West Tennessee Corn Bread

I subbed plain fat-free yogurt for the mayonnaise and used a reduced amount of honey in place of the sugar. Then I added some whole corn kernels to the batter. This was by far the best corn bread I've ever eaten. I will use this recipe from now on.

Caramel Frosting I

This was so good, I used it to top brown sugar brownie, I was a little heavy on the butter and I subbed 2 tbsp sour cream and 1 tbsp french vanilla coffee creamer for the milk (I was out) and it became a beautiful spreading consistancy that did not harden as many have had trouble with.

Citrus Pepper Quinoa

What a great pilaff! I did make a few small alterations, I subbed chicken stock for the vegetable stock (didn't have any), and doubled the garlic and lemon pepper as I like strong flavours. My husband didn't like the orange zest but what does he know? Thanks for this recipe CC.

Mango-Mint Lassi with Indian Sweet Spices

I adored this, I like my drinks to be on the tart side so I omitted the sugar completely and I also used frozen mango. I will make this frequently, I may even freeze some garden mint to make this over the winter.

Minty Beet Carrot Salad

I boiled my beets then shocked them in cold water and peeled them, I didn't have tarragon vinager so I used white vinager and added some chopped fresh tarragon. This is delicious and I will make it frequently.

I found this to be a little on the mild side, I was hoping for more flavour from the amount of spices, the meat, however, was tender and delicious, I will make this again with some tweaking of the spices.
