Quinoa with Sweet Potato and Mushrooms

This is an extremely tasty dish. After making the quinoa and the sweet potato mixture we mix it all together. The cayenne brings in the perfect amount of heat and you don't even need salt if you want a low sodium side dish. We use all organic ingredients adding to the healthiness the dish has already. This has become quite a common dish at our house.

Best Steak Marinade in Existence

This is my go to steak marinade. Makes the meat tender and gives it a wonderful flavor. The spices look like too much, but they make the meat so flavorful. I didn't blend the marinade, just mixed it in a Ziploc bag and put the steaks in. I skipped the hot sauce and dried mince garlic.

Mushroom Pork Chops

Delicious recipe! I dredged the pork chops in flour, salt, pepper, and garlic salt and browned them. After adding the rest of the ingredients I cooked it in a 350 degree oven for 20 minutes before serving. The sauce was very creamy and worked great spooned over mashed potatoes.

Shrimp Fettuccine Alfredo

Very flavorful, but the sauce is difficult to make. After cooking it, it got too thick, so I added more half-and-half, but it still ended up being too thick.

Grilled Garlic Artichokes

The lemon flavor came through perfectly. I decided to marinade them in the lemon juice, olive oil, and garlic before grilling them, along with basting them while they cooked. Every bite was a burst of flavor!

Balsamic Roasted Red Potatoes

These potatoes were easy to make and had a lot of flavor. The balsamic vinegar makes a nice syrupy glaze. After they were done I sprinkled some fresh green onions over the top to add some color and some freshness. My mom absolutely loved it!

Chicken Cordon Bleu II

This chicken was AMAZING. I decided to fry them up in a mixture of oil and butter instead of all butter, and then cook them in the oven. At first when I rolled them up I was worried they wouldn't stay together because I didn't put toothpicks in them, but as they cooked they stayed together and didn't unroll. After that I made the wine sauce. When I tried to thicken it I got lumps, but put it through a sieve to get them out. Then once it was thickened added the chicken back in and let it simmer until I got the sides ready. They were delicious. The wine flavor really came through and the sauce was so light. The ham and Swiss cheese flavor really came through without over-powering the perfectly moist chicken. Will definitely be making this again.

Fish Tacos

These fish tacos are great. The sauce was amazing. Perfectly spicy and the lime really complimented the fish. I used a fish from Costco called tortilla-crusted tilapia and it went perfectly well with the cabbage and sauce. Served it with Spanish rice and black beans.

This was a good recipe. I did get very frustrated when trying to peel the peppers though. Next time I'll have to do some more research on it. The breading was definitely delicious. It was a lot easier to use then whipped egg whites.

Tuna Noodle Casserole from Scratch

I decided to make this after my mom mentioned it. I loved the idea of making it completely from scratch including the fresh mushrooms. The only thing I did different was I used panko breadcrumbs which added a nice buttery crunch on top. The cheese got nice and hard forming a delicious crust. Everyone had seconds and it was gone in no time. I will definitely be making this again.

Ultimate Twice Baked Potatoes

These were delicious! I made them for my mom's birthday and she absolutely loved them. I never thought of using a hand mixer to mix the filling before. It made it so smooth and creamy. I decided to put the filling into a Ziploc bag and fill the potatoes and then smooth it with the back of a teaspoon. This made it easy to fill and know when they were evenly distributed. I managed to break a few of the skins, but luckily they are really easy to mold once you have the stuffing in.

Healthier Slow-Cooker Chicken Tortilla Soup

This recipe was delicious! First, I don't have a slow-cooker, but I was able to make it on the stove. I sauteed the onions, jalepeno peppers (because I don't know what cubanelle peppers are), and the garlic until just sweated out. Then I added my shredded chicken and the rest of the ingredients. I brought it to a boil and then covered and simmered on low for 4 hours. I served it with tortilla strips, avocados, lime, and cojita cheese (it reminded me of a feta). Everyone loved it here! I never thought of adding enchilada sauce to tortilla soup and it added so much flavor! When I was looking for the frozen corn I found a bag of a frozen southwestern mix. It had corn, black beans, onions, sweet peppers, and hot peppers. It added a nice bulkiness to the soup.

Baked Potato Soup

The flavor of this soup was wonderful due to the dried basil. It did turn out to be a little too thin, but I added some more flour/half-and-half mixture and it thickened up perfectly. We decided to top it with sour cream, green onions, cheddar cheese, and of course that yummy bacon.

Grilled Garlic Potatoes

This dish had a great flavor especially because the onions caramelized while on the grill. I had never done a foil packet on the grill for sliced potatoes before, but it was a simple way of cooking them and I didn't have to heat up the oven. Overall, a really tasty dish that goes well with grilled steaks!

Summer Corn Salad with Asparagus

This salad was delicious. For my Fourth of July dinner it was perfect to eat outside by the grill. I loved the taste the corn brought after grilling it and the balsamic vinegar brought out the sweetness of the vegetables.

Best Big, Fat, Chewy Chocolate Chip Cookie

These are definitely the BEST chocolate chip cookies I have ever had. I use an ice cream scoop to make them into perfect circles and they turn out so big. This is my go to chocolate chip cookie recipe.

Creamy Caramel Flan

This was my first flan I have ever made. It was amazing! I made it for my dad on Father's Day. Our whole family loved it. It was very creamy and the caramel was lovely. When I first started making the caramel I thought it wouldn't work because it hardened so much. All my worrying was for nothing because the next day I flipped it over and it was just fine.
