BANANA DROP COOKIES

Favorite after school snack with a glass of milk my kids just loved. Now the grandkids love them. These freeze nicely if packed in airtight container.

Microwave Caramel Popcorn

Have used a recipe similar to this for several years. I use butter and only cook the caramel sauce 1 1/2 min, stir; cook 1 1/2 more min, for total of 3 min. We like ours chewy. Traditionally make it on Halloween for the family to munch on. This is definitely our favorite confection we enjoy most in the fall and winter months. One must be careful to take in account their microwave wattage. I think that is why some reviewers report failure. Thanks to reviewers for all the suggestions for changing this up by adding various kinds of nuts, etc.

These bake up light and tasty. Makes your kitchen (entire home) smell great. They are light and nearly melt in your mouth Best served fresh. Fun to do with the kids for a memory making time together.

Asian Salmon

Excellent way to prepare salmon and really nice for having company over. I made no changes and all 8 people raved about flavor and moistness of the filet. Do not overcook salmon. 20 min-30 minutes at most, depending on thickness of filet and your oven. These can be grilled as well. Recommend you baste the fresh filet with EVOO then lightly salt and pepper. Flip them onto grill with seasoned side down. Season the other side. Flip again and baste done side with marinade. I like this marinated then baked so well, that I wouldn't go to the extra work to grill them losing the benefit of the pre-cooking marinade time.

Low-Fat Blueberry Bran Muffins

Excellent. I found they were light and fluffy made with wheat bran and 1 c. white flour and no wheat flour. (Wheat flour is hard to keep fresh on hand). I customized it with several of the suggestions reviewers made like trying a variety of fresh and/or dried fruits and reduced brown sugar to 1/2c. I added 1/2 tsp. cinnamon and 1/8 tsp of nutmeg and a 1/2 c. coarsely chopped pecans. The batter keeps for a few days in the fridge in order to quickly bake a couple while getting ready for work so I can grab them along with my travel mug of coffee as I head out the door. Yummy healthy, satisfying start to the day.
