Tiramisu II

I followed this recipe with a few changes: I beat the yolks and sugar before heating to ensure they were mixed enough and cooked evenly. I also followed a comment's advice and used equal parts coffee and rum (doubled to 1/2 cup each) and brushed the lady fingers instead of dipping them to avoid a mush mess. I added 1/2 tsp. sugar to the whipped cream. After an overnight chill, the custard tasted heavenly but much to my dismay the lady fingers were very rum-tasting. It was overwhelming, I couldn't taste the coffee at all. I hope in letting it chill for another half a day the rum will mellow a LOT so I can serve this. It looks very nice. If not, I will make it again using half the amount of rum (or possibly a different alcohol). Very good custard! I will also keep my lady fingers whole to distinguish the layers a bit more.

Slow Cooker Carnitas

I loved this! I did fresh minced garlic, onion, and jalapeno. I tripled the rub (no cinnamon), added 3 tsp cayenne powder, and cut the pork into chunks. It came out sooooo salty, tho! Does anyone else have the same issue?? I am making this again this week and leaving out the salt in the rub, maybe just the salt in the broth will be enough. The meat was so tender and moist, just fabulous!

Perfect French Silk Pie

Love, Love, Love. I did a store-bought Oreo crust, 4 ounces of Ghirardelli chocolate, and covered the whole thing in whipped cream and grated some Ghirardelli semi-sweet chocolate for garnish. I whipped the butter and sugar with the paddle on my KitchenAide stand mixer, and used the whisk for the chocolate and eggs. I beat the eggs for at least 5 mins each, and the pie set like a dream! I smothered it in whipped cream (1 1/2 cups whipping cream, 2 T. sugar, 1/2 tsp vanilla). It turned out smooth, rich, creamy, wonderful! Can't wait to bring this to a party! I will never go to Baker's Square again!

Chicken Cordon Bleu II

I pounded, rolled, and tied the chicken. I dipped the rolls into melted butter and rolled them in panko crumbs. I also opted to brown the rolls in the pan and finish in the oven. I made the sauce in the pan. Awesome meal!

Best Marinara

I made this with fresh italian parsley, basil, and a bit of oregano. I added water because I served it with homemade meatballs and I needed enough sauce to let them all simmer together. Tasty!
