Caribbean Jerk Pork Chops

This is really quite good. I've made it several times now and I like to replace 1/4 cup of the water with spiced rum, use lime juice instead of lemon, add some lime zest and add extra cayenne, jalepenos and a little garlic.

Donut Muffins

Very good. My children ate them up in less time than it took to make them, and since they are so easy to make that's saying something! A fantastic recipe to bake with children. For my tastes I'd omit dipping them in melted butter and just roll the warm muffins in the cinnamon sugar without it. I'm anxious to try different spice combinations with these, like replacing most of the nutmeg with cardamom and adding cloves to the cinnamon sugar.

Greek Garlic-Lemon Potatoes

Very tasty with these modifcations, triple the garlic, double the oregano and black pepper, use chicken stock in place of water and omit salt (as the chicken stock removes the need for it).

Golden Crescent Rolls

Fantastic dough! I did modify it to use rapid rise yeast everytime I've made it. I really like it with a little oatmeal to replace some of the flour and half of the sugar replaced with honey. Can we say honey oat crescent rolls!!!

Chicken Makhani (Indian Butter Chicken)

I tripled the garlic, doubled the onion and ginger (used fresh) and tripled the garam masala. I did not need to thicken this at the end, in fact I added a few extra shots of half and half. I think because I simmered the sauce for longer than the 10 minutes called for because I was busy rolling and cooking naan. With the modifications I made it was worth 5 stars. I will make this again.

Orange Mini Muffins

These have a wonderful texture to them but are a little bland. They would benefit enormously from some extra orange zest and dried cranberries or chocolate chips. I expected them to rise a lot higher from the amount of bakin powder in them and was a little disappointed. The only change I made was to sub plain yogurt for the sour cream.

Honey Mustard Dipping Sauce

After reading previous reviews I decided to reduce the water to 1/3 cup and use warm water to help dissolve the honey more quickly, and I added an extra 1/2 tsp of cornstarch. With the modifications I made I only had to simmer this for about 2 minutes before adding the mustard. I preffered a streamlined version of this. By omitting the lemon, and green onion and swapping the onion powder for garlic powder it tasted like a bottled dipping sauce.

Cocoa Banana Bars

This recipe should be called a cake rather than a bar. It is very tasty. I ended up adding a tiny splash of milk to the batter at the end and it turned out excellent. My husband ate half of it in one sitting.

Peanut Butter and Jelly Oatmeal Pancakes

These are excellent. I subbed honey in for the sugar and added a little extra peanut butter. I topped them with a dollop of fat free vanilla yogurt. All four of my children love these and one of them isn't usually a pancake eater. These are a little chewy but I feel that the texture added to the flavour instead of detracting from it. My husband calls them stick-to-your-ribs pancakes.

Fudgy Peanut Butter Brownies

These are very rich tasting but very sweet. I think cutting back on the sugar is a must. Also I found it too thick to spread and ended up adding a few dollops of plain yogurt to thin it out some. Great when you are wanting something that tastes over the top though.

Dill Pickle Meatloaf

I love how moist this recipe was, I added some minced garlic, subbed oatbran in place of the bread and added a little hot mustard to the sauce. I baked it in a muffin tin, it made 6 large "meat muffins".

Rich Yogurt Waffles

As written this recipe is too greasy, I got a much nicer result when I subbed a little less than 1/4 cup of canola oil for the shortening. The waffles turned out very soft and fluffy.

This was delicious served with chickpea curry, my only complaint is that it became runny very quickly, I think next time I will give the chopped kiwis a little squeeze with a clean towel to reduce the amount of juice they release into the yogurt.

This stuff is fantastic, I like to add garlic and for mixed spice use savory, caraway and sage. I usually replace the hazelnuts and peanuts with walnuts.
