Chicken, Sausage and Zucchini Pasta

This was SO GOOD. One of my favorite pasta dishes I've had in a long time. I used Johsonville ground Italian sausage (since that's what I had) and otherwise followed the recipe pretty much as written and LOVED it! Leftovers reheat great too. I did omit zucchini since my boys don't eat it - but I would have liked it in this a lot. I used fresh mushrooms instead of canned to use up what I had.

Ground Beef and Rice with Cheese

I made this for the http://6ingredientsorless.johnsonville.com/ Johnsonville Sausage 6 Ingredients or Less challenge so replaced the beef with mild Italian sausage. I cooked 1 cup brown rice with 2 cups water, and used only 2 cans of soup and 1 TBS chili powder (since the sausage had seasoning already). This was very tasty!! We liked it a lot - quick and easy. I used a 2-qt baking dish and layered twice, putting 4 slices of cheese on each layer.

Pollo Fajitas

We have made this recipe twice in one week - both times with steak so I am sure it is fabulous with chicken as called for! We will definitely try it with chicken soon - but we definitely loved this one with steak. Super tasty!!

Noodles Napoli

This was a good dish - I found the extra steps involved a little strange and think you could probably get the same results by cooking the ground beef, sausage, onion, and garlic all together in the skillet, then adding in the remaining ingredients and simmering. I thought this was a fresher tasting Hamburger-Helper type dish and my son and I really enjoyed it! I left the cheese off of mine since I can't have dairy but otherwise followed ingredients and instructions - I added a little extra s&p along with garlic powder after taste testing before serving.

Gunk on Noodles

We thought this one was very good! Easy weeknight meal. We thought the meat mixture was very similar to sloppy joes, and it worked well on the pasta. Some parmesan cheese on top might be a nice touch.

Swiss Cheese Noodle Bake

We thought this was a very good simple weeknight dinner. My son thought the swiss cheese gave it a somewhat odd taste, but my husband said it was good. I halved the recipe and used shredded cheese instead of sliced.

Apple Coffee Cake

Super tasty breakfast cake recipe that we all really enjoyed! I used a large fuji apple since that's what I had, and replaced the yogurt with additional sour cream and otherwise followed the recipe as written. Delicious - the texture was great as well. 35 minutes was perfect to get a nice crunchy texture on top and tender cake crumb. Yummy!

Morgan's Amazing Peppermint Bark

This is as easy as it gets - and yet so tasty and delicious! Super creamy and the peppermint flavor goes so well with the white chocolate. This is my son's favorite Christmas treat and is on the "to make" list each Holiday season. I like to smash the peppermint pieces pretty (leaving a few larger pieces) to really infuse the flavor throughout the white chocolate. I use a 12-oz package of white chocolate chips and about 30 pieces of round peppermint candies, crushed.

Made this last night - it came out PERFECTLY and my boys adored this recipe. The meat was so tender and the seasoning on the outside edge was perfect to compliment the meat. So moist and delicious!

Harvest Pumpkin-Oatmeal Raisin Cookies

This recipe is amazing. I used Smart Balance margarine, regular brown sugar, about 1/4 cup of nuts and 1/2 cup of cranberries (instead of raisins). They disappeared in no time flat! I took them to my 14 year old son's soccer practice and the boys devoured them - several wanted seconds, and some wanted the recipe. I figured that's pretty high praise for a pumpkin cookie recipe with nuts and fruit in it! The light, cakey texture is perfect, and it definitely has JUST the right amount of sweetness without being overly sweet. I will use this one again and again. Yumm!!

Johnsonville Italian Sausage Sliders

These are absolutely fantastic - and SO EASY! The Johnsonville sausage really adds great flavor to the meat and makes a perfect burger or slider. We topped with traditional burger toppings - easy to make your own, add your favorite toppings and enjoy these! Yumm!!

