Peanut Butter Popcorn

Reviewed: Sep. 10, 2010
This is wonderful! I used two bags of Natural Popcorn, one helpful hint: remove the un-popped kernels before setting the popped popcorn aside, in two separate bowls (easier to stir two bowls than ONE big bowl). :) Also I threw in a couple of handfuls of Cocktail Peanuts into the 2 bowls of popcorn. Poured only half of the topping over each bowl of popcorn at a time and only baked each bowl one at a time, at 250 for 15 minutes, stirring every 5. (don't forget to spray cookie sheets with non-stick cooking spray) Also used a Whisk to stir the marshmallow topping mix, every minute while it melted, helped break up the marshmallows easier than the wooden spoon I was using at first. Hope this helps!

Delicious Ham and Potato Soup

Reviewed: Oct. 6, 2010
Simply put: added more ham, mixed a little water/corn starch and added it to the soup at the end of cooking time to thicken. made with homemade biscuits. And it's my husbands new favorite request. :D I'm not a big fan of Ham... by itself, but even I was impressed with how easy this was to make and that I could make something SO superb! Jan 7,2011 UPDATE: I honestly just can't say enough good things about this soup! We all love it, and I even have picky eaters. I can honestly say that you don't need to melt the butter with the flour/then slowly add milk. I usually add the butter in with the ham and veggies, save about a cup of water and mix in the flour with it, then pour into pot, and add milk when potatoes are tender. Like I said before, if it needs thickening, just add 1/4 cup of water and a Tbsp of cornstarch together, mix until smooth, then add to soup, bring to boil for a min or two, then simmer down again. be patient with it... it will thicken, if not add more water/corn starch, boil again and simmer.

Pumpkin Pie Bars by EAGLE BRAND®

Reviewed: Mar. 1, 2011
I gave this two stars mainly because it just looks gross. The taste isn't bad, a lot like pumpkin pie, with the pumpkin pie texture. the crumb bottom doesn't stay crumbly and the crumb topping gets all soggy. I've made this 3 different times, thinking maybe it would turn out different. every time it's the same, and the only thing I've changed in the recipe is adding some nutmeg/ginger and cloves in place of the allspice. otherwise, if you don't mind, kinda gross looking, mushy 'bars' that aren't really bar like, it's not bad. but presentation is important especially when giving these 'bars' out as gifts on holiday plates.

Angel Chicken Pasta

Reviewed: Mar. 7, 2011
This was amazingly superb! Even my picky eater kids ate it. I was a little worried about the different flavors of the Italian dressing mix, mixing with the white wine and the cream cheese and the soup all mixing together... and tasting good, but it did!! I didn't have cream cheese with chives, just regular cream cheese and it turned out fabulous! First time I 'baked' chicken breast that did NOT turn out dry!! Will be making this again and again!! :D

Absolutely perfect. Even the kiddo's love these! Come out juicy and tender every time! The only thing I suggest is to cover when baking in the oven until done.

Amazing Pecan Coffee Cake

Reviewed: Mar. 16, 2011
Simply Perfect! Made it exactly the way it says, with the exact ingredients/measurements, and all I can say is, that it's perfect. If you need a coffee cake and don't already have a great recipe and aren't sure which recipe to pick, PICK THIS ONE! You won't be sorry! :) The cake itself was moist, the top was crunchy, but not too crunchy. And it was so delicious! I made this for the first time for a going away brunch, for a friend. It was my first time ever making a coffee cake, everyone loved it, I loved it, and so will you!

Asian Orange Chicken

Reviewed: Mar. 27, 2011
AWESOME! Followed the directions and the ingredients exactly, (except I omitted the red pepper flakes) and it was perfect. Oh yeah and I didn't stir in the chicken into the sauce at the end, instead I served the chicken separate with the sauce on the side (kids are picky like that). It was hit. Next time I might add just a tad bit more brown sugar (kids liked it but thought it was a bit too tangy for their taste). However hubby and I thought it was better than Chinese Restaurant style could ever be! Thanks a bunch!

Chicken Breasts with Balsamic Vinegar and Garlic

Reviewed: May 29, 2011
This was awesome! I made it to the recipe, minus a few mushrooms (my kids and I aren't big fans of them, but husband likes them, so I only put in a couple of them in, and instead of just slicing them, I diced them). Other than that, the chicken and the sauce turned out perfect!! I served Angel Hair pasta on the side with fresh steamed Broccoli. For picky eaters (my kids and I), all four of us gave this two thumbs up! A keeper!!

