Pumpkin Pie Spice II

Easy (less than two minutes) and has the same ingredients as the organic pumpkin pie spice I buy that costs 6 or 7 bucks a bottle. I use pp spice all the time, in my coffee, my pancakes, etc., and this will save me a fortune! I multiplied the recipe easily by 8, which filled to about 2/3 the jar from the store, which was empty, and which I will never buy again. Thanks!!!

Baba Ghanoush with Yogurt

I loved this. Although I made a lot of changes, I would guess it would taste great as written. First, I didn't have yogurt on hand (very unusual for me) so I used sour cream. I made tahini from scratch, and it was kind of bitter, so I used less than the 1/4 c. although my husband thought it could have used more. Also, when I was reading about bitter tahini, a lot of people said the olive oil can make it bitter, and that it really doesn't need it, so I didn't want to add olive oil to the baba ghanoush in case it would make that bitter. I didn't have teriyaki sauce so I used a few dashes of coconut aminos garlic sauce. It was really delicious, and I'm sure next time I will use the yogurt, and a little more tahini if I can make some less bitter, and it will be great.

Easy Broccoli Quiche

I really liked this. I didn't give it five stars because I made it with my own touches. I don't eat gluten so I just buttered the pan and dusted it with rice crumbs (I actually use a huge pyrex bowl- The bottom is basically the size/shape of a pie pan, but I don't have to worry about overflow). My kids aren't crazy about onions (which makes it easier to make) so I just added additional spices. I also used leftover broccoli and cheddar cheese. My kids gobbled it up. Easy as pie! Made it two days in a row because it's such a quick, easy and nutritious meal.

The Real Mojito

I really enjoyed this. Since I'm not a Mojito connoisseur I hope you won't hate on me but I used pure organic lime juice instead of fresh limes. And since I don't do sugar, or sugar substitutes like Splenda, I used a dash (bigger dash than I meant to) of coconut nectar. I muddled it with my potato masher in a bowl. Anyway, I really enjoyed it. I don't know if others would like it the way I made it, but I liked it better than the few I've had in bars. Thanks!!

Refreshing Cucumber Watermelon Salad

I really enjoyed this salad after chilling for a short time. Raw onion upsets my stomach but I decided to go for it anyway to see how it tasted, as is. I used regular onion as I didn't have red, and sliced it thick so I can pull it out of my serving easily. That said, the next day, the onion taste was too strong for me- I liked it better after tasting it slightly chilled the night before. I will definitely make again and skip the onion. May add cilantro to add to the flavor. My son really enjoyed it.

Holiday Hot Spinach Dip

I changed it a bit, because I didn't have/want all the ingredients. My kids loved it! I didn't add peppers or artichokes (kids don't like) and instead of parmesan cheese (quite expensive and I've been using it in too many recipes lately) I used a mexican mix. It was delicious...I added a little garlic powder and paprika, too. Will def make this one again- I may add a little cayenne to spice it up.

Best Chicken Quiche

Very tasty. A little salty from the onion soup mix. I used cheddar cheese instead of gruyere. My boys ate if up right away! I would use a little less milk because there was a little too much liquid for the crust.

Creamy Broccoli Soup

I made this recipe to use up a bunch of over steamed broccoli. I added a little garlic powder, and used reduced fat cheese. So simple and so good. My kids all loved it and I did, too...Definitely a keeper.

Corn Dog Muffins

Easy and delicious. I made it in a 9x9 glass pan since I haven't found a muffin pan I like (don't use non-stick). I omitted the corn for the kids, added about 1/4 cup shredded cheddar, and sliced the hot dogs and placed them on top. Cooked about 1/2 hour and the kids devoured it. Will definitely make again.

Eggnog Cookies I

I was kind of disappointed in these after so many reviews. Even with doubling the nutmeg, as others did, and adding 1/2 tsp of cinnamon and a couple dashes of clove, I found them kind of bland. Also, they did not spread as much as I expected causing the midde to not be done when the edges were getting crisp. I gave this 4 stars because I added some pumpkin pie spice to the last couple dozen and some chopped pecans I had on hand and wanted to get rid of- then I smooshed them down a little so they would be flatter. After doing this they were absolutely delicious. Also, yield I got was over 5 dozen...Recommended with adjustments.

