Sopapilla Cheesecake Pie

Reviewed: Jul. 26, 2012
I made this for the first time last night for a school potluck. I got so many rave reviews. I made two batches and left some home with my family. They texted me to let me know it was delicious!! Thank you!! Will definitely make it again. One of my girlfriends requested I make this for her son's birthday party. :)

Oregano Chicken

Reviewed: Jul. 4, 2011
A great recipe. I had everything on hand. A little less soy sauce than necessary but it still tasted great. EVERYONE loved it. My husband, 19 year old son, his 20 year old girlfriend and my 4 year old son (who HATES everything, practically!! - His favorite phrase is, "But that's not my favorite.") I doubled the recipe and used 12 drumsticks. They were basically frozen so I defrosted for 30 minutes and stopped when it looked like they were actually cooking, rather. Cooked the partially frozen drunsticks for an hour, flipping half-way through. It was a win-win meal. Delicious for everyone and easy for me. I love those recipes.

Orange Cilantro Rice

Reviewed: Jan. 7, 2011
I made a huge dinner, with chicken, boneless pork chops and multiple sides. Everyone's favorite dish? The orange-cilantro chicken, the afterthought. :) I picked it because the chicken had orange juice in the sauce and I wanted the side to complimnt it. It was my personal favorite, as well. I'm making it again tonight, to go with another chicken meal.

Amish Breakfast Casserole

Reviewed: Dec. 25, 2010
Very easy. Fast. Delicious. I did not have Swiss cheese so left that out. Used sausage instead of bacon. I make a breakfast casserole every Christmas morning and my 19 year old son told me this casserole is his favorite. Maybe I won't make a different one EVERY Christmas! This will become my usual, with a slight variation from time to time. (I get bored of eating the same thing.) My only issue was that it quite a bit of grease formed on top, probably from the cheese, but I matted that up with some paper towels before serving it. It did not taste greasy.

Broiled Tilapia Parmesan

Reviewed: Dec. 18, 2010
This fish was delicious!! I was in a pickle as to what to make for dinner and figured fish cooks fast so chose my tilapia. Then I found this recipe. 1st, since my oven was broken, I could not broil it. I cooked it in my roaster on 350 for 20 minutes. 2nd, I did not have celery salt so I used regular salt. The only reason I gave it a four is because I prefer stronger flavors in my food and this was more mild. Maybe the celery salt would have made a difference and, when I make this again, I'll try it. If it makes the difference, I'll change my rating.

Greek Penne and Chicken

Reviewed: Dec. 9, 2010
I LOVEd the flavors in this dish, as did my husband, 17, 4 and 2 year old! I did not have the tomatoes, used macaroni noodles and substituted dried parsly but it was still delicious. It was a little dry for me so I added a little buttermilk to make more "sauce". I'm looking forward to making this again, this time adding the tomatoes and using penne.

This was really good. Since I did not have the sherry, I used red wine viinegar. Very simple, easy recipe.

Garlic Teriyaki Edamame

Reviewed: Aug. 4, 2010
I had bought frozen edamame and pulled it out to pair with some asian-style chicken. I had no clue how to cook it so I grabbed my laptop and searched Allrecipes. This was one of the top rated, most voted-on recipes so I figured I'd try it. I ended up not having teriyaki and had to look up a recipe, which called for sherry, which I did not have so I used red wine vinegar. :) The edamame was delicious. Even though I had to use substitutions and create ingredients from scratch, it was definitely worth it. Even my husband, who asked me why we can't just "eat American", really liked the flavors. Not knowing how to eat edamame, he had popped a few whole pods in his mouth and started chewing before I could tell him how to eat it. He loved the flavor but was questioning the texture and wondering how it was going to feel on the way down. I'm looking forward to tomorrow's lunch, hoping the edamame tastes as good after a night in the fridge. :)

I mix the oil, basil leaves and red wine vinegar (same amount as oil) in my food processor and drizzel over my on-the-vine tomatoes and Precious all-natural mozzarella cheese. Delicious!! I'm addicted to this salad. So delicious and easy to make.

Pollo Fajitas

Reviewed: Nov. 3, 2009
I really enjoyed the flavors in this fajita recipe. It was delicious. The only things I did different was added more vegetables and some chipotle pepper, because I love the deep flavor. My family loved it and it was one of the easiest meals I have made in a while.

