Aimee's Quick Chicken

Reviewed: Aug. 13, 2002
I LOVE this recipe! It is so simple, great for dinner in a pinch. I used Kikkoman Terriyaki sauce and did not think it was overly salty. I prefer to wrap the chicken with the bacon- I think it comes out better that way! GREAT recipe, very tasty, have used several times... and will continue to! :) Thanks!

Slow Cooker Chicken and Dumplings

Reviewed: Sep. 30, 2009
Oh my gosh!! After reading some of the reviews and all the changes/additions, etc. I wondered what this would actually taste like all by itself. I found out. It's GOOD stuff. Pure and simple comfort food! I made this just as written, but I halved it and I put it on low heat for 11 hours while I was at work (I prepared it the night before and put it in the fridge, when I got up I plugged in the crockpot just before I left the house and set it on low). When I got home, I rolled out the biscuits so they were nice and thin and used a pizza cutter to cut each one into 5-6 strips and threw them into the pot; I stirred it well to make sure they all were covered in liquid and would cook completely. I turned the heat up to high and set a timer for 60 minutes. I checked at 45 and they were cooked through and beautifully soft and doughy on the outside still. I went ahead and added a drained can of mixed peas & carrots after turning the heat off, and mixed it a couple times to break up the chicken chunks and warm the veggies then served. YUMMY. This is awesome just as its written, it is a lot of dumplings for the amount of chicken/liquid - but I liked it that way. :) Thanks for a GREAT and easy work night recipe!!

Mom's Buttermilk Pancakes

Reviewed: Sep. 26, 2009
Yay! Homemade, easy to make pancakes and as someone else mentioned they do taste like Cracker Barrel pancakes! No more Bisquick mix for me. :) The batter was very thick for me, so I added a little more buttermilk to make it a little easier to spread, but I think its because my flour was packed down pretty hard, so there was probably more than 1 cup in there. My son loves them - he devoured three and had one without syrup just because he liked the taste so much. He's already scheming about having the 1 leftover pancake for dessert!

Chicken Salad

Reviewed: Jul. 29, 2010
I follow this recipe pretty closely, but I omit the onion since we don't like it and I add 2-3 TBS relish to it for a little sweet. I use low-fat mayo. Delicious!

Stir-Fried Sweet and Sour Chicken

Reviewed: Jan. 5, 2011
I skipped battering and frying the chicken, we cubed it, cooked it in about 1/2 TBS olive oil and added diced veggies (onion, carrots, green pepper and a little celery) and let that saute about 10 minutes while I prepped the sauce. I combined the sauce with the veggie/chicken mixture and stirred in some fresh diced pineapple at the very end. A very tasty meal! My husband and son liked this sauce better than the one I've been using. :)

Caramel Nougat Bar Peanut Butter Cookies

Reviewed: Oct. 7, 2009
These are so good! My son said "best cookies EVER"!! The dough itself is really nice, and complements the candy bar pieces very well. I refrigerated the dough between batches since it was fairly soft and greasy with all the pb and butter, and it helped when shaping it around the mini size bars (very important to use mini NOT fun size). I used a bag of mixed snickers (regular, dark chocolate and almond) which was fun so they'd all be a little different. Also make sure to bake only 13 minutes the first batch and check, 13 minutes was PERFECT for my oven, lightly browned and they firmed up while they cooled on the cookie sheet - I did my first batch at 15 minutes and they were crunchy when they cooled and browner than I wanted. The interesting thing I noted between the 2 batches is that 15 minutes the candy bars melt completely into the cookie, at 13 minutes some of the candy bars still held their shape so the cookies were more lumpy and have more solid candy bar pieces in them when cooled. Neither way is necessarily better, I just thought that was interesting to note. These are super yummy and fun to make and eat, will definitely use again!!

Barbecued Chicken Pizza

Reviewed: Oct. 3, 2009
This is a great and simple BBQ Chicken pizza, I don't think it would be nearly as tasty without a home made pizza crust (I used Jay's Signature Pizza Crust). I diced my red and green bell pepper instead of julienne slicing (my son isn't a fan, and if they're in smaller pieces he doesn't seem to notice them much). We used Kraft Honey BBQ sauce and followed the directions and ingredents. It was very tasty and easy! I boiled and shredded my chicken and diced the veggies and sauteed them while my pizza dough was rising and it worked out well.

Italian Style Flounder

Reviewed: Sep. 21, 2008
This was great!! I made two adjustments based off of what I had on hand, I used 2 cloves fresh garlic diced, and a added a can of diced tomatoes instead of fresh tomato. I really liked this! My husband and son thought it was ok, but I really enjoyed the flavor the seasonings gave to the tomatoes and the fish. I will definitely make this again! We served it with steamed green beans and linguine.

Mini Meatball Subs

Reviewed: Aug. 31, 2010
These are wonderful sandwiches! We designated them "Meatball Sliders". :) I followed the recipe as written and served them on A.R.'s French Bread Rolls to Die For. I flattened the meatballs a little, so they were almost like little patties so they'd fit nicely on the rolls without moving around too much. I used Hunt's Garlic & Herb spaghetti sauce. Yum! Will definitely use again!

