Little Lemon Meringue Pies

Reviewed: Jan. 18, 2011
These little pies are AMAZING! I had never made a lemon meringue pie before, so this was something new for me. I did notice that the recipe does not tell you to add the last 2 tablespoons of sugar to the meringue. I checked another recipe and saw that the meringue should have sugar, so I added it gradually to the egg white and cream of tartar. They came out perfect and oh so good! I will be making this again but next time I will at least double the recipe. This could also be made without the crust if you are looking to cut some calories, but that would mean giving up a very tasty part. Thank you Kathy Zielicke for sharing such an AMAZING recipe!! I highly recommend this!

Home Fried Cheese Sticks

Reviewed: Jan. 18, 2011
YUMMY! Such a nice coating and they froze so well. I took them out of the hot oil as soon as they browned so as not to burn. I followed that up with a few seconds in the microwave to be sure they were done inside. I served them with "Clone of a Pretzel Dip" and they were so yummy. They made a great addition to our "dippers". Thank you mis7up for sharing you YUMMY recipe! I added it to my cookbook and it has definitely found a home at our house.

Rachel's Cranberry Chicken Salad

Reviewed: Jan. 17, 2011
FANTASTIC! What a terrific way to use left over chicken. I didn't measure a thing because I didn't feel it was necessary. My changes were to skip the green onion, used red apple for green apple, and almond slices for pecans. That's because it was what I had on hand. I love the way the dried cranberries add a sweetness and the nuts add the crunch. Such a FANTASTIC easy recipe. Thank you for sharing Rachel! You made my day!!

Honey Roasted Carrots

Reviewed: Jan. 16, 2011
SOOO GOOD! I used baby carrots. These carrots went perfect with the "Simple Slow Roast Chicken" I was baking. As I had the chicken already in the oven, I partially cooked the carrots then drizzled with olive oil and honey. I, too, am guilty of not measuring which makes this recipe very easy. I put the carrots in the oven (which was set at 250 degrees) for the last 2 hours of baking the chicken. Thank you FrackFamily5 for sharing your recipe! We really had a FrackFamily5 dinner that was very yummy!!

Simple Slow Roast Chicken

Reviewed: Jan. 16, 2011
TENDER, MOIST, & FLAVORFUL! I followed the recipe exactly but used my unglazed ceramic stoneware to bake it. I baked it for 4 1/2 hours and it fell off the bones. The red wine and seasonings made it very flavorful. Thank you FrackFamily5 for sharing your recipe! We really enjoyed it!

Pretzel Dogs

Reviewed: Jan. 15, 2011
AMAZING! These are ABSOLUTELY AMAZING! I was surprised at just how easy they were to make and fun too. I made half the recipe because there was only two of us. It was perfect for one package of hot dogs. The grandkids are going to love them. Thank you WFDM for sharing your AMAZING recipe and a special thank you for recommending my dip! UPDATE - Today I made the pretzel dogs with cheese. I used American cheese which I sliced with a pizza wheel, making it thinner than the dough strips. I pressed the cheese into the dough strips a little then wrapped the dogs. It was necessary to seal the edges between the strips so they would hold up in the water. This all worked well; but, when I baked them, the cheese oozed out the ends. I posted a photo to show the oozing cheese. They tasted great but my conclusion is they really don't need the cheese. I made these to freeze because I found that they freeze so well. I put them in the microwave frozen and heat at half power. They taste as good as fresh baked! Try these, you don't know what you're missing!

Sweet Rice

Reviewed: Jan. 13, 2011
SMOOTH & CREAMY! This is not overly sweet. I thought I had made it wrong because it wasn't thick like other rice puddings. I researched Arroz con Leche and found it is "soupier" than American rice puddings. I cooked it a little longer to thicken to my preference, and once it cooled, it was perfect. SMOOTH & CREAMY! Thank you crys7422 for sharing your recipe. I learned something new tonight!

French Bread

Reviewed: Jan. 11, 2011
EXCELLENT! I only made one loaf because that's what would fit in my bread machine. My only substitution was to use all-purpose flour and add vital wheat gluten. (1 T per cup of flour) This went perfect with tonight's soup. Thank you Janet Vink for sharing such an EXCELLENT recipe!

Lobster Soup

Reviewed: Jan. 11, 2011
EXCELLENT! I did, however make some changes. I used can lobster as I could not bear to use fresh lobster in a soup unless it was left over, which never happens at our house. I added worcestershire sauce, sherry, Old Bay, white pepper and paprika. I substituted heavy cream for the light cream. My only wish is that I had written down the amounts. I just did it to taste, and it was "knock your socks off" good! Thank you Dorothy for such an EXCELLENT recipe.

