About this Cook
I'm a born and bred Southerner now living in the Midwest (temporarily!). I learned to cook by watching and helping my grandmother and great-grandmother, both of whom were wonderful Southern cooks who cooked by "feel" rather than by measuring. And that's how I cook now, too. Recipes are more of a suggestion than instruction for me. I love to garden and use my fresh veggies in my creations, especially salsa and hot sauce, which are my specialties.

Baked goods (especially yeast breads), soups, pizza, roasted and grilled veggies...
My favorite family cooking traditions
Christmas candy making with my mom. She lives across the country now, so we haven't been able to do that since I moved..better on the waistlines!
My cooking triumphs
Planning an outdoor party for 20 people where the main course and the main side dish were to be grilled. It was POURING when the time came. I moved everything inside and prepared the food on stovetop and oven, and it turned out beautifully anyway.
My cooking tragedies
Making biscuits at my mom's house one time and accidentally using plain flour instead of self-rising. Needless to say, I had to make another batch of biscuits when I realized what I had done! Otherwise, I've been pretty lucky!

Slow Cooker Mongolian Beef
We are splitting this one down the middle. The teenager really liked it, but my husband and I barely managed to get a bowl of it down. It's far too sweet for us, even though I reduced the sugar by half, and the hoisin flavor was a little too prominent. It was certainly very easy, but I don't think we'll make again. Thanks for the recipe to try, though! It's one the teenager can add to his repertoire, and that's always good!

Apple Pie Muffins
I decided to make these last minute and had to substitute but these are very good. I used half brown sugar and half coconut sugar. And I had no AP flour on hand and used 1 1/2 cups white whole wheat and 3/4 cup oat flour. I also shredded the apples and left them unpeeled. The coarser pieces were especially tasty so dicing would be better, I'm sure. I also added a teaspoon of King Arthur Apple pie spice to the batter, and I think it's needed for my tastes. Very moist, and they are getting better as they sit. I will make again.

Homemade Melt-In-Your-Mouth Dark Chocolate (Paleo)
We love this, although the last time we made them, I used raw cacao butter instead of coconut oil as I had only liquid coconut oil and didn't know if it would set properly. And oh my! This batch was KILLER! Full chocolate flavor, and it rivals my all-time fave, Scharffen-Berger. I always add vanilla, and I use only 2 TBS honey since we like bittersweet chocolate. Be sure to use cocoa you really like in this!
