Garlic Alfredo Tilapia

OMG...this just works!!! I was a bit hesitant to top my beloved tilapia with alfredo sauce. I am so glad I did as it takes it from wonderful to amazing! I bake my tilapia the same way, but have never added a topping. I did take Westie Mom's advice and made my own alfredo sauce as I don't care for the jarred stuff. I followed her recipe for the sauce which is: 1/4 C butter, fresh minced garlic, 3/4 C parmesan cheese, 1/2 cup half and half and a bit of Italian seasoning. It was perfect! I actually used 2 T fat free half and half and 2 T heavy cream because this is what I had. Do yourself a favor and make this sauce! You only need a couple tablespoons for each piece of fish so it is worth the splurge! Thanks for a great recipe!

Italian Sausage Soup

I used 3 hot and 2 mild Italian Sausage links with casings removed. Browned them in dutch oven sprayed with Pam and then cut them with spatula into chunks. Added about 1 cup chopped onion and 3 cloves minced garlic. Cooked this for a couple minutes and then added 2 cans Italian stewed tomatoes, the carrots and 4 cups chicken broth. I added about 3 teaspoons beef base (I didn't have any beef broth) and 3 diced red potatoes. Cooked this for about 20 minutes then added the zucchini and beans. Cooked another 20 minutes or so and then added thawed frozen spinach and about 1/2 cup orzo. Cooked another 20 minutes. Turned heat off and let it sit for about an hour before eating. TO DIE FOR GOOD!!!!!!!!! Sorry about the changes, but I just couldn't resist adding onion! The other small changes made for a delicious soup. I'm sure it is good without these changes, but I will make it my way from now on as it was so good. Thanks for the recipe!

Winter Blossom's Often Requested Ham Salad

Excellent! I had a left over smoked ham with bone which I sliced as much meat as I could off. It was only about 1/3 lb so I adjusted the other ingredients accordingly. Used Penzey's toasted, dried onion which made this fabulous! If you have never used Penzey's spices you should try them! Anyway, I didn't have brown mustard so I used Dijon and I used Spenda sweetened relish as that is all I had. Honestly, I don't think I would change anything when I make this again. I have no doubt it is good exactly as written, but I it sure is good with my necessary substitutions. Thanks for the recipe!

Low-Fat Blueberry Bran Muffins

I LOVE these!!! The only thing I might do different next time is use a little more sweetener. I used Whey-Low Brown sugar substitute in place of regular brown sugar. Also added about an extra 1/3 cup blueberries (I used frozen blueberries that I tossed in the flour mixture before adding it to the sugar mixture). These rose up beautifully and looked as good as they tasted!

Lentil Soup

I'm rating this so that I know what NOT to do next time. I took the advice of BLANKEN and added 28 oz more tomatoes and doubled the spices. It was waaaaay to tomatoey for me. The spices were okay, but next time I make this I will follow the recipe exactly and update my rating. Thanks Marie for the recipe!

Slow Cooker Chicken Taco Soup

I have now made this twice. The first time was some time back and I remember it tasting very beery. I decided to try it again and this time it was great! Not beery at all. I used Bud Light (not sure what I used the 1st time so that could be the difference) and "mild" Rotel tomatoes with green chilies. Wow, it is spicy, but not too much for us! I used Ancho chili powder which is a mild to medium spicy chili. Honestly, I don't think I would change a thing. We used greek yogurt in place of the sour cream and that cut the spiciness just enough for us. The only other thing I would suggest is to serve with diced avocados on top! That would really smooth this out. Thanks for a great recipe! One other thing...I did use Bill Echols taco seasoning mix.

Chantal's New York Cheesecake

Very good recipe. I used 2 regular and 2 low fat packages cream cheese and Whey Low as a substitute for the sugar. I also just followed the recipe on the Graham Cracker Crumbs box for the crust again using Whey Low instead of sugar. I cooked down some frozen strawberries with a little sugar and vanilla for the topping which really set this off. I took the advice of others and hand beat the cheesecake filling, but I think next time I will use my Kitchen Aid mixer set to 'stir' as the hand beating didn't seem to get this smooth enough. I will definitely make this again!

Chicken Breasts with Balsamic Vinegar and Garlic

Very good! I followed the recipe exactly and we really enjoyed it. I will now invest in some better quality balsamic (I'm just about out anyway!) and it may be even better next time if that's possible. Served with quinoa and sugar snap peas!

Slow Cooker Carnitas

This was to die with!!! I "chunked" my pork before putting it into the crockpot. Then, I did as someone suggested and put this on cookie sheets and put it in the oven to crisp up the edges before serving. It was great served with all the regular taco type trimmings. We ate it in flour tortillas with pico di gallo, sour cream and cheese. I actually made this some time ago and am just now rating it and now I am hungry for this again!

The Best Slow Cooker Cream Corn

I made this last Thanksgiving (2009) and this year my SIL asked if I was making that "delicious corn casserole" again! So, it looks like this will be on our Thanksgiving menu from now on. :) It is perfect as written! Thanks for a great recipe...