Fake-Out Crispy Crunchy Peanut-Buttery Treats

Reviewed: Jan. 6, 2011
FANTASTIC! I used Jif creamy peanut butter and Multi-Grain Club crackers. They tasted as good as they looked and that was AWESOME! They were just like little candy bars. I had originally made them to share with friends; but, after nibbling, I decided I'll share the recipe instead! Thank you Sarah Jo for such a FANTASTIC recipe!!

Basic Corn Muffins

Reviewed: Dec. 29, 2010
AWESOME and SO EASY to make! I could not believe how beautifully they baked. When I peeked in, I was taken by surprise. I had forgotten to beat the egg first, so I thought I messed up; not so, they couldn't have been more delicious, just the right sweetness and moistness. This is a real favorite. Thanks Doug for sharing your AWESOME, EASY recipe!!

Christmas Breakfast Sausage Casserole

Reviewed: Dec. 27, 2010
VERY GOOD! I would have liked to have followed this recipe exactly, but, being snowed in with a house full, I had to use what was on hand. I substituted a pound of bacon for the sausage, added two extra eggs so it would go further, and replaced the cheddar cheese with mozzarella cheese. It was very good, and I must admit I was surprised. Thank you M.K. Meredith for such a very good recipe that accepted changes well.

Turkey Pot Pie I

Reviewed: Dec. 26, 2010
VERY GOOD! This recipe came in handy by taking a small amount of turkey and feeding 7 people. The changes I made were to cut back on the parsley, use frozen peas and carrots, add more milk, and brush the crust with egg prior to baking. I doubled all the ingredients and made two pies. It got two thumbs up from the entire family. Thanks Linda for such a VERY GOOD recipe!

Play Dough Cookies

Reviewed: Dec. 19, 2010
EXCELLENT! These make very attractive novelty cookies for the grandchildren. I rolled them in granulated sugar crystals prior to baking. For a change-up, I made some of them by "snaking" the dough up the stick. I used Wilton "cookie sticks" instead of lollipop sticks because the 800 number for Wilton told me not to bake with the lollipop sticks. Thank you Terri for sharing!

Chocolate Peanut Butter Chip Fudge

Reviewed: Dec. 15, 2010
EASY, QUICK, AND YUMMY TOO! My only disappointment was the chips appeared brittle when the fudge was cut. I used Reese's Peanut Butter chips that I know were fresh. I do believe the brittle look was due to refrigeration during the 2 hour chilling. Anyway, they were a nice addition to my fudge assortment tins. Thank you Eagle Brand for sharing your recipe!

Kahlua Balls

Reviewed: Dec. 13, 2010
AWESOME Christina! Hubby is still raving over them. This was a trial run. I still don't know which coating I like best. I think I will stick to a variety. I just want to eat them all! The texture was amazing. They were so easy to form which really took me by surprise. Thanks for sharing your recipe, I'll be thinking of you when I serve these.

Gingerbread Biscotti

Reviewed: Dec. 8, 2010
GREAT taste! I did use all purpose flour in place of the whole wheat flour as I didn't have any. The only other change I made was to lower the temperature to 325 degrees for the second baking. I put them in for 10 minutes on each side. The recipe was hard to follow because I had to make adjustments for the spices. They are written in fractions of a tablespoon and my measuring spoons are not that size. The ground ginger at 1 1/2 tablespoons would be 1 tablespoon plus 1 1/2 teaspoons...the cinnamon at 3/4 tablespoon would be 2 1/4 teaspoons....the ground cloves at 1/2 tablespoon would be 1 1/2 teaspoons..the nutmeg is fine! I hope this helps others so you don't have to figure it out. (and myself the next time I make it. lol) The biscotti is so good the recipe is still worthy of 5 stars! The aroma of this baking will knock your socks off! Thank you Cristina for sharing. It is being included in my assortment of biscotti Christmas gifts.

Red Ants on a Log

I was really quite surprised. I've had peanut butter on celery before but this recipe is a nice change. The dried cranberries add a nice sweetness to it. It looks like the grandkids are going to have to share these! Thank you senkyb for sharing this recipe.

Super Simple Pork Chops

Reviewed: Dec. 1, 2010
SUPER delicious too!! This recipe gets all 5 stars in my book! I followed it exactly using loin chops. The maple glaze was so delicious, I spooned some over the chops. I didn't have maple syrup but had McCormick's Maple flavoring, so I made my own. The recipe is on the box. Since I only needed 1/4 cup of apple juice, I used a portion of a box of Juicy Juice. The smell of it cooking as the juice and syrup were reducing was awesome. I will definitely be making this again. Thank you grandmary for sharing such a SUPER recipe.
