Mini Cheesecakes I
About this Cook
Let's see: I've been married for 16 years and am the mother of 4 (2 teens, 1 toddler, and 1 infant). I love to cook, especially desserts, as treats for my children and their friends.
My favorite things to cook
I enjoy making elegant, "different" dinners and to explore flavors from various cultures. I normally make cookies but have been experimenting with clakes and pies lately.
My favorite family cooking traditions
We don't really have any family cooking traditions. My teen daughter likes to help sometimes but has difficulty following directions. :) My husband and son just enjoy nibbling and stealing tidbits during the cooking process.
My cooking triumphs
My honey glazed ham is requested every Thanksgiving and Christmas. It seems to be my trademark now, which I enjoy.
My cooking tragedies
I can't even think of specifics but I've had quite a few dissappointments. Main dishes that did not turn out the day of a dinner. Food that did not taste exactly how it did the first time I made it. Cookies that got too hard. Desserts that overcooked. Each tragedy is just a learning experience.

Oregano Chicken
A great recipe. I had everything on hand. A little less soy sauce than necessary but it still tasted great. EVERYONE loved it. My husband, 19 year old son, his 20 year old girlfriend and my 4 year old son (who HATES everything, practically!! - His favorite phrase is, "But that's not my favorite.") I doubled the recipe and used 12 drumsticks. They were basically frozen so I defrosted for 30 minutes and stopped when it looked like they were actually cooking, rather. Cooked the partially frozen drunsticks for an hour, flipping half-way through. It was a win-win meal. Delicious for everyone and easy for me. I love those recipes.

Orange Cilantro Rice
I made a huge dinner, with chicken, boneless pork chops and multiple sides. Everyone's favorite dish? The orange-cilantro chicken, the afterthought. :) I picked it because the chicken had orange juice in the sauce and I wanted the side to complimnt it. It was my personal favorite, as well. I'm making it again tonight, to go with another chicken meal.

Amish Breakfast Casserole
Very easy. Fast. Delicious. I did not have Swiss cheese so left that out. Used sausage instead of bacon. I make a breakfast casserole every Christmas morning and my 19 year old son told me this casserole is his favorite. Maybe I won't make a different one EVERY Christmas! This will become my usual, with a slight variation from time to time. (I get bored of eating the same thing.) My only issue was that it quite a bit of grease formed on top, probably from the cheese, but I matted that up with some paper towels before serving it. It did not taste greasy.
