Sunshine Toast

My mother used to always make this for us, but we called it "Rocky Mountain Toast" ... Not sure why. It is delicious!!

Strawberry and Feta Salad

I used artisan lettuce and substituted vegetable oil with olive oil ... Otherwise changed nothing, and it was a delicious summer salad.

Dark Chocolate Bacon Cupcakes

Nice cupcakes but not bacony for me ... Check out my Super Baconator cupcakes. I mixed this recipe with several others to create the Baconstein of cupcakes ... IT'S ALIVE!!!

Jasmine's Brussels Sprouts

Way too much salt ... I'd eliminate the extra salt altogether and just let the pancetta flavor come through. I also added an extra garlic clove. Finally, I steamed the sprouts instead of boiling out all the flavor and nutrients. (Side note: I never boil any vegetables unless absolutely necessary.)

Easy Mexican Casserole

Super easy ... Almost too easy! I got overconfident and ended up screwing up a bit. Luckily, it still turned out great! I used ground turkey seasoned with a taco seasoning recipe I found here but then spiced it up a bit more. Also mixed in worchestire sauce ... Forgot to mix the salsa with the meat, but I put it on top of the sour cream layer. It seemed to work out just fine. :)

Chicken-Prosciutto Bundles

Great recipe and very tasty! I used frozen breasts that I grilled up. I also cut them along the "thin side" to sandwich the basil & mozzarella. Then skipped the the pan frying and put them straight into the oven.

Healthy Turkey Loaf

Like others, I doubled the recipe. I also added minced garlic, lemon peper and worchestire sauce. Then the last 5 mins before taking it out of the oven I topped it with fresh basil leaves and shredded "mexican mix" cheese.

Green Curry Lamb Balls

The flavors were excellent!! However, the directions are lacking ... my balls fell apart as I tried to fry them. This turned the whole dish into more of a "Green curry lamb slurry" but again it tasted amazing!
