I am in the middle of a full-blown love affair.  So is my husband.  And it's not with each other.  We are still very much in love after 9 years together, but we have a new object of affection...a Vitamix!  I have been perusing the Vitamix models for several years now but could not bring… MORE

Smoky Tomato Basil Bisque
About this Cook
I'm a born and bred Southerner now living in the Midwest (temporarily!). I learned to cook by watching and helping my grandmother and great-grandmother, both of whom were wonderful Southern cooks who cooked by "feel" rather than by measuring. And that's how I cook now, too. Recipes are more of a suggestion than instruction for me. I love to garden and use my fresh veggies in my creations, especially salsa and hot sauce, which are my specialties.
My favorite things to cook
Baked goods (especially yeast breads), soups, pizza, roasted and grilled veggies...
My favorite family cooking traditions
Christmas candy making with my mom. She lives across the country now, so we haven't been able to do that since I moved..better on the waistlines!
My cooking triumphs
Planning an outdoor party for 20 people where the main course and the main side dish were to be grilled. It was POURING when the time came. I moved everything inside and prepared the food on stovetop and oven, and it turned out beautifully anyway.
My cooking tragedies
Making biscuits at my mom's house one time and accidentally using plain flour instead of self-rising. Needless to say, I had to make another batch of biscuits when I realized what I had done! Otherwise, I've been pretty lucky!

Homemade Melt-In-Your-Mouth Dark Chocolate (Paleo)
We love this, although the last time we made them, I used raw cacao butter instead of coconut oil as I had only liquid coconut oil and didn't know if it would set properly. And oh my! This batch was KILLER! Full chocolate flavor, and it rivals my all-time fave, Scharffen-Berger. I always add vanilla, and I use only 2 TBS honey since we like bittersweet chocolate. Be sure to use cocoa you really like in this!

Mamacita's Mexican Rice
We really liked this recipe. I have had problems finding a recipe for the dish as we like it, and this one just about nailed it. I had to substitute for what I had on hand since I decided to make this last minute, but it turned out great. I didn't have a tomato on hand (don't buy those out of season) so I used some pureed tomatoes and cut back on the broth just a bit to compensate for the additional liquid. And I didn't have saffron on hand so I used a bit of adobo seasoning and some turmeric for color. I used a very large clove of garlic, and I ommitted the cumin. It takes very little of that for us, and the adobo seasoning had plenty for our tastes. And lastly, I used basmati rice, again what I had on hand. I will definitely make this again; I don't need to look any further for recipes! Thanks, Armi, to you and your MIL for the recipe!

Green Pea Patties
3 1/2 stars is probably closer to the true rating. I made these as the recipe stated except with GF flour since we avoid wheat. My husband said they reminded him of mushy peas, which he loves, but we both think they would be better with sauteed onions and garlic added to the mixture. And I think I could cut back on the flour next time a bit. Still, it's a great idea, and I'll make again with some additions to suit our tastes. Don't skip the freshly grated parmesan...in fact I would add even more next time.
