Without going into all of the details, let me just say that last week was one heck of an emotional roller coaster ride and a week I hope to never see a repeat of. Hello, my name is Nicole. I am 41 years old and have been married to my high school sweetheart for 17 years now. I haven't always enjoyed cooking but Allrecipes has changed that for me over the years. I now consider myself a foodie and am always up for a good challenge in the kitchen. There isn't anything I won't try at least once. Summer is my favorite time of the year and when I am not recipe hunting, menu planning, etc. I spend my time fishing gardening, and babysitting my chickens.

I don't really have any so I have started my own. Allrecipes has taught me to "think outside the box". I love trying new and unusual things that I would have never dared or even thought of before discovering this place.
My cooking triumphs
When I got married, I honestly had 0% experience in the kitchen. My mom was the kind that wanted the whole kitchen to herself so that nobody was in her way and I was only allowed in there to grab the plates, utensils, etc. to set the table. I really never thought about what I was going to cook until we got back from our honeymoon and then I was like, "uh oh!". Amazingly enough it all came pretty natural and I am happy to say that I have never ruined a meal forcing us to order take-out.

Hot Dog Sausages
Loved the concept but as written I found this too salty. No, I didn't use onion salt or garlic salt but I made as written. I made 2 batches today. One as written and one with my own tweaks. As written 4 stars and with my tweaks 5. My own batch I did 1 pound of ground beef to 1/2 pound of ground pork, 2 tsp salt, 2 tsp paprika, and 1 tsp of smoked paprika and the rest the same. LOVED this as a way to use up those extra hotdog buns you get in the package. Thanks Chef John and I will make this again!

Cinnamon Roll Popcorn
Made as written leaving the optional walnuts out and this taste just like a cinnamon roll. I prefer the savory type of popcorn but like to make sweet for the husband sometimes. If you like popcorn and cinnamon rolls you must give this one a try.

Eggplant Tacos
These were amazingly good tacos for not having meat in them. Hubby and I are big meat eaters and not big on eggplant but we both enjoyed them very much. The seasonings used are a great way to dress up eggplant. Give this one a try for something fun and unique!
