Breakfast Quiches to Go

I let my kids rate these since I made them for them to have in the mornings before school. None of them like onions so I left them out. The quiches were a little bland for my liking but the kids said they were fine. Nothing to be excited about but good enough to have for a microwavable breakfast on school mornings.

This is a good basic recipe. I thought it was a little on the bland side but nothing a little chopped onion, garlic, cumin and Adobo didn't fix. All these things I added to taste so no measurements to give to you. Cheap and easy meal. Enjoy!

Slow Cooker Carnitas

I've made this recipe several times and every time I use different suggestions given on this site. Some suggest doubling the spice mix, others suggest more or less of one ingredient or another. My favorite thing about this recipe is that while it is very good on it's own, once you make it a few times you can get a feel for how you want to tweak it to your own liking. Very good and easy for someone new to slow cooker cooking.

Funky Frito Fruckies

This was a very easy and tasty recipe. I made it for Thanksgiving and it was gone before the pies and cakes. I've had several requests for it since then, too! It's best store it cut or broken into pieces and stored between waxed paper.

Cindy's Pumpkin Pie

This is a good, creamy pie. I used canned pumpkin but I think it would have been better with fresh. It wasn't quite as dense as we like but the taste was good.

Sweet Potato Casserole V

Very easy recipe to make. I used used half vanilla extract and half orange extract and it was great. My family loved it- even my 3 year old who tasted it "by accident". I will definately make this again, but maybe more as a dessert instead of a side because it was very sweet.

Fresh Cranberry Relish

This is a great recipe. It's inexspensive, easy to make and has a great taste. I also liked that it doesn't call for loads and loads of extra sugar like some of the others do. I didn't even use the white sugar called for in the recipe; instead I used a pinch of brown sugar. I took this to my daughter's Girl Scout Thanksgiving potluck and it was a great hit- I was even asked for the recipe!

Banana Fritters

These didn't turn out like I thought and my kids wouldn't eat them till the next day after I reheated them and said they were banana pancakes. Now they love 'em. The taste was ok but the recipe should have just said banana pancakes.

Herb Marinated London Broil

The marinade was great, lots of good flavor. I kept some and boiled it to use over the rice that I served with the beef. It was even better the second day! I cooked the london broil on the grill and it was a bit tough, but I suppose that was because it was a cheaper cut of meat but I will definately use this marinade again.
