Quinoa Broccoli Casserole

Very yummy!! I might have cooked the quinoa a bit less next time because I like it a bit more 'poppy' or crunchy, but I enjoyed it much better than regular rice and I am a big fan of rice.

VERY tasty. But as in the other reviewers mention seemed to be a lot of filling, I made 16 mini pies, 6 crust-less muffin quiches and one 9" deep dish quiche. I used half eggs and half whites only to make it a touch healthier...only thing I would do different is to mix it all together for the crust-less.

Slow Cooker Chicken Chili with Greens and Beans

Pretty yummy and a great way to use kale! I used "rotel" tomatoes instead of plain diced, fresh kale instead of frozen, threw in some garlic with the onion, no cream and whatever chili-type seasonings I had laying around (cumin, paprika etc). Came out great. But noticed the kale ended up soaking up the flavors more than anything else (kale was pretty spicy, while broth and beans mild).

Greens with Cannellini Beans and Pancetta

OH man this was freaking GREAT!! I followed the recipe except to use the pancetta drippings instead of olive oil. I wasn't sure after I was done it was so easy and simple (i'm used to using lots of seasonings) but it tasted fantastic...even as leftovers!!! Sister liked it with a little balsamic vinegar on it but I liked it as is.

Liquor-Infused Chocolate Strawberries

I used a 'flavor injector' syringe and found out it depends a lot on the size and type of strawberries as to how much you can inject. Large organic ones worked the best for me, and I placed a dab of chocolate over the hole to hold the liquid in because even after sitting for hours it wasn't completely absorbed. The orange liquor was fun (Grand Marnier) but I also used a whipped cream flavored vodka...very fun as well!

Amish Breakfast Casserole - SW Style

SUPER YUMMY!! Made once per recipe and it was great. Then made "southwest" one with sausage instead of bacon, pepper jack for the swiss and threw in a green pepper with the onion. Both were excellent.

Cousin Cosmo's Greek Chicken

Yummy and moist! I put some lemon, oil and greek seasoning on the chicken after I had flattened it while I was prepping the rest of the dinner (just to marinate for 10-20 mins). Added some garlic to the cheese, broth instead of bouillon and otherwise made as stated. Came out good, not super flavorful but went great with the meal (made with Herbed Greek Roasted Potatoes with Feta Cheese from the site).

Absolutely Fabulous Greek/House Dressing

Very fun, sister said it was the best Greek dressing she's ever had. Made a smaller amount (followed AngKN's scaled down measurements) and since I used up the last of my red wine vinegar, I just put it in that bottle and it's pretty.

Honey Soy Tilapia

I thought it was pretty good. I did keep the marinade and cook it in a sauce pan, adding some corn starch to thicken it up and use as a sauce for the fish and rice we ate it with.

Oven Baked Chicken Teriyaki

Very Yummy!! While I used all the same ingredients, I made a couple modifications in preparation (I'm bad I know). I mixed all the ingredients (except the water and corn starch) and pour it over frozen chicken breasts in a gallon zip bag and let it marinate overnight in the fridge, then since I was in a rush to cook after work, I pulled the chicken out of the sauce, chopped it into chucks and sautéed in a skillet until brown then dumped the 'marinade' on it and added the water/starch. It thickened up beautifully and was so tasty!
