Without going into all of the details, let me just say that last week was one heck of an emotional roller coaster ride and a week I hope to never see a repeat of. Hello, my name is Nicole. I am 42 years old and have been married to my high school sweetheart for 17 years now. I haven't always enjoyed cooking but Allrecipes has changed that for me over the years. I now consider myself a foodie and am always up for a good challenge in the kitchen. There isn't anything I won't try at least once. Summer is my favorite time of the year and when I am not recipe hunting, menu planning, etc. I spend my time fishing gardening, and babysitting my chickens.

I don't really have any so I have started my own. Allrecipes has taught me to "think outside the box". I love trying new and unusual things that I would have never dared or even thought of before discovering this place.
My cooking triumphs
When I got married, I honestly had 0% experience in the kitchen. My mom was the kind that wanted the whole kitchen to herself so that nobody was in her way and I was only allowed in there to grab the plates, utensils, etc. to set the table. I really never thought about what I was going to cook until we got back from our honeymoon and then I was like, "uh oh!". Amazingly enough it all came pretty natural and I am happy to say that I have never ruined a meal forcing us to order take-out.

Potsticker Salad
This was pretty good. I used fresh Chinese egg noodles and I could not find vegetable potstickers so I used chicken. I did think there was something lacking but I couldn't put my finger on it. There is a lot going on so I am not really sure what could be missing. Maybe a few drops of sesame oil to help coat the noodles? I'll definitely make this one again and just play around with it a little.

Deep Fried Green Beans
I've fried green beans before but these have them beat hands down! I have always had trouble "double dipping" and I struggled getting the 2nd coat to stick to the beans here too but enough did and the seasoned crumbs made all the difference in the world in terms of flavor. The green beans were fresh from my garden which is always a bonus. One tip I learned is to ditch the two bowls for the flour and breadcrumb and use gallon size ziplock bags instead. Not only is it less messy but the beans coat so much better and clean up is a breeze. Drop them in, zip, shake, and you are done.

Twice Fried Fish
This was pretty good. I used Swai fish in place of the cod and butter instead of lard. I did have problem with the cornstarch and wish I would have left it out altogether. I dissolved it it cold water but as soon as it hit that skillet it began to clump. I will leave it out next time and will also double the sauce ingredients.
