Reviewed: Jun. 24, 2011
I just spread a thin layer of cream cheese on a slice of ham, put a pickle on one end and roll it up - fun to make and eat!! :)

Bacon-Egg English Muffin

I loooove making breakfast sandwiches like this! A little s&p on my eggs for extra seasoning, but that's it - follow everything else. :)

Mama Moe's Scalloped Potatoes

Reviewed: Jun. 21, 2011
I halved this recipe and still had a half full 9x13 dish (with about 4-5 servings worth). I only used 1 can of cream of mushroom soup since I halved it, otherwise followed instructions and ingredients. We all really enjoyed these!! I think next time I would add a little salt and some pepper to the layers of potatoes for a little more flavor, but the cheese and soup amount was great and I really liked the creaminess from them!

Italian BBQ Pork Chops

Reviewed: Jun. 21, 2011
This sauce was amazing. I thought it smelled great when it was simmering, but I love balsamic vinegar! It was like balsamic vinagery BBQ sauce! I ended up letting it simmer on very low heat longer than the recipe called for and it got super sticky and thick and fantastic. I let the chops marinade in about 1/3 of the sauce while I prepped my side dish and then grilled. I ended up having to finish them in the oven for 20 minutes because mine were cut thick and I didn't want them drying out on the grill. We all really enjoyed this recipe!! Hubby said to save the extra sauce so we can have these again! :)

Creamy Onion Garlic Bread

Reviewed: Jun. 20, 2011
This was good, but I found it to be a little heavy on the cream cheese and a little light on the garlic flavor - I'd use about half the cream cheese and add in minced garlic for our personal tastes and preference next time. :)

Italian Salad Croutons

Reviewed: Jun. 20, 2011
Perfect!! :) Easy and delicious - I used Hawaiian honey whole wheat rolls and otherwise followed ingredients/instructions (though I didn't use a bowl to toss these in, I drizzled the butter mixture over the bread cubes directly on the cookie tray!) :)

Penne Pasta with Gorgonzola and Chicken: Recipe Shoebox

Reviewed: Jun. 20, 2011
YUMM! Hubby loved this one - followed instructions but only used 1 5-oz container of gorgonzola instead of the 8-oz called for and it was plenty flavorful, IMO!

Mini OREO Surprise Cupcakes

Reviewed: Jun. 17, 2011
I skipped the cream cheese filling, and used vanilla frosting (topped with another mini cookie) and made these for my son's b-day party (HUGE oreo fan, that one!) He loved them and thought it was so cool that there was a cookie inside! :)

Shepherd's Pie VI

Added 1 TBS worcestershire to the beef mixture (along with s&p to taste) and used a bag of (thawed) frozen peas and carrots instead of fresh carrots. Omitted onion from the mashed potatoes - this was AWESOME!!!

Oven-Fried Pork Chops

Reviewed: Jun. 13, 2011
These were wonderful! Super easy to prepare as well. I added the step of dipping them in seasoned flour before the egg wash and then breading (and used 1/2 cup seasoned bread crumbs instead of stuffing mix). I had to cook mine an extra 10 minutes since they were still a little pink in the middle, but they did stay juicy and had a nice crunch on them!

Fried Round Steak | The Pioneer Woman Cooks | Ree Drummond

Reviewed: Jun. 10, 2011
Simple, hearty, tasty country food! Definitely season these well - I thought the texture was great but next time I would add more s&p for flavor since they're not getting any flavor from gravy or a marinade or anything else. Made for a great meal with whiskey glazed carrots and crash hot potatoes!

Whiskey-Glazed Carrots | The Pioneer Woman Cooks | Ree Drummond

Reviewed: Jun. 10, 2011
These are wonderful! I love the cooking method - yields a perfect texture for the carrots! We used Makers Mark and I don't think I let it simmer long enough because the whiskey flavor was still pretty potent, so I will let it burn off a little more next time, but otherwise these were AWESOME and went great with crash hot potatoes and fried round! :)

Crash Hot Potatoes | The Pioneer Woman Cooks | Ree Drummond

These potatoes are freaking awesome. So easy to prepare, and the crunchiness with the flavor is wonderful! Great alternative to mashed or traditional baked! Everyone loved them! I used a little dried and crushed rosemary instead of fresh.

Chicken Parmigiana | The Pioneer Woman Cooks | Ree Drummond

Reviewed: Jun. 9, 2011
I know I cheated and used canned sauce instead of using the crushed tomatoes and wine, but otherwise followed this recipe and it was great!! I am definitely going to try it again using the homemade sauce as well! (And I am going to make sure I use thinner chicken breasts, mine were thicker and had to cook awhile!

16-Minute Meal: Shrimp Scampi | The Pioneer Woman Cooks | Ree Drummond

Reviewed: Jun. 9, 2011
This is the best shrimp dish I've ever made at home. It was fabulous. The only think I tweaked was using jarred minced garlic, lemon juice instead of fresh lemons, and dried herbs to use what I had already, and I only used about 6-7 ounces of pasta instead of the full 8 since that seemed to be the right amount for the sauce! YUMM!!!

Favorite Banana Bread - kraftfoods.com

Reviewed: May 28, 2011
Good bread - very moist and tender, would maybe add a little sweetener to it next time and I used 4 bananas and it calls for 3 and even with 4 it didn't have a very strong banana flavor, but I think the extra banana did contribute to making it a lot softer and with less of a "bread" texture. I'd like to try it with 3 bananas and about 1/2 cup more sweetener.
