Mom's Hearty Beef Stew with Dumplings

Reviewed: Nov. 26, 2014
I definitely "took liberties" with this recipe - but it is forgiving, and a fantastic base to tweak to your personal preferences. I used less water and gravy packets (because my hubby doesn't like soups / stews very much so I keep them as thick as possible), used 3 large russet potatoes, omitted the turnip and used a packet of mushroom gravy and chicken gravy since I was out of "brown". I added a little seasoning to the dumpling mixture as well - some garlic salt, parsley and basil. I only had 2 hours as well since I started dinner later then intended. Came out SO GOOD. The meat was still tender, thick with gravy and yummy potatoes and veggies, and the dumplings were fantastic. I will definitely make this one again.

Sausage Mushroom Pizza

Reviewed: Nov. 20, 2014
Easy to tweak to personal tastes and a DELICIOUS pizza recipe! I cooked on foil and baked in my oven, using a pizza dough recipe I found on Kraft that we like (I made one large 16" round pizza), and adding diced onions and peppers to the sausage when I cooked it. I used canned mushrooms since we were out of fresh. I used mozzarella cheese and sprinkled Italian seasoning and garlic powder on the ingredients to give a little extra "Italian" flavoring, along with the sprinkling of Parmesan. Baking on the foil was not only super easy for clean up, it gave a very nice texture to the crust and we all really enjoyed this dish!

Morning Glory Muffins I

Reviewed: Nov. 19, 2014
We really enjoyed this recipe! I actually had some homemade pumpkin butter in my refrigerator and it worked perfectly in place of the apple butter. The batter was definitely thick, but the grated fruit / veggies gave it the moisture it needed. My husband, 16 year old son, and 14 month old all enjoyed these. I subbed dried cherries for raisins. I also mixed the wheat germ and walnuts into the batter instead of sprinkling on top.

Salted Caramel Nut Brittle

Reviewed: Nov. 19, 2014
This is incredible brittle. I used salted roasted peanuts and omitted cashews and pumpkin seeds since I wanted to use what I had on hand - the toasted sesame seeds added a nice texture. This is definitely the best batch of brittle I've ever made at home, and I will DEFINITELY be sharing this one over the Holidays. The Reynolds Non-Stick foil works like MAGIC with this recipe - no clean up!

Almost-Homemade Buttermilk

Reviewed: Nov. 12, 2014
Use this method all the time - such a great tip for buttermilk when you don't have it or don't want to buy a whole container for one small recipe!

Followed this recipe exactly and these were almost all gone at breakfast! My 16 year old, his girlfriend, my hubby, and our 13 month old all gave these a thumbs up. Super tender and moist, good flavor, and great add-ins. Definite keeper!

Bruschetta Chicken

Reviewed: Nov. 6, 2014
Loved the flavor of the bruschetta mixture - and the seasonings worked beautifully on the chicken breasts. Perfect together! Made some cheesy bruschetta bread and green beans to serve alongside. Delicious dinner.

Baked Spaghetti I

Reviewed: Oct. 15, 2014
I used elbow mac in place of spaghetti (I had some in the refrigerator already cooked up from a couple days prior, so figured it would work!), then I subbed delicious Johnsonville Italian sausage for the ground beef and added some garlic powder and minced garlic for a little flavor boost. Otherwise followed the recipe and oh my was this delicious and well received at my house! My son REALLY loved this - he ate a HUGE plateful! He cracked me up - he said "Mom, I don't know what meat this is, but I need more of it"! The sausage really kicks the flavor up and makes this creamy casserole special and perfect for a weeknight dinner! Served this with some cheesy Italian pull bread and a Caesar salad for a perfect meal.

Pancake Casserole

Reviewed: Oct. 13, 2014
This was really good, but a little too cheesy for us (which is blasphemy coming from me - we LOVE CHEESE!!) I would just tweak slightly and this would be perfect for us (and I'm positive I will make this again)! First of all, I used Johnsonville maple sausage breakfast links in place of the bacon because it sounded like a match made in heaven (and it was SO GOOD with the flavor of the casserole!) Next time I would blend the cooked and diced sausage into the batter and leave the cheese on top off (but still blend in a cup of cheese). Then serve with warm maple syrup drizzled over the top. Perfection! Love this breakfast casserole for something different!

Italian Sausage Deep Dish Pizza

Reviewed: Oct. 8, 2014
My family and I LOVED this one. Johnsonville Italian sausage is certainly the star of this recipe. I actually do not like sausage, as a general rule, but I always love Johnsonville products! I don't know what it is - they're just perfectly seasoned. Loved the pillowy crust, the sauciness, and the different blend of cheeses. Absolutely fantastic recipe. We will definitely use this one again (my son was already plotting to take leftovers cold for school lunch - and he never takes leftovers!)

