Johnsonville® Italian Sausage and Pepper Skillet

Reviewed: Oct. 12, 2013
We've been enjoying a similar variation of this recipe for years - we like to serve this tossed with fettuccine or linguine and topped with a little grated Parmesan. Absolutely delicious and love how full of fresh veggies this is. Thanks for the great recipe Johnsonville! (Johnsonville Mild Italian Sausage is our favorite - it works really, really well in this recipe).

Classic Smoked Sausage Mac and Cheese

Reviewed: Sep. 15, 2013
The Butterball sausage in this dish is FANTASTIC. I think it needs about half the called for Velveeta (we found the flavor a little too strong), but otherwise this is really a great recipe - pure comfort food. I skipped the extra butter on top, it doesn't need it, and didn't use the full amount of called for Panko bread crumbs. The bread crumbs really do add a nice level of texture to the cheesy noodles. It would be great with a package of frozen broccoli mixed in as well. I found the full recipe made more than my 9x13 pan could hold, and had to use 2 baking pans to hold it all!

Sizzling Bison Steak Stir-Fry

Reviewed: Sep. 14, 2013
I made a few minor changes to use what I had on hand (1/2 tsp powdered ginger in place of fresh, 1 can drained mushrooms in place of fresh, 1 cup frozen broccoli in place of fresh). I omitted the bamboo shoots. I used stir fry sauce instead of teriyaki sauce. This recipe was awesome!! The amount of sauce was perfect for the veggies / meat, and the bison was absolutely delicious in this recipe. Tender, great texture, and wonderful flavor. I am looking forward to making this again soon!! I did add a little salt and pepper to the meat while it was cooking as well - not sure if it really affected the flavor or not.

Three Berry Pie

Reviewed: Sep. 14, 2013
I did use a different pie crust recipe (Pie Crust IV), and upped the cornstarch to 1/4 cup as suggested by others. This came out so good! I used 24-oz of frozen mixed berries and it was so delicious. I've never used frozen fruit before and loved how easy this pie was to throw together. It got great reviews from the guys who enjoyed it after dinner tonight and went beautifully, still warm from the oven, with some vanilla ice cream. Definitely will use this one again!!

Turkey Bacon Breakfast Burrito

Reviewed: Sep. 10, 2013
This was delicious!! I whisked my eggs with a little water and cooked them scrambled style, adding the cheese along with the bacon directly to the eggs. I used vegetarian chili instead of "seasoned beans" and I thought this was a wonderful breakfast, especially with the sour cream and salsa. Yumm!! Very hearty and filling.

Banana Muffins II

Reviewed: Sep. 9, 2013
YUMM!! Made this exactly as written and we loved how these came out - great texture, flavor, and moistness. You could probably easily replace the butter with applesauce, and reduce the sugar a little (if using very overripe bananas like I did) - but really these don't need to be changed at all. We all really enjoyed these, and the leftovers were great the next day for a quick breakfast snack.

Cranberry Thanksgiving Turkey Sandwich

Reviewed: Sep. 3, 2013
This is SO GOOD. I actually had posted a very similar sandwich recipe to my blog this past January because these flavors just go beautifully together! I use only about 2 tsp of mayo on mine, and sometimes like to add provolone or swiss cheese and maybe some sliced dill pickles to change it up. This time I made it just as stated (just with a little less mayo, and used romaine leaves instead of shredded lettuce) and it is a FANTASTIC sandwich - perfect to pack and enjoy at work. Yumm! :)

Beef and Pasta Skillet Primavera

Reviewed: Aug. 20, 2013
This is a great base recipe, but we all agreed it was WAY too much meat to pasta ratio - I would double the amount of noodles next time. I also think the beef needs to be seasoned with garlic powder, salt, and pepper. We used onion and fresh mushrooms in place of zucchini and squash. Yummy!!

