Piernik - Honey Bread

This came out great! I was born in Poland but moved here at 9 years old and this is very similar to what my grandmother used to make. Definitely a keeper!

Simple Scones

These are definitely better than what you buy at bakeries but I was a bit disappointed as they are on the dry side. I baked them for 16 minutes and the bottoms were brown while the tops were still pale. I broiled them for another minute to get the tops golden. Maybe 400F is too hot for my oven? I wish they were a bit more moist but the flavor itself is very good. I might give them another go but lower the baking temp.

Banana Oat Bran Pancakes

My family absolutely loves these!!! They are probably the best tasting healthy breakfast out there :) I misread the recipe the first time I made it and mashed all the bananas and put them in the batter. This makes the batter seem super runny and it won't thicken much even if you let to sit for 10 minutes, BUT the pancakes come out amazing anyway! So I've stuck to doing that since. They are super moist, the flavor is so yummy and we look forward to them every weekend. Sometimes, I add in a handful of bittersweet chocolate chips for a nice twist. My husband eats them with maple syrup but I find them perfect as is or with a little bit of fruit preserves. THANK YOU so much Smuckers! You've turned Sunday pancakes into a healthy treat :) Half the recipe (still using a whole egg) makes 6-7 pancakes about 4 inches in diameter.

Artichoke Mashed Potatoes

Made this today for a dinner with friends we were hosting and no one liked it :( It ended up bland and kind of tart. I think the artichokes took over the flavor too much. We tried to doctor it up with parmesan but it just wasn't very good. I'm so glad we made mac and cheese as well or we'd have no starch!

Gluten Free Zucchini Patties

These came out moist and lightly sweet cause of the coconut flavor and perfectly complemented a spicy meat sauce. My 13 month old had a double serving herself! A new favorite at our house :)

Toddler Muffins with Honey

These came out moist and delicious! I made them with 1/2 tsp salt and I feel I can taste the salt a bit too much so I edited it to 1/4 tsp to try next time. My 13 month old loved them and inhaled one with breakfast this morning. They are very lightly sweet which is fine for me and the baby but my husband thought they tasted a bit too healthy for him. If I was making it just for us or older kids, I'd probably add a tablespoon or two of brown sugar, but for little ones, this is perfect.

Pear Pie III

The reviews all said to up the butter and lower the sugar. I ended up with a gross buttery mess. DO NOT up the butter to half cup as all it did was just ooze out of the cooled pie. I regret following users suggestions as the pie is not tasty at all. I did 1/2 cup butter, 1/4 cup brown sugar and 3 eggs (everything else the same). If I ever have over ripe pears on hand, I'll follow the recipe with maybe dropping the sugar a little to like 3/4 cup. I'm definitely bummed!

Curried Carrot Soup

Very nice soup. I made it with the minor adjustment of adding two cloves of garlic and a cup of chicken broth to thin the soup instead of water. It came out great and my 9 month old devoured a whole bowl! I then took the rest of the soup, added a bit more curry, a pat of butter and some garam masala for me and hubby. We enjoyed the soup and will be making it again.

Spicy Pumpkin and Sweet Potato Soup

I made the soup and it tasted like it was missing something. I didn't have fennel seeds but I really don't think that would make the soup. But maybe! As it wasn't very flavorful, I popped open a can of coconut milk as per reviewer suggestion and added half in. It still tasted just ok. I mean it is good. Just not tasty. Won't be making it again.

Individual Beef Wellingtons

As modified, this recipe is pretty perfect if I may say. Thanks to all the previous reviewer feedback! The additional trick I've learned over time is that I place strips of any extra puff pastry on top of the wellingtons and it puffs up nicely in crispy layers. Yum!

Individual Beef Wellingtons

As is, I find the recipe doesn't make enough of the mushroom paste per steak. I suggest doubling it! Also, to prevent the wellies from turning soggy, make sure to dab any excess liquid out of the mushroom paste and preheat the cookie sheet before placing the wellies on it and baking. Otherwise, it's great and my family enjoys these every time :)

Banana Cream Pie I

Like everyone else, I used cornstarch to prepare the pudding, not flour. I also only added 1/2 cup sugar as we don't like things too sweet in our house. Otherwise, I followed the recipe as is and it was pretty good. Personally, I think it tasted too strong of vanilla - but that is more of a personal preference thing. Otherwise, everything came together great and my family enjoyed the pie. I did follow someone's tip to dip the bananas in lemon juice (which I diluted in club soda as I thought it would make the banana too lemony!) - I think that should be an added step in this recipe; oh and I didn't bake it! That is the main reason I'm taking off a star - banana cream pie should not be baked and that just sounds like a disaster.

Slow Cooker Split Pea Soup with Ground Meat

After making the Slow Cooker Split Pea Sausage Soup by Dorothy several times, I've modified it down to this version. My family loves it and I love that it is healthy. I'm not a big oregano fan so I find the parsley and sage to be a wonderful combination here.
