Lemon Fruit Dip

I made this entirely with low fat yogurt and used lime zest and juice in place of the the lemon, I also omitted the milk because yogurt is thinner than sour cream. So good that I ended up eating the last little bit of it with a spoon.

Barley, Shrimp, and Corn Salad

I made only a few small changes, I used half the amount of corn called for and half the amount of green onions and upped the lemon juice in the dressing slightly due to personal tastes. My husband and I loved it.

delicious! Next time I may increase the lemon juice a little as I'm a tried and true lemon lover and couldn't get enough of that hint of lemon in these pancakes.

Cookie Jar Nut Cookies

I really like these. I used margerine and omitted the salt entireley, the cookies turned out very subtle, the nutmeg and walnuts cut the sweetness perfectley. An excellent accompaniment to a hot cup of tea.

Spicy Cuban Mojo Chicken with Mango-Avocado Salsa

This stuff is amazing. I made two changes, I grilled it after frying instead of baking and instead of butter in the reduction I added a splash of coconut milk.

This stuff is fantastic, I like to add garlic and for mixed spice use savory, caraway and sage. I usually replace the hazelnuts and peanuts with walnuts.

This was delicious served with chickpea curry, my only complaint is that it became runny very quickly, I think next time I will give the chopped kiwis a little squeeze with a clean towel to reduce the amount of juice they release into the yogurt.

Rich Yogurt Waffles

As written this recipe is too greasy, I got a much nicer result when I subbed a little less than 1/4 cup of canola oil for the shortening. The waffles turned out very soft and fluffy.

Dill Pickle Meatloaf

I love how moist this recipe was, I added some minced garlic, subbed oatbran in place of the bread and added a little hot mustard to the sauce. I baked it in a muffin tin, it made 6 large "meat muffins".

Fudgy Peanut Butter Brownies

These are very rich tasting but very sweet. I think cutting back on the sugar is a must. Also I found it too thick to spread and ended up adding a few dollops of plain yogurt to thin it out some. Great when you are wanting something that tastes over the top though.

Peanut Butter and Jelly Oatmeal Pancakes

These are excellent. I subbed honey in for the sugar and added a little extra peanut butter. I topped them with a dollop of fat free vanilla yogurt. All four of my children love these and one of them isn't usually a pancake eater. These are a little chewy but I feel that the texture added to the flavour instead of detracting from it. My husband calls them stick-to-your-ribs pancakes.

Cocoa Banana Bars

This recipe should be called a cake rather than a bar. It is very tasty. I ended up adding a tiny splash of milk to the batter at the end and it turned out excellent. My husband ate half of it in one sitting.
