Paleo people are on to something! These muffins are surprisingly good, at least to a non-Paleo person. Definitely include the dates, for flavor, sweetness, and texture.

The Best Swiss Cheese and Beer Fondue

Rich flavor and a creamy texture (keep the heat moderate and keep stirring so the mixture doesn't stiffen) made this fondue a party hit with my friends. The surprise was using beer instead of wine.

Double this recipe! You will love it that much. I used 12 cups of rolled oats and 1/3 more of all other ingredients. I also added another tablespoon of cinnamon. A hit! Parchment paper to line the baking sheet is a great tip -- it means minimal washing up afterwards.

Tomato Harvest Marinara Sauce

To clarify Sunny's comment, there are no separate rubber rings used in canning this sauce. Those are 'old school.' The rings referred to in Step 5 of the directions are screw-on metal rings (the outer rings that fit over the flat metal jar lid) standard with all two-part lids for Ball and Mason canning jars.

Amazing! I was skeptical about the condensed milk, but it's not too sweet. The meringue makes it light and delish! Add 1/4 teaspoon cloves to enhance the holiday spice factor.

Best Spinach Dip Ever

A big hit at a recent neighborhood party! Definitely add all the spinach. I also mixed in 1 cup plain, low-fat yogurt to tone down the mayo taste. Served it with crisp pita chips instead of the sourdough bread bowl.

Garlicky Quinoa and Garbanzo Bean Salad

100 percent easy and delicious! I made this by first cooking dry garbanzo beans, then followed the prep steps. I recommend blanching or steaming the broccoli a few minutes to ensure it's tender. I also mixed in 3/4 cup crumbled feta cheese for some tangy flavor.

Kalamata Olive, Tomato, and Cheese Melt

Easy to prepare, but why a casserole? Why not serve it as is? Also needs more zip. Maybe use a fresh, chopped jalapeno instead of canned? Or toss with salsa?

Maple Syrup Casserole Made in Heaven

Surprisingly delicious! Everyone loved it. Best part was being able to make it ahead. I'd make it next time in a deeper casserole dish so more of the bread soaked in the liquid. This time the bread exposed to the heat was crunchy, but that added texture.

Colorful Vegetable Fajitas

A terrific fast and easy supper. I made the veggie filling in advance and had it ready when I got home. Assembled, then heated the fajitas 2 minutes in the microwave to melt the cheese. Added more cheese, leftover rice, and chickpeas. Yum!

Excellent! Easy to make and wonderful flavors. The garlic mayo really made everything sing. I recommend turning the eggplant slices once so each side is under the broiler for 5 minutes.