Banana Bread French Toast

Reviewed: Jan. 10, 2011
We had seen this at IHOP and thought we'd try it at home since we had a loaf of banana bread to use. I used regular milk and diluted the eggs more than the recipe called for based on personal preference (my husband isn't a big fan of eggs!!) :) I added a little cinnamon to the batter as well. It only needed a little confectioners sugar, and was very good! Rich, and very tasty. I added a little fresh banana slices to top them off.

Beef Loaf Deluxe

Reviewed: Oct. 9, 2009
This was a very nice meal!! Not so pretty in the presentation department, but really really tasty! My son really enjoyed the meatloaf. It was my first time cooking zucchini and he was NOT a fan of that but personally I loved it. The salt & pepper and tomato sauce were just a nice light touch of flavor to complement the yummy potatoes and veggie mix. I would cut the onion and peppers in larger chunks next time, they sort of got lost since I diced them in smallish pieces. The roasted potatoes were my favorite part - perfectly cooked and many had a nice crust on them. I pre-diced my onions, pepper and tomato the night before and it was super easy to throw that in the roasting pan in the oven and while that was cooking for its first 20 minutes I was able to dice the zucchini and prep the meatloaf so it was quick and easy for dinner prep on a work night.

Stef's Super Cheesy Garlic Bread

Reviewed: Oct. 6, 2009
This was FANTASTIC!! I made it with French Baguettes from this site; perfect together! I was a little worried when I was mixing it all together - thought it would be way too rich and too much topping too, but the flavor was really terrific, a very good mix and the broiling was the perfect touch, and it spread on thick but thins out when it bakes, yummy! :)

Creamy Onion Garlic Bread

Reviewed: Jun. 20, 2011
This was good, but I found it to be a little heavy on the cream cheese and a little light on the garlic flavor - I'd use about half the cream cheese and add in minced garlic for our personal tastes and preference next time. :)

Mama Moe's Scalloped Potatoes

Reviewed: Jun. 21, 2011
I halved this recipe and still had a half full 9x13 dish (with about 4-5 servings worth). I only used 1 can of cream of mushroom soup since I halved it, otherwise followed instructions and ingredients. We all really enjoyed these!! I think next time I would add a little salt and some pepper to the layers of potatoes for a little more flavor, but the cheese and soup amount was great and I really liked the creaminess from them!

Irish Brown Soda Bread

Reviewed: Sep. 15, 2009
YUMMY!! I am totally lovin' this recipe. I had tried a couple other soda bread recipes from this site and was really disappointed because they weren't anywhere CLOSE to what I was looking for. This one was!! It's not identical to my brother's recipe, but it is SUPER close, moist and dense with a wonderful hearty flavor. Would be fantastic with a hunk of cheese or a nice stew, and is great with some real butter. My son loved this bread too. I halved the recipe and made one large loaf, rounded and baked in a pie plate. I baked for 30 minutes at the recommended temperature then turned the heat off and let it sit in the oven another 10 minutes (it was already nicely browned, but I wanted to make sure the middle cooked through too). Seems to have worked perfectly! The bread is just fantastic, and easy to throw together. Thank you! :)

Spanish Pork with White Wine

Reviewed: Apr. 26, 2004
I would give this a 5+ if I could - this was delicious and so very tender (and EASY!!), and went over VERY well for dinner! I used pork tenderloin, and tripled the recipe (but really should have only doubled it.) I would have used garlic salt instead of regular salt next time for a little more of a garlic flavor. I used minced garlic to rub into the pork. The flavor was absolutely wonderful! I served this with garlic mashed potatoes, rolls, salad and 2 kinds of vegetables. I also thickened the sauce to use as gravy for serving. Thank you for the recipe!

BBQ Country Style Ribs

Reviewed: Jul. 18, 2011
As with any recipe calling for bottled BBQ make sure to use really good stuff, makes a huge difference! :) I love my sweet baby ray's. :) This was a great recipe that was very well received tonight. I didn't have lemons so I sprinkled on some lemon juice along with the minced garlic in place and they came out great! :)

Petra's Strawberry Shortcake

Reviewed: Jul. 11, 2011
This was a wonderful shortcake recipe! I scaled to two and made mine in a large ramekin - perfect (and gorgeous) for two! The shortcake is soft, fluffy, lightly sweet and a little sticky - like a really good angel foodcake, but a little denser, I "cheated" and used whipped topping I already have but the real stuff would have been a wonderful compliment to top this one off with. So, so good!

Old Fashioned Strawberry Shortcake

Reviewed: Apr. 14, 2013
I followed the recipe exactly as written (though I did have to bake an extra 10-15 minutes as well before it was set in the middle) and this was a FANTASTIC shortcake recipe! We had guests over, and all 5 of us LOVED this recipe. Delicious (especially with some fresh made whipped cream - YUMM!)
