Without going into all of the details, let me just say that last week was one heck of an emotional roller coaster ride and a week I hope to never see a repeat of. Hello, my name is Nicole. I am 41 years old and have been married to my high school sweetheart for 17 years now. I haven't always enjoyed cooking but Allrecipes has changed that for me over the years. I now consider myself a foodie and am always up for a good challenge in the kitchen. There isn't anything I won't try at least once. Summer is my favorite time of the year and when I am not recipe hunting, menu planning, etc. I spend my time fishing gardening, and babysitting my chickens.

I don't really have any so I have started my own. Allrecipes has taught me to "think outside the box". I love trying new and unusual things that I would have never dared or even thought of before discovering this place.
My cooking triumphs
When I got married, I honestly had 0% experience in the kitchen. My mom was the kind that wanted the whole kitchen to herself so that nobody was in her way and I was only allowed in there to grab the plates, utensils, etc. to set the table. I really never thought about what I was going to cook until we got back from our honeymoon and then I was like, "uh oh!". Amazingly enough it all came pretty natural and I am happy to say that I have never ruined a meal forcing us to order take-out.

Dill Pickle Salsa
Made as written and wouldn't change a thing. I left my pickles in pretty big cubes because I wanted the more dill flavor. My very first original recipe that I came up with was a cucumber salsa in which I use dill pickle relish so I knew I would love this one too. Thanks for sharing duboo!

Spicy and Tender Corned Beef
Made as written and the only thing that didn't work for me is that the carrots turned too mushy for our liking with that much cooking time. I ended up roasting another batch in the oven but they didn't get that good flavor not having been cooked with the corned beef and beer. Next time I will just add them later. This is a great recipe and one I will make again.

IPA Corned Beef
Made as written and loved every bite. The spicy brown mustard and IPA beer blended perfectly. I made 2 different corned beef recipes for St. Patrick's Day and hands down this one was my favorite.