Corn and Zucchini Melody

Reviewed: Sep. 17, 2009
I was looking for a quick, easy way to cook up my zucchini, thinking I would bake them with some shredded parmesan cheese, when I saw this recipe. Thinking it would be nice to get in more veggies, I made it, using pepper jack cheese instead, and LOVED it. Unfortunately, I did not have any onions but I'm really looking forward to making this again with the missing ingredient.

Strawberry Oatmeal Breakfast Smoothie

Reviewed: Sep. 4, 2009
There are several healthy foods I know I don't eat enough: oatmeal and fruits are among them. Not having soy, I used 2% milk. Since I keep ground oatmeal on hand for all-natural beauty recipes, I used 1/2 cup of that since I did not think I would like the texture of the whole oats. I also used 1.5 teaspoons honey rather than sugar and added 2 tbs ground flaxseed. Next time, I'm adding 2 tbs wheat germ. The smoothie tasted delicious, just sweet enough, with the perfect consistency. I'm psyched to include this in my diet regularly. I'm definitely going to use soy milk in the future, though, since it has more vitamins, etc, than regular milk.

Mixed Vegetable Casserole

Reviewed: Aug. 22, 2009
I picked this recipe and started making it before verifying I had all the ingredients. During execution, I realized someone had used up my cream of chicken soup and my white cheddar cheese. What to do?? For the chicken flavor, I added two chicken boulion. For the creaminess I was losing, I substituted a can of creamed corn. for the cheese, I used pepper jack cheese. I used 32 oz of frozen mixed veggies instead of canned but I cooked them before using them for the recipe. I was really good. Next time, I'll make it right but this is an awesome way to use up some of the veggies I always have stocked up in the freezer. I did think it needed a little salt but that might be because I did not use the cream of chicken soup. I like the fact that it's so versatile. I'm curious as to what other substitutions/combinations I can experiment with. Mmmm, creamy potato soup comes to mind, with chunks of chicken...

Onion Dijon Crusted Catfish

Reviewed: Aug. 22, 2009
I scaled it down 2 servings. Since I read reviews that indicated the onion overpowered the flavors, I halved the onion and used a little more dijon mustard. It was really, really good and I'm disappointed I don't have any leftovers to heat up today. :) My hubby was skeptical since he does not like catfish but he tasted it and was pleasantly surprised. I think adding a little honey dijon, as well.

Banana Crumb Muffins

Reviewed: Jul. 6, 2009
I was looking up banana pancakes when I ran across this recipe and decided to make it, as well. I made it EXACTLY as the recipe indicated. Wow. It was so easy and the result was delicious. I loved it. The streusel topping was awesome. The bread was soft and moist. The topping was lightly sweet and crisp and flaky. My whole family, including hubby, a 17 yr, 16yr, 3yr and 1 yr old. My 16 year old daughter, who is on a diet, did not want to eat any but I made her at least taste it and she ended up sheepishly eating a whole one. :) This recipe was so easy. I will definitely make again and again and again! :) I'm excited to adding nuts, raisins, fruits (strawberries? blueberries? - the possibilities are endless. Mmmm - mouth is watering just thinking about it.

Addictive Sweet Potato Burritos

Reviewed: Apr. 27, 2009
Addictive is right! I loved the strange but surprisingly pleasant combination of sweet and tangy flavors. My 17 year old son loved them. My husband loved them. I loved them and, most difficult and important in our house, our toddlers loved them. We can't get my two year old to eat anything besides fish sticks, hot dogs and cheese, just about.

Herb Butter

Reviewed: Apr. 27, 2009
Found this recipe when looking for a herb butter to use on frozen California veggies so my toddler would eat them. My toddler didn't even give it a chance but I sure did. Hubby, too. We love it. I'm not going to mind eating my steamed veggies any more! :) (Guess I know where my kids got their veggie aversion)

California Grilled Veggie Sandwich

Reviewed: Apr. 6, 2009
I am DEFINITELY going to make this again... x a million. It was so delicious, my meat and potatoes hubby even rated it a 5 and compared it to food we eat at high end restaurants. To top that, my sixteen year old, fast food loving son, said it was awesome.