Taco Dinner

Reviewed: Jul. 30, 2013
We thought this was a really good, easy taco dinner. I didn't use a boxed taco dinner - but used flour tortillas and 1/4 cup taco seasoning for the meat and veggie mixture. Good amount of veggie to meat ratio (we like a lot of veggies / beans mixed in) and some heat from the peppers, but not too much (I'm a spice wimp!) We fixed ours like we would any other taco - avocado, cheese, sour cream, lettuce, tomato, etc. Yumm!

Chicken 'N Pasta Primavera

Reviewed: Jul. 22, 2013
My hubby and I really enjoyed this recipe! I think the sauce you use will make the biggest impact on taste and how it comes together. The frozen veggie mix was quick and easy, and complemented the pasta and rice nicely. I seasoned my chicken with salt, pepper, and garlic powder while cooking and otherwise followed the instructions exactly. I used Prego Homestyle Alfredo sauce. Yumm!

JELL-O Patriotic Mini Fruit Tarts

Reviewed: Jul. 17, 2013
These are super easy, adorable and SUPER tasty - great for potluck or get together, perfect to present to company! The flavors are all light and fresh and work very nicely together. I used strawberry in place of raspberry, since that's what I could find at my store. Would definitely use these again!

HERDEZ® Lobster Tacos

Reviewed: Jul. 13, 2013
I used chicken for this recipe (hubby isn't a huge seafood-at-home fan) and these were AMAZING. The flavor of the Herdez sauce was absolutely perfect. I loved the light crunch of the grilled tortilla with the melty cheese, warm filling with just the right amount of heat, and cool toppings. I added a drizzle of sour cream which was mixed with some of the Herdez tomatilla sauce and the whole meal was fantastic!! Definite keeper!

HERDEZ® Tomatillo Verde Huevos Rancheros

Reviewed: Jul. 13, 2013
This recipe is really fantastic. I didn't use nearly the full amount of sour cream mixture - I would probably only make half the recipe for that next time. I am not a fan of raw onion, so I sauteed the onion and tomato together for about 10 minutes while I prepped everything else, then added in the tomatilla sauce to it a couple minutes before it was done cooking, spread that around the outside of the tortilla and then sprinkled some diced avocado over top. I think just to make it simpler, I might use a Tablespoon or two of salsa sprinkled around the outside edge along with the avocado (in place of the onion / tomato) next time. This was SUPER filling and really, really delicious. I ate it for lunch and really enjoyed it!! (I was out of refried beans, so I smooshed up some cooked pinto beans in place of it).

Easy Baked Chicken Cordon Bleu

Reviewed: Jul. 12, 2013
I love how EASY this recipe is, and yet it yields a very nice "change of pace" chicken dinner that is special. I added a little grated parmesan cheese to my breadcrumbs, and used some provolone cheese slices instead of mozzarella since I had some to use up and we definitely enjoyed this meal! Served with a Caesar Salad and some garlic texas toast. Yumm!

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Jul. 6, 2013
I used 2 full eggs, and had to add probably another 1/2 cup flour to get the dough to the right consistency and they were SO GOOD. Chewy, with a little bit of crispy on the bottom and edges, just the right amount of chocolate chips. They were perfect!!

Memaw's Lemon Sunshine Cake

Reviewed: Jun. 26, 2013
I did swap peach nectar for lemon lime soda (I used diet Sun Drop), I used sugar-free lemon pudding mix and otherwise followed instructions / ingredients per the original. This cake is FANTASTIC!! Lemon-lime soda makes a great substitute if you don't have peach nectar around. I would recommend halving the glaze - I thought the 2 cups of powdered sugar concoction was too much - it puddled around the base and made the bottom a little soggy, and I had to keep pouring it back into the bowl and re-drizzling it over the top trying to use it all. The glaze is a great addition, but I think half would be perfect. Great recipe!!

The Country Cook: Easy Apple Dessert Pizza

Reviewed: Jun. 18, 2013
This was a little overly sweet (too much icing!) and is best fresh, and not reheated (the icing runs), but it was fun to make and tasty. I suggest using a regular sized crust, and not thin as the topping is so sweet if the crust is thin is seems TOO sweet, but having a decent crusty base "anchors" it and balances it better! Yumm! (My teenager LOVED this recipe.)
