Mmm-Mmm Better Brownies

I give this recipe 4.5 stars, only because they seem to be a little more cake-like, not as gooey as we'd like them. On that note, I made one batch & they were a little thin, but still really good. I then tripled the batch, and used 9x13 pan, baked for 35 minutes (until a toothpick inserted 2" from the edge came out clean). This yielded thicker brownies, and more of them, which equals more happy people in my house!

Fruit Leather

I give this four stars, because I took instructions from another recipe & made in into one. I used 8 pears & 4 apples, since that's what I had. Chopped them up & placed in a large pot with 2 tbsp water, 1/4 cup fresh lemon juice, 1/2- 1 cup of honey (I added a little to start and taste tested along the way, and added a bit more until it was the right amount of sweetness), a generous sprinkle of cinnamon and about 1/8 tsp of cloves. Cooked over medium until fruit was very soft, smashed with a fork, and let it cook down until almost no fluid was left. Then puréed it in the food processor. Then spread over cookie sheets lined with parchment paper. Placed in oven at lowest temp (mine is 170f), closed the door all the way & let bake for about 7-9 hours.

Easy Tuna Casserole

It's perfect. This is not a real exciting recipe, however everything turns out great, every time I make it, there's never any left overs. Sometimes I crumble potato chips over the top and sometimes I use french's fried onions.

Hearty Ham Casserole

Vanilla Wafer Cookies That Are Better Than Storebought

These were good, just not quite the same flavor as the store bought kind. Everyone loved them, but I guess I was a bit disappointed that they weren't just like the store bought ones. I followed the recipe exactly.

Traditional White Bread

Made this with substituting unsalted butter for the lard, and pure raw honey for the sugar. Turned out FANTASTIC! Will be keeping this as my all-time white bread recipe.

Amish White Bread

I made two small changes. I substituted the 2/3 cup sugar for 2/3 cup raw honey. I also substituted the vegetable oil for olive oil. My only complaint is that the bread turned out a bit on the sweet side, so it wasn't quite a "white" bread. It was more like a sweet bread. I will make it once more, with half the honey, and hope its more of a white bread. Although my whole family thinks this turned out great, I don't think it would be that great for a deli sandwich. I also made this, by hand, no bread machine. I think I needed to knead the dough a tad bit more, as it was a little on the spongy side, and the overall texture wasn't what I thought it would be. This is also my first time making bread.

Southwest Chicken

Well, let me say, this was a bit of a let down after reading the 7 out of 8 - 5 star reviews on the first page. I am with the one reviewer who said this is bland. I stuck with the original recipe, then added the cumin, then paprika, then some oregano and some salt, and chili powder. Still smelled just ok, (you know how you can tell by the scent of something on the stove it needs more umph). Well I added 2-3 Tbsp of homemade taco seasoning, and hoped for the best. My kids liked it. (Amazingly since one doesn't like beans and the other doesn't like corn!) My dad thought it was just ok, my husband and I.. well... it wasn't bad or gross, it just wasn't good. Served with side of rice and warm tortillas and shredded cheese. I'm not even sure at this point what would make this 'better'. There's a Mexican Casserole recipe from this site that I make all the time, the only difference: that's with ground beef (or I use turkey), no corn and a can of cream of mushroom soup.

SWEET, Sweet Potato Fries

Ok. Quite disappointed. :( the seasonings were right for the sweet potatoes, however, too much ended up on my very thinly cut potatoes, by the time they were 'done', they were too mushy to be like 'fries', so maybe I over cooked them?

Fantastic! Even though I made a few slight changes, overall I followed the ingredients to the T. My youngest daughter loves it, as well as my husband and I. My oldest daughter hasn't tried it yet. I used 2% milk, vanilla yogurt, and I bought already ground flax seed. I bought frozen whole strawberries (1 prior to chopping) and 1/2 frozen banana like suggested. ***TIP*** If this is you first attempt at freezing bananas just for this recipe, peel the bananas first, then wrap in foil.***

Mexican Casserole

I give this 4 stars, simply because I changed a couple of ingredients to suit my family's taste preferences. My casserole results, I'd give it 4 stars. What I did was substituted 1 can low sodium black beans for ranch style beans (no one likes ranch style beans here). I used regular Petite diced tomatoes (skin on - I wasn't sure why the tomatoes needed to be peeled?), and instead of 2 Tbsp of chili powder, I used about 2/3 of a packet of Taco Bell taco seasoning (I think I added about half a packet, stirred well, tasted it, needed a bit more, but I didn't add the rest of the packet, just a little more, and have some left over, so 2/3 or 3/4 of a packet? tasted again and it was just enough). I also put a layer of shredded cheese in the middle of the casserole in addition to on top. Three out of my family of four liked this casserole and wants me to make it again. I kept thinking it's quite chewy. I wonder if it would work well with layered tortilla chips? Will try that next time. :) **UPDATE** 7/7/12 I completely forgot that I added taco bell taco seasoning to this the last time I made this, which was the first time - also which was the time I put up the review... so tonight, I'm in the kitchen and hmmm. it's missing something, so yah, I added TB taco seasoning to it. lol silly me! I did remember about not wanting to add tortillas, but tortilla chips, so this time, I put the chips on top, covered w/Cheese and baked uncovered for about 20 minutes. NOW it's 5 STARS!!

Banana Wake-Up Bars

I give this three stars, because I thought it would be more like a 'bar' less like a banana 'cake' or 'bread' type texture. The taste is powerfully banana and peanutbuttery, mine doesn't look anything like the 4th photo, but more like the 1st and 2nd. I have one daughter who loves this, my other daughter, husband and I, think it's "just ok". Not good or bad, but not something I think we'd eat the whole pan, without the help of my other daughter. 50/50. Oh and I made it exactly as recipe states.

Cinnamon-Apple Chex® Mix

Yep that's right, another 5 ***** STARS! I followed other suggestions: made apple chips: very thinly sliced apples, (I used red delicious), sprinkled lightly with cinnamon and sugar, baked at 200 for 2 hours; and also substituted Cinnamon Chex for Wheat Chex; used Whole Natural Almonds, not salted. Also prepared over stove top, all in one large pot. So addicting, with a family of four, this was gone within 24 hours. :o

Oaty Cereal Bars

THESE ARE THE BOMB!! No bake, takes like no time at all to whip up, takes a bit to cool, but then dig in!! The first time I made them, I thought they were more honey than peanut butter tasting, so the second time I made them I halved the honey and sugar, but then they were too gooey, not sticky enough, so I had to quickly make another 1/2 batch of honey and sugar mix to pour over top of cereal, peanuts and peanut butter... then quickly mixed while keeping everything over low heat. Next time I might trying to do half honey half corn syrup to ease the honey flavor just a tad and bring out the peanut butter flavor a bit more. Otherwise these are still very exceptional. I just have one daughter who's not very big on the taste of honey and would prefer more PB tastes. I love how easy these are to make, and serve!!

Easy Barbecued Pork Chops

Giving this 5 stars: Easy, fast, taste great and family of 4 approved. I chopped veggies before I started browning chops. I used a red bell pepper instead of green since that's what I had. I also minimized the chili powder (afraid of it being spicy and only used 1/8 tsp). I had read that in another review and (which is why I thought to try this recipe) that this is more sweet 'n' sour like, less BBQ. My kids aren't big fans of most BBQ sauces, so this was a nice change. Also look fwd to making this for a quick night of sweet' n 'sour chicken as well.
