Slow-Roasted Beef for Sandwiches

This recipe is A-MA-ZING. I wasn't able to leave the seasonings on as long as requested, so we just baked it with everything on and we all fought over the leftovers of this one. Perfect for thin slicing and eating on sandwiches. Delicious!!

Grands!® Monkey Bread

The only thing I do even a little different is to combine the butter and brown sugar over medium heat until it comes to a simmer and is fairly well combined. I lay half the biscuits (quartered and tossed in cinnamon sugar) in the greased tube pan, then sprinkle on half the diced walnuts and half the brown sugar / butter syrup. Top with remaining quartered cinnamon-sugared biscuit pieces and remaining nuts and syrup. This makes a special and delicious breakfast that my family inhales.

Chicken Lemon Linguine

I didn't end up using all the pasta since we like ours to be on the very saucy side, so used probably about 3/4 of the amount I cooked. Wouldn't change a thing - the sauce was creamy, bright, and fresh with the lemon. I cooked up some diced chicken in olive oil with salt and pepper, then removed that from the pan and followed the directions as written. My whole family enjoyed this, and I would definitely use this one again. The only thing I might change is to add some diced steamed broccoli, asparagus, or peas to the mixture to make it a complete one-pan-meal. :)

Spicy Ginger Cookies

These are wonderful cookies - if you want to keep them at all soft / chewy definitely don't overbake though! I cut the cayenne pepper in half, but otherwise followed the recipe as written. I made the cookies just a little smaller then called for as well, so ended up with a few more then the recipe said it would make (which is unusual, usually I make my cookies large and end up with way less then the recipe said it would make)! They are delicious - great mix of spices in this one - they are warm, soft, crunchy, chewy, spicy and delicious with a big glass of milk to wash them down!

Lemon Garlic Chicken

Easy, quick, and full of flavor. I used 2 large boneless skinless breasts, and cut them in half to make sure they cooked through without drying out. I don't think I used the full amount of seasonings, but just seasoned generously during cooking. Everyone enjoyed this simple, easy, and delicious chicken!

Healthy Chocolate Mug Cake

I should have read all the reviews before making - I used an oversized mug, but it still erupted all over my microwave and wasn't cooked all the way through after 2 minutes. I like the idea and would try again, just not in 1 mug. I wasn't too thrilled with the texture either; a little "rubbery" to me...

We used fresh baked biscuits instead of bagels (since that's what I had) and really liked these yummy treats! Good combination of flavors and easy to tweak and adjust with different toppings if desired.

Crispy Peanut Butter Chocolate Log

This was good - but VERY rich and chocolatey. I was hoping to taste the peanut buttery rice krispie layer more, but all I really tasted was a lot of chocolate! It is good if you have glass of milk to drink with it.

Healthy Turkey Tex Mex Chili

This was great! I used dried pinto beans instead of black beans (since that's what I had), and we used cooked turkey I already had in the refrigerator (from the Simple Classic Roasted Turkey on AR) - I only added a little more chili powder and a dash of salt to the seasoning. We served over rice with some sprinkled Cheddar cheese on top. Made some Cornbread Made with Coconut Oil from AR to go with it, and it was a very delicious and comforting meal. (I did cut down a little on the sweeteners - I was out of molasses, so just used the TBS of maple syrup and thought that was just the right touch of sweet.)

Cornbread Made with Coconut Oil

A little on the crumbly side but absolutely delicious cornbread!! Great texture and taste. I halved the recipe and baked in an 8x8 pan, it rose and browned beautifully and was delicious with some turkey chili.

Matcha Smoothie

I didn't have OJ so threw in a heaping TBS of orange juice concentrate with a cup of water along with the other ingredients and I really liked this one! This is the 3rd matcha smoothie I've tried, and it's actually my favorite so far. Simple, clean flavors. Adding in some more tropical fruits would be great, but I don't think they're necessary (mango and pineapple would go really well with this mix).

World's Largest Peanut Butter Cup

Yummy! My whole family really enjoyed this pie. I used a large box of chocolate pudding instead of a small box of vanilla and chocolate (since I didn't have the small boxes). I also didn't use nearly the full amount of chocolate and peanuts for the topping - just enough for a light coating. Creamy, just the right amount of sweet and delicious!

Shortbread Cookies with Chocolate and Almonds

I used a different baking method (rolled mine into a log and refrigerated for about 2 hours, then sliced and baked for 10 minutes at 325), and added chopped maraschino cherries to my dough. For half of my cookies I melted milk chocolate and spread it over the bottom halves and sprinkled with chopped almonds, the others I left plain. We really enjoyed both versions! Very soft, tender cookie - and so pretty with the chocolate and almonds!

Turkey Stock

Very good basic stock recipe! I let mine simmer longer than called for and didn't have celery on hand this time, but otherwise followed ingredients / instructions. As soon as it cools, I'll be dividing this into some ziplocs and getting this liquid gold in the freezer!

Wild Rice and Leftover Turkey Casserole

This is a great base recipe to change-up to your family's tastes / preferences. I cooked my rice with the onion before mixing with the chopped turkey (and I mixed in some thawed frozen veggies) and added a sprinkling of cheesy crackers over the top then baked 20 minutes and it was really good! My family ate it all up for a tasty weekend lunch.

Peanut Butter Energy Balls

Absolutely delicious. I made the mistake of only making half the recipe since I wasn't sure how they would come out! I will DEFINITELY be making these again. The texture after they solidify in the freezer is really nice - chewy, firm, but still soft somehow. They remind me of a pulverized PB & Honey Sandwich. My 16-year old son and 16-month old daughter approved as well. :)

Simple Mashed Sweet Potato Casserole

Super simple and tasty recipe. We added a sprinkling of cinnamon over the potatoes before adding the maple syrup / butter mixture. My husband and son said it was good but asked for some chopped nuts with brown sugar topping next time.
