Lentil Soup

A lovely herby lentil soup, I really like the tomatoes in this one. Next time I will use more garlic, add some celery and up the seasoning some.

Glazed Lemon Bread

I made this without nuts and added a few squeezes of fresh lemon juice to the batter. I had no problems with dryness as other reviewers have noted and I loved this bread.

I was surprised with how good this was. The pollock fillets that I used were about 3 ounces a piece so I used 4 of them and reduced the cooking time some. In order to ensure that the peppers and onions would be soft I microwaved them for a few minutes before placing them on the pollock, this was a nice spin on pollock, thank you for the recipe.

Hasenfeffer (Sour Rabbit Stew)

I used red wine in place of the vinager and just added about a tbsp of the red wine vinager. overall very tasty. 1 star as written, 4 stars changed average of 2.5.

Pumpkin Brioche

This dough was very wet but did end up fine. I really disliked the texture of these warm but once they were cool they were delicious, I doubled the cinnamon and used a touch more sugar as I was wanting a sweet bread.

West Tennessee Corn Bread

I subbed plain fat-free yogurt for the mayonnaise and used a reduced amount of honey in place of the sugar. Then I added some whole corn kernels to the batter. This was by far the best corn bread I've ever eaten. I will use this recipe from now on.

Chocolate Chip Peppermint Cookies

These are very tasty little morsels, I feel that there wasn't quite enough mint flavour but very good all the same, the secret to keeping them soft and delicious is to slightly underbake them.

Maple Carrot Cupcakes

I wish I could give this recipe 4-1/2 stars, the cupcake itself rates a 5, beautiful texture, moist and delicious the best carrot cake I've ever made, the frosting, however is very odd. I made it asd the recipe stated and it was a runny mess that wasnot sweet enough, I added about 3 cups of icing sugar and with the maple syrup it was a little on the sweet side so I added in nutmeg, allspice, cloves and cinnamon to tone down the sweetness. These were a big hit at my mom's Thanksgiving Dinner.

Caramel Frosting I

This was so good, I used it to top brown sugar brownie, I was a little heavy on the butter and I subbed 2 tbsp sour cream and 1 tbsp french vanilla coffee creamer for the milk (I was out) and it became a beautiful spreading consistancy that did not harden as many have had trouble with.

Citrus Pepper Quinoa

What a great pilaff! I did make a few small alterations, I subbed chicken stock for the vegetable stock (didn't have any), and doubled the garlic and lemon pepper as I like strong flavours. My husband didn't like the orange zest but what does he know? Thanks for this recipe CC.

Mango-Mint Lassi with Indian Sweet Spices

I adored this, I like my drinks to be on the tart side so I omitted the sugar completely and I also used frozen mango. I will make this frequently, I may even freeze some garden mint to make this over the winter.

Minty Beet Carrot Salad

I boiled my beets then shocked them in cold water and peeled them, I didn't have tarragon vinager so I used white vinager and added some chopped fresh tarragon. This is delicious and I will make it frequently.

I found this to be a little on the mild side, I was hoping for more flavour from the amount of spices, the meat, however, was tender and delicious, I will make this again with some tweaking of the spices.

Coconut Rice

I adjusted the liquids ratio and cooking time to use brown rice, subbed chicken stock for water, added some garlic and sauteed my onion, garlic and ginger in a bit of oil before adding the liquids and rice. I also toasted some coconut and chopped cashews that I mixed into the rice right before serving. I topped each serving with chopped cilantro. With my modifications this recipe gets five stars, I'll make it often, my husband ate three helpings of it and all three of my 2 year olds enjoyed it.

Nutty Coconut Fish

I used cornflakes in place of the bread crumbs and as I used sweetened flaked coconut I omitted the sugar, I also dredged my fish in flour before I dipped it in the mayonaisse mixture. Everyone loved it.

What a great soup! I used more tomato paste than the recipe called for and added the zest from my lime in with the juice. I subbed fat free plain yogurt for the sour cream. Wonderful!

These are wonderful, I did make a few minor alterations to the recipe, I subbed 1/2 cup of the oil with plain fat free yogurt and reduced the white sugar by 1/2 cup and tossed in a few chocolate chunks.