Sage Pork Chops

Reviewed: May 30, 2011
These weren't too bad. Easy to make. Mine turned out just a bit salty for my taste, but not really really salty, just more salt than I would have preferred. I didn't have to cook mine as long .. they were probably thinner than recommended. Overall not bad. I didn't give them 5 stars because I didn't think they were an exceptionally great pork chop... but for a good middle of the week-night easy to throw together chop the whole family will eat.. these will do! :)

Easy French Dip Sandwiches

Reviewed: May 30, 2011
Ok as far as french dip sandwiches go... this just wasn't that great. My youngest didn't eat it. My oldest thought it was ok.. (which was odd being as she's just picky) my husband well.. he's Active Duty military and he'll eat just about anything so that doesn't say a whole lot being as he ate this... and being as French Dip sandwiches are my favorite, I was really disappointed in this. :(

Spicy Mexican Torte

Reviewed: Jul. 20, 2011
Well before making this I knew ahead of time I'd have to make some adjustments... so I can't really give a true rating for this exact recipe. I substituted 1 lb. hamburger for the sausage, used Colby/Jack cheese, and omitted the roasted red peppers all together. (my kids and I don't do spicy too well). With that being done, I seasoned the hamburger with about 1/2 tsp ground cumin, to give it some flavor (in addition to the onion and garlic). When I went to layer everything, I realized that my pie pan (even though it's deep dish) wasn't tall enough for that many tortillas or layers... so I minimized it. One daughter liked it, the other didn't, my husband ate it but didn't want to save the left overs (good indication not to make it again), and I thought it was just 'ok'. It's not a bad recipe, I'd make it again, but not too often, maybe just once in a while for something different than taco night.

Grilled Peanut Butter and Jelly Sandwich

Reviewed: Jul. 27, 2011
you can make it easier, by just toasting your bread in the toaster... and applying the peanut butter right away while your toast is still hot. It gets all melted and gooey, quickly... add your jelly if you want and eat while it's still warm. Delish! Just thought to share a toasted PB&J that I have been making since I was a kid, and now my girls do the same. **because I did not actually make this recipe/grill my sandwich, and I have to rate it, I gave it a 3**

Lemon Pie Bars

Reviewed: Jul. 27, 2011
I give it four stars because even though the taste was decent, for us, not lemony enough... I think next time I will double the lemon juice, zest, sugar and eggs to make it thicker. My first time making these, they turned out with more crust than 'filling'. Not like a lemon pie or any other pie. Since most pies have more filling than crust. So, if you just like the idea of a lot of crust and a little filling, make it as is, otherwise I would double the recipe for the filling part. Kinda wishing I went with the recommendations to double it from the start, but I just kept thinking 8 Eggs!! :o But I guess that's what I'll do if I try it again. It was quick and easy to make. So for something fast and lemony it's a good recipe.

Grilled Chicken with Rosemary and Bacon

Reviewed: Aug. 30, 2011
ok, no one in my family liked this. the skin was still kinda 'rubbery', because the bacon around it is what got crisp. so the bacon was good. the skin was nasty. the rosemary under the skin was not something any of us eat, unless it's chopped up or something kinda small, but using a whole twig of it, we had to remove it, then it was just like eating, crispy grilled bacon, rubbery chicken skin and plain chicken legs. many thumbs down all around the table.

Chicken-Noodle Parmesan

Reviewed: Oct. 12, 2011
Ok this was just not to my liking. I doubled the 'sauce', using two cans of Crm of Chicken being as we're not big broccoli fans, when it's not fresh. 1 cup milk, 2/3 cup parm. chz. It was really thick and kinda gritty, and a bit over parmesan cheesy. Like too much cheese flavor for us. I added in my precooked chicken, my frozen veggies, and my uncooked noodles, wondering just how the noodles were going to cook in all this thick goop. After a half an hour and they were hardly done??? I added a half a cup of hot water... stirred. Added another half a cup of hot water. That seemed to thin it out a bit, and cut the flavor down a bit. Still seemed to be too salty and missing something, so I added in some garlic powder and Italian Seasoning, that helped a little. End result, another 15/20 mins to cook the noodles, and after an hour or more to prepare this 'easy' dinner, my family looked at me like I was crazy. We couldn't even eat it. What a waste.

Creamy Chicken and Wild Rice Soup

Reviewed: Oct. 30, 2011
LOVE THIS! The only thing I did differently: I took the advice of others, and sautéed onion, garlic carrots and celery in olive oil, then added it into the soup. Also, instead of adding in the seasoning packet from the rice/mix box, I used 1 TBSP of salt-free Mrs. Dash Herb & Garlic seasoning. I try to avoid the MSG and preservatives and extra sodium in those seasoning packets. Turned out just fine!!! I'll be making this again and again! Oh and for those who might want to know, I bought a generic brand 6.6 oz box of rice/mix. Checked on the back of the box instructions to make sure it called for 2 cups of water to cook the rice in. :) Enjoy!!

Easy Barbecued Pork Chops

Reviewed: Mar. 7, 2012
Giving this 5 stars: Easy, fast, taste great and family of 4 approved. I chopped veggies before I started browning chops. I used a red bell pepper instead of green since that's what I had. I also minimized the chili powder (afraid of it being spicy and only used 1/8 tsp). I had read that in another review and (which is why I thought to try this recipe) that this is more sweet 'n' sour like, less BBQ. My kids aren't big fans of most BBQ sauces, so this was a nice change. Also look fwd to making this for a quick night of sweet' n 'sour chicken as well.
