. I will most definitely make again.

Minnesota Whitetail Jerky

I had the smoker going all of Memorial Day Weekend and decided to empty the venison out of the freezer. I did use a smoker instead of the oven but this recipe is spot on for venison jerky.

Simple Baked Rice

I ALWAYS have carrots on hand but on the particular day I made this I found my crisper void of carrots and it was already too late to run to the store. I managed to round up half of an orange bell and had to use it in place of carrot. Simple is right and this pairs nicely with most any meat. I served this with cornish hens I smoked in the smoker and then turned around and served it with ham from the smoker the very next day and it worked great with both. This will be my go to recipe when I am needing a side dish for my meat. Thanks for sharing Arizona Desert Flower!

Penny's Best Chicken in Wine

I am tickled pink to be the first review of this recipe. My package of chicken breasts was only 3 pounds but other than that I made as written. This was so simple but the end result was bursting with flavor and tasted as if I had fussed over it for hours. There is only two of us and I was worried that the leftovers would be soggy but I was worried for nothing. The chicken held its crispness and lunch the next day was just as good. I plan on making this often. We enjoyed this very much Howard. Thanks for sharing!

Old Fashioned Baked Beans

I was making two different bean recipes over Memorial weekend so I halved this one. I did cut back on the molasses as I did in the other one because we simply do not like are baked beans as sweet as most. The only fault I had in this recipe was that of my own. I bought a cheap generic bacon that ended up being mostly all fat. Although it added great flavor, the end result was white wobbly hunks of ugly nastiness so I strained it all out. Lesson learned. Out of the two recipes I made, we preferred this one. The one thing I did like better about the other one was the addition of a tablespoon of apple cider vinegar.

Red Cabbage Salad

I was very leery of this recipe but decided to give it a try and I'm glad I did. This was very nice. There is just the two of us so I kept the bacon and onions separate and just added them to each serving when we had it. The cabbage stains the cauliflower purple after awhile but not to the point that you don't know what the cauliflower is. We enjoyed this and I will definitely make this again.

Caramelized Onion and Bacon Potato Salad

I used red potatoes in place of white and then used a white onion in place of the red onion due to what I had on hand. I made a tzatziki recipe from this site and left the peel on because I am a rebel like that. This was a really nice change from traditional potato salad. The only one thing I think it was missing was some salt. Other than that, perfect as written.

BBQ Bill's Citrus Smoked Chicken

There is only two of us so I decided to use two cornish game hens instead of a whole chicken. I was afraid the lemon lime soda was going to make these sweet but that was not at all the case. What the soda did was make those little birds tender like no other. I have never had such tender meat come out of a smoker before. I am guilty of rubbing some seasoning on the outside of the birds for flavor because I feel that is necessary but the seasoning played no part to the tenderness. That would be the lemon lime soda. Very impressive!

Vegetarian Baked Beans

I wanted to make two different recipes over Memorial weekend using navy beans so I halved this recipe. The only change I made is that I cut back on the molasses because we do not like our beans overly sweet. Not sure we cared for the cinnamon in these but loved the apple cider vinegar. Seeing how I am not a Vegetarian, I will add cooked crumbled bacon to the top of each serving the next time I make these.

Holly's Texas Brisket

My brisket was a little shy of 4 pounds and I used the full ingredient list. I used a smoker instead of the grill and did 10 hours in the smoker and 2 hours in the oven. It wasn't fall apart tender but brisket isn't supposed to be in my opinion. You need to be able to slice it. This sliced perfectly, was super tender, and the spice blend was very nice. The leftover held up well the next day too. I simply put it in the oven with its juices at 250 for 30 minutes.

Mexican Chili Soup

Made as written and this turned out perfectly. The beef was SUPER tender. You really do need to top it with all of your favorite toppings though in my opinion. I topped mine with avocado, cheese, sour cream, tomato, lime wedge, and baked tortilla strips.

Red, White and Blue Potato Salad

Presentation was great for the first few minutes but even that suffered over time. The purple potatoes turn everything purple/blue within minutes. 3 TBSP. of mayo was not even close to coating the potatoes and 2 bunches of radishes. That's okay though because the mayo didn't really yield enough flavor. This would have been far better with some type of vinegar dressing. Zesty Italian would have perfect I think. You'd still have the problem of the potatoes turning everything purple but the flavor would have been there at least. I also think one bunch of radishes would have been plenty. I made as written but would not make again as so. This recipe was fun due to the colors but it needs some tweaks. If you make as written, I highly recommend adding some fresh herbs.

Fire and Ice Smoked Salmon

Made as written except that I used a smoker instead of a grill. 5 stars all the way! I don't typically care for mint but it was outstanding in this recipe. The finished result is like something you would get in a fancy restaurant (both in look and taste). I will most definitely make this again. Thanks for sharing!

Braised Corned Beef Brisket

2nd time I've made this now and this time was better that the 1st. I double wrapped it in foil this go around and the end result scared me a little at first. I didn't open it to check until after the six hours were up and it had shrunk quite a bit and looked a little dry. WRONG! SUPER moist and flavorful. I wouldn't change a thing. My former go to recipe was a crockpot recipe and even though it stayed moist and tender too, the end result was shredded and there was no slicing. You gotta have slicing if you want to turn the leftovers into a Rueben! This is my go to from now on out! Thanks mauigirl! XOXO

Egg Roll Reuben Wraps

One word: Scrumptious! I did use Swiss because Gruyere is too expensive. I love me some Reuben's but not a fan of bread so these were even better than a Reuben to me. I served them with a grainy mustard dipping sauce but I'm sure Thousand Island would be good too.

Cajun Baked French Fries

I recommend spraying your cooking sheet with non-stick spray. Other than that, these are the bomb.com! I was a little heavy handed with the seasoning and also added smoked paprika but that is the beauty with this recipe, it is open to changes.

This is how I have made them in the past and I should have stuck to this recipe. I thought I'd be smart and do half flour half cornmeal for a change. I should have stuck to all flour. Lesson learned! Until next Spring...

Frozen Avocado Margaritas

I give this a 4 star for creativity, texture, and color. I loved the creaminess and smoothness the avocado gave this. It is not your traditional margarita and one you definitely need a straw to drink it with. It was more like a boozy smoothie. The cilantro was a nice touch too. The one think I did not like is that I felt it needed a little sweetness added. Maybe a little honey? This was fun and made "happy hour" feel a little more healthy.