Slow Cooker BBQ Pulled Pork Sandwiches

Reviewed: Oct. 7, 2014
OMG Yumm. My family LOVED this recipe! We followed the pork instructions exactly as written, and the meat was super tender, juicy, and perfectly flavored. I loved the bite of the cumin. I adjusted the seasonings for the coleslaw to suit our tastes - I started with a 16-oz bag of slaw and used the sauce ingredients as written, then tweaked from there. I added more honey, salt, and pepper but didn't increase the lime and I omitted jalapeno (spice wimp here). It was the PERFECT accompaniment. My husband and I oohed and ahhhed over this one. Juicy, crunchy, fresh, and so tasty! I can't wait to make these again. Soon.

Slow Cooker Chicken Gumbo with Shrimp

Reviewed: Oct. 5, 2014
This recipe is amazing. My family and I raved over this one. I ADORE the simplicity of throwing everything into the crock pot, and the Reynold's Slow Cooker Liners are genius! No clean up at all!! The only thing I added was some diced smoked beef sausage (kielbasa). We also sprinkled on some gumbo file before serving, since I had it! We will absolutely use this again. I love the mix of proteins and the slightly spicy, flavorful broth. Yumm!!

Toddler Muffins

Reviewed: Sep. 3, 2014
Everyone in my house from hubby, 15 year old, to 11 month old gave these a thumbs up! I used wheat bran in place of oat bran and pureed baby sweet potatoes in place of the squash since that's what I had and otherwise followed recipe exactly. These are awesome! My husband, son, and I almost ate half of these fresh out of the oven... oops. I put half of what was left in the freezer, and saved the rest out for everyone to enjoy. My daughter ate one of these up with her dinner and really seemed to enjoy it!

Saucy Shepherd's Pie

Reviewed: Aug. 19, 2014
We thought this was good but needed just a little more seasoning for our taste - I would add salt and pepper to the meat while cooking, and a handful of cheddar cheese to the potatoes once mashed (or sprinkle some cheese over the top of the potatoes before baking) - yumm!! Great recipe that is easy to adjust to your personal tastes and preferences; we added some peas to our veggie mix. :)

Creamy Wild Rice Chicken Casserole

Reviewed: Aug. 19, 2014
We loved the taste of the creamy alfredo sauce blended into this rice casserole mixture - such a nice change of pace from a typical "soup can" recipe. I love the suggestion to add broccoli and will definitely have to give that a try soon! :)

Alfredo Medallions

Reviewed: Aug. 18, 2014
Fabulous recipe - used on pork chops, seasoned, browned and simmered for about 40 minutes in the sauce. SOOOO yummy. Tender, flavorful, moist and absolutely delicious. My husband and son both gave this one a big thumbs up.

Italian Mini Meat Loaves

Reviewed: Aug. 14, 2014
Absolutely FANTASTIC recipe. I skipped the oil, and used some of the sauce to coat the bottom of the pan. I used a slightly smaller baking dish, and formed this into 3 loaves (so they would fit). My son ate a whole one by himself and my hubby and I split one. Delicious!! I really loved how moist and tender these were, and the Italian flare was such a great change of pace from our normal meatloaf recipe. Yumm!

Chicken Alfredo Pasta Salad

Reviewed: Aug. 10, 2014
I omitted the vinegar and the green onions and otherwise followed the ingredients. I cooked the chicken in the bacon grease (one less dirty pan!) and otherwise followed the instructions / recipe. I thought this was tasty! (ETA: This is really best eaten when it's first made, in my opinion, the sauce isn't creamy anymore after it's refrigerated and the pasta has time to absorb a lot of it, but you can't really reheat it that well because of the cucumber. I ate this for lunch a couple times at work, but really didn't care for the leftovers that much. I like the idea of this - but it does make a lot and is probably best eaten right away.)

Choco Peanut Butter Cookies

Reviewed: Aug. 3, 2014
I skipped the chocolate topping, but mixed in the chocolate chips (used 1 cup chocolate chips and about 1/4 cup peanut butter chips) and these cookies were absolutely FANTASTIC. I actually only made 28 cookies, large drop style cookies (baked about 11.5 - 12 minutes per batch on non-stick baking sheets). Everyone gave these BIG thumbs up. This is definitely going in my "keeper" pile! (I followed the ingredients list exactly as written, and I thought the texture adn teh peanut butter flavor was PERFECT. With how thick I made them, they came out lightly browned, with lightly crisp edges and soft and tender in the middle.)
