About this Cook
I am a stay at home mom of 2 very active boys and one wonderful hubby. Both my boys have food allergies, so cooking for them is quite a challenge. I'm always tweaking recipes to try to make them tasty so the boys will eat them. I love finding recipes that the entire family will eat. My husband laughs because the first thing I turn to in any magazine are the recipe pages!

My favorite family cooking traditions
Baking cookies at Christmas time with my Mom. We don't do that any longer since my Dad passed away. Now I bake cookies with my sons. I used to love to cook with my great-grandma who used to be a commercial baker.

Making anything that my kids love and will ask to eat again.

Cheeseburger Pie
This is a great starting point and a very forgiving recipe as far as playing with the ingredients. My family likes it, but I've made some changes. I decreased the amount of bread crumbs by half so it doesn't taste like meatloaf. I added bit of salt and increased the onion since my family isn't crazy about peppers. I put more tomato sauce in and added some chopped dill pickle. I also added garlic powder to give it some additional flavor. I also add some mustard to the filling, about 2 tablespoons. This makes it taste more like a hamburger. The topping is good, although I do add a bit more Worchestershire Sauce since I think it adds some tang to the cheese.

Chicken Enchiladas II
I made some changes to the recipe to give it more flavor, since my family found them to be pretty bland. I tripled the onions and sauteed a couple of cloves of minced garlic. I added a cup of salsa to the sauce as well. I plan on baking the chicken with some taco seasoning or chili powder to add some intensity to the flavor. The are more like burritos than enchiladas, but they are a good start for a basic recipe.

Beef Nacho Casserole
This was a hit at my house, but I made some changed. I swapped sour cream for Miracle Whip since that didn't seem to fit in the recipe. My son doesn't like corn so I left that out and made it as a side veggie. I did add a bit of onion to the ground beef and used a medium chunky salsa. Also, I didn't crunch the nacho chips, I used tortilla strips and left them in big pieces so they didn't get as mushy.