Johnsonville® Italian Sausage and Pepper Skillet

We've been enjoying a similar variation of this recipe for years - we like to serve this tossed with fettuccine or linguine and topped with a little grated Parmesan. Absolutely delicious and love how full of fresh veggies this is. Thanks for the great recipe Johnsonville! (Johnsonville Mild Italian Sausage is our favorite - it works really, really well in this recipe).

Classic Smoked Sausage Mac and Cheese

The Butterball sausage in this dish is FANTASTIC. I think it needs about half the called for Velveeta (we found the flavor a little too strong), but otherwise this is really a great recipe - pure comfort food. I skipped the extra butter on top, it doesn't need it, and didn't use the full amount of called for Panko bread crumbs. The bread crumbs really do add a nice level of texture to the cheesy noodles. It would be great with a package of frozen broccoli mixed in as well. I found the full recipe made more than my 9x13 pan could hold, and had to use 2 baking pans to hold it all!

Sizzling Bison Steak Stir-Fry

I made a few minor changes to use what I had on hand (1/2 tsp powdered ginger in place of fresh, 1 can drained mushrooms in place of fresh, 1 cup frozen broccoli in place of fresh). I omitted the bamboo shoots. I used stir fry sauce instead of teriyaki sauce. This recipe was awesome!! The amount of sauce was perfect for the veggies / meat, and the bison was absolutely delicious in this recipe. Tender, great texture, and wonderful flavor. I am looking forward to making this again soon!! I did add a little salt and pepper to the meat while it was cooking as well - not sure if it really affected the flavor or not.

Three Berry Pie

I did use a different pie crust recipe (Pie Crust IV), and upped the cornstarch to 1/4 cup as suggested by others. This came out so good! I used 24-oz of frozen mixed berries and it was so delicious. I've never used frozen fruit before and loved how easy this pie was to throw together. It got great reviews from the guys who enjoyed it after dinner tonight and went beautifully, still warm from the oven, with some vanilla ice cream. Definitely will use this one again!!

Turkey Bacon Breakfast Burrito

This was delicious!! I whisked my eggs with a little water and cooked them scrambled style, adding the cheese along with the bacon directly to the eggs. I used vegetarian chili instead of "seasoned beans" and I thought this was a wonderful breakfast, especially with the sour cream and salsa. Yumm!! Very hearty and filling.

Banana Muffins II

YUMM!! Made this exactly as written and we loved how these came out - great texture, flavor, and moistness. You could probably easily replace the butter with applesauce, and reduce the sugar a little (if using very overripe bananas like I did) - but really these don't need to be changed at all. We all really enjoyed these, and the leftovers were great the next day for a quick breakfast snack.

Cranberry Thanksgiving Turkey Sandwich

This is SO GOOD. I actually had posted a very similar sandwich recipe to my blog this past January because these flavors just go beautifully together! I use only about 2 tsp of mayo on mine, and sometimes like to add provolone or swiss cheese and maybe some sliced dill pickles to change it up. This time I made it just as stated (just with a little less mayo, and used romaine leaves instead of shredded lettuce) and it is a FANTASTIC sandwich - perfect to pack and enjoy at work. Yumm! :)

Beef and Pasta Skillet Primavera

This is a great base recipe, but we all agreed it was WAY too much meat to pasta ratio - I would double the amount of noodles next time. I also think the beef needs to be seasoned with garlic powder, salt, and pepper. We used onion and fresh mushrooms in place of zucchini and squash. Yummy!!

Taco Dinner

We thought this was a really good, easy taco dinner. I didn't use a boxed taco dinner - but used flour tortillas and 1/4 cup taco seasoning for the meat and veggie mixture. Good amount of veggie to meat ratio (we like a lot of veggies / beans mixed in) and some heat from the peppers, but not too much (I'm a spice wimp!) We fixed ours like we would any other taco - avocado, cheese, sour cream, lettuce, tomato, etc. Yumm!
