Easy Rice Cooker Mac 'n Cheese

I cooked this stovetop (I don't have a rice cooker), and otherwise followed ingredients as written and this was super yummy! My husband (who is pretty picky about his mac n cheese) gave this a thumbs up too. :)

Stuffed Zucchini

Super yummy! I loved this dish! Reheats really well too - wrap in foil and bake in oven 20-30 minutes until heated through. Next time I'd pre-cook the sausage before combining into the filling - the texture was a little "soft" to me being baked only and I kept wondering if it was actually fully cooked; other than that this is an awesome dish!

Petra's Strawberry Shortcake

This was a wonderful shortcake recipe! I scaled to two and made mine in a large ramekin - perfect (and gorgeous) for two! The shortcake is soft, fluffy, lightly sweet and a little sticky - like a really good angel foodcake, but a little denser, I "cheated" and used whipped topping I already have but the real stuff would have been a wonderful compliment to top this one off with. So, so good!

French Bread

This is the 2nd french bread loaf I've tried from AR and we really enjoyed it as well! I did think it was fairly bland and might add a touch more salt next time, but the texture and everything else was great!

Basic British Scones

We loved this one! I followed ingredients/instructions but did use Stevia (3 TBS) instead of sugar and butter instead of margarine. Light and tender with a very nice flavor!

Oven-Fried Pork Chops

These were wonderful! Super easy to prepare as well. I added the step of dipping them in seasoned flour before the egg wash and then breading (and used 1/2 cup seasoned bread crumbs instead of stuffing mix). I had to cook mine an extra 10 minutes since they were still a little pink in the middle, but they did stay juicy and had a nice crunch on them!

These potatoes are freaking awesome. So easy to prepare, and the crunchiness with the flavor is wonderful! Great alternative to mashed or traditional baked! Everyone loved them! I used a little dried and crushed rosemary instead of fresh.

Sour Cream Pork Chops

I followed the ingredients, but did these on the stove top, simmered on low for a little over an hour, then added the sour cream with flour and thickened and cooked another 10 minutes or so until the gravy was the right thickness. I threw in a can of mushrooms as well. The chops cooked to a perfect tenderness and at the end I added a little more seasoning to the gravy to our taste and it was really delicious and enjoyed by all! :)

Sauteed Apples

Fabulous and simple sauteed apple recipe. I found my sauce to be a little thicker consistency than I would have preferred, so might cut down on cornstarch next time or add a little more liquid. I had a bunch of golden delicious apples I wanted to use up, and they worked just fine in this - though obviously were a lot softer and fell apart more than a granny smith would have! We served this over Mom's Buttermilk Pancakes and it was wonderful together!

Traditional Mashed Potatoes

Finally, finally, finally a simple and easy way to make great home made mashed potatoes - I have been making them for years, but wrong - and have hated how they always came out gluey. The heated milk seems to be the trick, and I got a hand masher which also seems to help give them the right consistency. I did a couple things a little differently - added chicken bouillon to my water that I boiled the potatoes in for more flavor and I used half and half instead of regular milk since I had some I wanted to use up. These are perfect potatoes, and I could have eaten half the bowl myself. :)

Truck-Stop Buttermilk Pancakes

Italian Spaghetti Sauce with Meatballs

I followed the ingredients exactly as written, but I did cut off about 20 minutes from the sauce simmering because we were hungry and it was getting late!! :) I really enjoyed this dish - this was a nice mild sauce with a nice mild meatball, it was simplistic in terms of flavor, not too much and not too little. I really enjoyed it and would definitely use this again! It was great with some thin wheat spaghetti noodles and Stef's Super Cheesy Garlic Bread from this site... mmm!! :)

Cornbread Made with Coconut Oil

A little on the crumbly side but absolutely delicious cornbread!! Great texture and taste. I halved the recipe and baked in an 8x8 pan, it rose and browned beautifully and was delicious with some turkey chili.

Donut Muffins

These are awesome. I used 1/2 tsp nutmeg in the batter, and only used about 2 TBS margarine, 1/4 cup sugar, and 1/2 tsp cinnamon for the topping (I just rolled the tops in the margarine, then cinnamon sugar). My boys devoured these in no time flat! Will definitely make these again for a breakfast treat or weekend snack.

Fabulous Fajitas

Mmm! This is a combo I would never have thought up. We used chicken, 1 green, 1 red bell pepper and 1/2 an onion and that was the right amount of veggie to meat ratio for us. Topped with sour cream, lettuce and tomato. Delicious!

HERDEZ® Tomatillo Verde Huevos Rancheros

This recipe is really fantastic. I didn't use nearly the full amount of sour cream mixture - I would probably only make half the recipe for that next time. I am not a fan of raw onion, so I sauteed the onion and tomato together for about 10 minutes while I prepped everything else, then added in the tomatilla sauce to it a couple minutes before it was done cooking, spread that around the outside of the tortilla and then sprinkled some diced avocado over top. I think just to make it simpler, I might use a Tablespoon or two of salsa sprinkled around the outside edge along with the avocado (in place of the onion / tomato) next time. This was SUPER filling and really, really delicious. I ate it for lunch and really enjoyed it!! (I was out of refried beans, so I smooshed up some cooked pinto beans in place of it).