Very good and so easy. As soon as I saw how much dough there was I knew I wasn't going to get 72 cookies- only ended up with 28 although I would/should have gone smaller on the first tray and probably would have gotten another 6 that way. So yummy I will double next time. The dough was slightly dry (I will add a little vanilla next time) but when they cracked a little with the thumbprint they were very easy to reshape. Used strawberry all-fruit jelly. Next time (which will be very soon because I always have these ingredients on hand- who doesn't?) I will try apricot and raspberry...Can't go wrong with these.

Pineapple Cake II

Everyone liked it and a couple loved it...it is dense and moist...cooked longer than in recipe because middle was still soft- I did use fresh pineapple which may have affected it and added a touch of oil just since some seemed shocked that it didn't have any oil...Overall, would still consider it low-fat and would make again for this reason...might make some substitutions, like adding coconut or something (my son reading over my should just said "ewww" so maybe not, lol).

Danish Oatmeal Cookies

Yummy...used old fashioned, rather than quick oats, and no nuts because my kids don't like them in cookies (although I'll have to make more since I love pecans)...As the original contributor updated, parchment paper definitely not needed...I put a drop of oil on the pan and wiped it- cookies slid off easier than any I've ever made. Kids LOVED them even though they keep claiming they don't like oatmeal cookies! I loved them too- so buttery delicious! Forgot to dust with sugar and no one noticed... Best part besides the taste is how quick and easy they are to make.

Creamy Garlic-Green Bean Casserole

Yummy! I loved this recipe. Made it for Thanksgiving without a trial run (scary!) but is was soooooo easy and so good. Followed pretty much as written- forgot to mix melted butter w/ wheat thins so I just drizzled some on top and then topped with a touch more shredded mozzarella and grated parmesan. Delish! Kids like it, too. Definitely will make again and will be a Thanksgiving staple (I'm one of those who really doesn't like the traditional green bean casserole with the cream of mushroom soup and fried onions)...I can always count on you guys for helpful reviews--thanks!

Pumpkin Chocolate Chip Muffins

Delicious! One of my favorite muffin/bread recipes. Of course, I had to play with it to make it more healthy and because I didn't have all ingredients. Used 1-1/2 c white flour, 1-1/2 wheat (as many others did). Used only 1 c. sugar. 2 eggs as I don't use egg substitute. Also, used yogurt for most of the oil and had no applesauce so increased the pumpkin. Added a little clove and nutmeg. Fantastic! Everyone loved them...I made some as small muffins and some in an 8x8 dish.

Fluffy Pancakes

This is the recipe I've been looking for. My kids always compare my "healthy" pancakes to IHOPs and mine don't win! They loved these. The only change I made besides doubling like everyone else is I used a combination of melted Smart Balance and Olive oil. They came out great. Maybe next time I'll try a little whole wheat flour to make them a little healthier but I don't want to mess too much as they were so tasty the way they were.

Easiest Oven Baked Chicken

I made this for the kids. I had no saltines so I crushed up wheat thins. I'm a vegetarian but I tasted some of the coating that fell off after the chicken cooked and it was delicious. I used Smart Balance spread instead of butter with a little olive oil to make it healthier. My kids liked it- and they are picky! They did suggest Ritz crackers (which I didn't have either)...

Country Pumpkin Muffins

The most versatile, indestructible recipe ever! I was so happy to read the reviews because people kept adapting the same way I do but kept saying the muffins came out great- not always the case with healthy adaptations. Well I tried those adaptations with a little more. I used 1-1/2 cup organic turbinado raw cane sugar with just under 1/2 cup organic brown sugar. I was out of all purpose flour so I used white whole wheat flour. I did the 15 oz pumpkin with reduced water as a few others did. Then I used 1/4 oil and 1/4 c. lowfat vanilla yogurt rather than 1/2 c. oil. I thought it looked a little dry but my husband said no so I baked six smallish muffins. Now the best part- I reviewed the recipe and realized I had forgotten the eggs having copied the directions by hand! Guess what! They still tasted good. For the rest of the batch I added two eggs instead of the 3- and this batch was even yummier! But for those who don't eat eggs, don't let that stop you from trying this recipe. It is truly indestructible!
