Baked Kale Chips

Reviewed: Mar. 25, 2011
Wonderful snack Lucy! You won't miss potato chips when you replace them with this healthy version. Great way for children to get more vegetables. I season mine with garlic salt.

Macaroni and Cheese with Caramelized Onions and Bacon

Reviewed: Mar. 7, 2011
A little labor intensive, but a GREAT Macaroni & Cheese! Yes, as others said double the topping. I used Kirkland's (Costco Brand) Real bacon bits and warmed them in a non-stick skillet, removed bacon bits and proceeded the rest of the way, just enough bacon drippings for flavor and I added a little more butter. Thans for a great recipe!

Strawberry Spinach Salad I

Reviewed: Feb. 18, 2009
My grandchildren (teens and early 20's) all loved this recipe. I did cut back on the sugar and it does make much more dressing than you need. Thanks for the great recipe

Lucky and Rippy's Favorite Dog Food

Reviewed: Apr. 13, 2007
The recipe is great for a supplemental meal. However I hope the submitter does not mean it for a steady diet because there are vitamins and minerals that dog's require and are not in the recipe. This fact has been stated on the news when they are talking about the Pet Food Recall. However, like I previously stated it is good for a change of pace/treat meal.

Slow Cooker Beef Stew I

Reviewed: Dec. 4, 2006
STOP RIGHT HERE! THIS IS A TERRIFIC BEEF STEW RECIPE WITH THE ADDITION OF ANOTHER REVIEWER'S (CORINNE) TWEAKS. IN ADDITION TO CORINNE'S TWEAKS, I ADDED THE FOLLOWING: ADDED MORE POTATOES/CARROTS AND MORE LIQUID (BROTH & WINE), JUST A PERSONAL CHOICE. SERVE IT IN A BREAD BOWL (PANERRA'S CARRY THEM). YOU'LL EAT THE STEW AND THE BOWL!! RAVE REVIEWS FROM MY FAMILY AND MY COOKING CLUB. ENJOY!

Beefy Mushroom Barley Soup

Reviewed: Sep. 29, 2004
Great soup! For thicker soup use more Barley, meat lovers add more meat, I used a mixture of Shitake and Regular Fresh Mushrooms, chopped small since a few members of my family do not like mushrooms. They thought the soup was wonderful and had seconds! Half water, half beef broth (I used Knorr's)and Merlot Wine. Upped the sour cream also. Double the recipe or you will be sorry, it goes fast. Another great meal with salad and a crusty loaf of bread. Thanks Karen for a great basic recipe!

Basic Ham and Bean Soup

Reviewed: Jan. 29, 2004
Great basic recipe. I tweaked it a little soaking beans overnight & rinsing. Then used half chicken broth & half water. Added a little garlic. USED 4 OZ. MORE OF BEANS than the recipe called for. Cooked beans in broth mixture until reasonably soft and MASHED (with a potato masher)some of the extra beans. Great thick, hearty soup. Served with crusty bread and salad.
