Apple Pancake

Great recipe! Made this for Sunday brunch with some maple sausage patties. You don't need any syrup on these. They are sweet enough by themselves but so good! After reading some reviews I decided to use only 3 eggs instead of 4. I also used ? cup sugar since some reviewers said the original recipe was really sweet and used 2T of margarine since 3 seemed like a lot to me. Since I didn't have dairy milk I used almond milk and added nutmeg. Thanks for a tasty treat for a Sunday morning!

Chocolate Zucchini Muffins

This was a great recipe. I was really impressed by how moist the muffins came out. I also got exactly 24 muffins like the recipe said it yielded. The only things that I changed were I substituted a half cup of unsweetened applesauce for half cup of the oil. I used a canola oil blend which made them a bit healthier. Since I didn't have cardamom I used allspice. I also took the advice of another reviewer and added a few chocolate chips to the top of each muffin. They turned out yummy! I can't wait to have some for breakfast this week!

Cilantro Lime Grilled Tofu

This is a good start for marinade, try adding 1 and 1/2 Tablespoons of honey. Exchange out a 1/8 cup of the lime juice for 1/8 cup of rice vinegar.

Walnut Pear Coffee Cake

This was a wonderful and moist coffee cake. I will definitely hold onto the recipe to make again. The basic recipe is good the way it's written, but I made some changes based on what I had in the house. I used 2 pears and 2 apples, thought the flavors would go well together, and pecans instead of walnuts. I also toasted the pecans first before chopping them which really makes the pecans fragrant. I used light sour cream and Saigon Cinnamon because it has a much more intense flavor than traditional cinnamon. Because there was twice the amount of fruit, I used a larger springform pan and layered half the fruit in the middle and half on top. The topping went over the fruit and made it stick well. The cake had to bake about 15 minutes longer, but the end result was well worth it!

Homemade Chewy Granola Bars

Love this recipe but I changed it out a bit based on what I had available at home. I used brown sugar splenda blend, an eighth cup each molasses and honey instead of corn syrup, left out the seeds and chocolate chips but added a mixture of toasted nuts (pecans, almonds, walnuts) for protein. Since I wasn't sure how badly the granola would stick to a baking pan, even with spray, I used an 8 inch springform pan which worked great. I was able to separate the sides without a problem and used a spatula to gently pull the granola from the bottom of the pan onto wax paper. My husband and I both love the bars and have been taking them for breakfast with some greek yogurt on the side. I'll definitely make them again!
