Shrimp Lemon Pepper Linguini

I thought this was a great base, and very easy to tweak to your personal preferences. I reduced the amount of pepper, added some garlic powder, a little more wine, broth, and a splash more lemon juice. I topped with fresh grated parmesan cheese. Yum!

Guacamole

I omitted onion and cilantro (we don't like them), and subbed about 3 TBS of salsa for the tomato (I was out!!) and we all LOVED this recipe. My 14 year old actually made this himself and was SO proud of how it came out - between three of us we ate up more than half of it in one sitting! Perfect with chicken tacos and tortilla chips.

Mushroom Fettuccine Alfredo

I used half cream and half 1% milk, and thought this needed a bit more Parmesan cheese. I added a lb diced cooked boneless skinless chicken breast too - and we all really enjoyed this dinner! Very good!!

Old-Fashioned Shortcake

I followed the recipe exactly as written (though I did have to bake an extra 10-15 minutes before it was set in the middle) and this was a FANTASTIC shortcake recipe! We had guests over, and all 5 of us LOVED this recipe. Delicious (especially with some fresh made whipped cream - YUMM!)

Old Fashioned Strawberry Shortcake

I followed the recipe exactly as written (though I did have to bake an extra 10-15 minutes as well before it was set in the middle) and this was a FANTASTIC shortcake recipe! We had guests over, and all 5 of us LOVED this recipe. Delicious (especially with some fresh made whipped cream - YUMM!)

The Best Steak Marinade

This was SO YUMMY!! We put steaks in to marinate the night before and cooked them about 24 hours later - DELICIOUS recipe. I really liked this on the thicker cut steak - it was a little strong in flavor on the thinner pieces but really perfect for a thick cut of meat.

Crockpot Enchiladas | Life As Mom

This was really good - super easy meal for the crockpot with just 4 ingredients. I used 2 chicken breasts, cubed and mostly cooked and did 2 layers of tortillas, sauce, meat, and cheese and finished with tortillas, sauce, and cheese. I liked having the chunks of chicken to break up the soft texture of everything else. Great to serve with some tortilla chips and spanish rice!

Everyone's Favorite Cookie

I halved this and "dumbed down" the recipe to be lazy (I didn't use a food processor on the oatmeal and I didn't add the grated chocolate bar)! I skipped the nuts for family preference as well, and just rolled the dough into about 21 walnut sized balls and put them on ungreased cookie sheets, didn't flatten. They cooked up BEAUTIFULLY in 10 minutes. They looked wet still, but I let them sit on the baking sheets about 2-3 minutes then moved them to a cooling rack and they were perfect, lightly browned on the bottoms but still soft and chewy. Definite keeper!!!

Brown Sugar Meatloaf

We LOVED this meatloaf recipe. I split the glaze half on the bottom, half on top of the meatloaf and otherwise followed recipe exactly as written. Yumm!!

Slow-Cooker Corned Beef and Cabbage

I used beef broth (about 1 cup) and didn't add the extra water. I cooked on low 6 hours, then added the cabbage and cranked to high for 2 more. The veggies were perfect (I omitted onion); the roast wasn't quite as falling apart tender as we usually like it but still great! I think next time I would add a cup of water to cut the saltiness of the beef broth and cook the roast on high 4 hours, then add the potatoes and carrots and continue cooking as directed. I didn't want mushy veggies, but did think the roast needed more time at the higher temp.

Aunt Betty's Blueberry Muffins

I added 1/2 cup milk to the batter (seemed very dry and many of the comments I read mentioned them being dry/crumbly) and we all REALLY enjoyed this recipe! The flavor was great - very coffee cake like along the top with the cinnamon sugar topping. The texture was really nice.

Cheddar Bacon Hamburgers

This was great!! I omitted the horseradish and used real bacon (cooked crispy and diced small) in place of the bacon bits. My boys loved these burgers and I loved that it was all mixed together, and super easy to make!

Johnsonville Easy Sausage Pizza

I used a homemade pizza crust and cooked the sausage with some diced onion, pepper, and fresh mushrooms in a skillet for about 15 minutes (then drained) before adding to the pizza crust. Topped with a blend of mozzarella and cheddar. Delicious! Johnsonville Sausage is flavorful and has a great texture that both my boys definitely enjoyed.

Easy Lasagna II

We thought this was a good lasagna recipe - fairly similar to the one I normally make, but a little overboard in the cheese layers. I pre-boiled my noodles for about 8 minutes and only used a 24-ounce container of cottage cheese and it was still too cheesy for us. I'd cut the cheese filling portion to about half (1 1/2 cups of cottage cheese, 1 cup of mozzarella, 1 egg, 1/4 cup parm, S&P and parsley). That would have been a better ratio for us, it still tasted fantastic! I also subbed Johnsonville Italian Sausage for the ground beef which was a wonderful addition, it added great flavor and a hearty texture! ETA After heating leftovers I would actually probably not change the cheese amount - it reheats really well and the cheese layers aren't overly gooey after it has a chance to fully set. My son requested I make this one "more often". :)

Faye's Pulled Barbecue Pork

This was SO good! I scaled to 3 servings for my 2lb roast and put the rubbed roast with a little bit of water and the chopped onion in the crock pot on low for about 7 hours. Then drained, shredded, and added Sweet Baby Ray's BBQ sauce. Everyone enjoyed this recipe very much!

The Casserole

This was great for a quick week night dinner! I used fresh carrots and mashed my potatoes with butter, milk, and some salt and pepper. The only thing I would do differently is add some seasoning to the ground beef next time as well (salt, pepper, and garlic powder). Otherwise this was really tasty and filling! We decided it was like Hamburger-Helper/Shepherd's Pie.
