Easy Focaccia

This was ah-ma-zing. I've never tried it before but decided to do panini's last night and thought this bread would be perfect. It was! Super easy to make, about 2 hours from start to finish and beautifully soft and chewy and worked great for the pressed sandwiches. The rosemary gave a nice hint of flavor and worked perfectly for our purposes. I will definitely make this again! :)

Salmon Orzo Salad - Jenn's Menu and Lifestyle Blog

I made this with brown rice pasta and a Great Value can of salmon - bad idea. Makes a big difference I think to use better quality canned salmon! Ours had chunks of bone in it. Blech! But aside from that issue - I really enjoyed the recipe! Quick and easy and tasty! I have a little tupperware of leftovers for lunch today and am curious to see if it will taste any different after being allowed to refrigerate for 24 hours! :)

Swope Bread

I had about 1 cup whole wheat flour and used AP flour for the rest and used Stevia instead of sugar. This was EASY, quick, baked beautifully in 45 minutes and was wonderful! Nice and dense (great with the stew I cooked it to go with) but there was a lightness to it as well I loved the crust!

Blueberry Streusel Muffins

We all really enjoyed these! I made the following changes: Stevia instead of sugar (and increased to 1/2 cup) in the mix, added 1 TBS lemon juice and a splash extra milk because my batter was very thick and also used 2 cups blueberries. Used brown sugar instead of white for the topping. With those changes I really think these could be called blueberry coffee cake muffins - they were tender and moist and full of yummy blueberries and the streusel on top gave a great crunch and sweetness!

Simply Parmesan Chicken

This was a great dish! I did add 2 tsp of garlic powder to the breading mix but otherwise followed instructions and was very happy with the result! I think it could have used a little more seasoning, but the texture was nice and it was very easy to put together and baked up very nicely!

We loved these!! I cooked the meat and onion together and omitted the oil and only used about 3-4 TBS of Dijon and the flavor was fantastic! :)

Banana Scones with Vanilla Cream Glaze | Heather's Dish

Hubby and kiddo enjoyed these, though the banana definitely gave the scone good moisture, the tenderness wasn't as much as in my favorite scone recipe. So I did think these were good (and admit I didn't try the glaze which probably "makes" these) but am not sure that I'd try them again. It was nice for a change though, and they were definitely good just not great IMO.

Three Hundred Chocolate Chip Cookies

This was a FANTASTIC chocolate chip cookie! I (however) sized it to 12 and made 27 nice sized round balls out of that which came out to 27 super soft and delicious chocolate chip cookies! To use the chocolate chips I had in my freezer, I used a mix of milk chocolate, semi-sweet and white and it was an awesome combo! I also replaced the white sugar with Splenda/Stevia. PERFECT cookie!!

These were pretty good, not my favorite but I used half whole wheat flour and do think that affected how they came out (though I usually use at least half/half in all my recipes).

Cheesy Pepperoni Pizza Quick Bread | Picky Palate

We made ours with sausage and mushroom, but I would love to try this with pepperoni as well - very tasty and fun for something different - we liked ours dipped in marinara with a caesar salad on the side!

Orange Mango Cashew Chicken - Eat Clean

This was a great recipe, good fresh ingredients and good combination of flavors. Used spaghetti noodles instead of rice, powdered ginger instead of fresh, orange zest from a spice jar instead of fresh and otherwise followed ingredients/instructions. Will definitely try this one again!

Banana Bread French Toast

We had seen this at IHOP and thought we'd try it at home since we had a loaf of banana bread to use. I used regular milk and diluted the eggs more than the recipe called for based on personal preference (my husband isn't a big fan of eggs!!) :) I added a little cinnamon to the batter as well. It only needed a little confectioners sugar, and was very good! Rich, and very tasty. I added a little fresh banana slices to top them off.

My hubby, son and I all loved this! Light but very tasty! I didn't have white wine so I subbed sherry, and I used more onion (yellow instead of red). Delicious! Would definitely make again! :)

Sour Cream Pork Chops

I followed the ingredients, but did these on the stove top, simmered on low for a little over an hour, then added the sour cream with flour and thickened and cooked another 10 minutes or so until the gravy was the right thickness. I threw in a can of mushrooms as well. The chops cooked to a perfect tenderness and at the end I added a little more seasoning to the gravy to our taste and it was really delicious and enjoyed by all! :)

Stir-Fried Sweet and Sour Chicken

I skipped battering and frying the chicken, we cubed it, cooked it in about 1/2 TBS olive oil and added diced veggies (onion, carrots, green pepper and a little celery) and let that saute about 10 minutes while I prepped the sauce. I combined the sauce with the veggie/chicken mixture and stirred in some fresh diced pineapple at the very end. A very tasty meal! My husband and son liked this sauce better than the one I've been using. :)

Soft Oatmeal Cookies

Oh my yummy!! I followed ingredients as written (but I did replace the white sugar with splenda). I did not chill the dough, I went ahead and rolled them into 33 little balls (did NOT flatten them or grease the cookie sheets) and baked at 375 for about 11 minutes per batch, cooled a couple minutes on the cookie sheet and moved to the cooling rack. This resulted in DELICIOUS and soft little cookies which is the way we like them. The flavor is really great!

Sweet Banana Bread

I thought this was ok, my son REALLY liked it, my husband thought it was "ok" too. It was a chewy bread, had good flavor, just wasn't very "banana" flavored... I followed ingredients/instructions, so not sure why - but I don't think I'd try this one again since I was looking for a much stronger banana flavored bread.
