Saucy Shepherd's Pie

We thought this was good but needed just a little more seasoning for our taste - I would add salt and pepper to the meat while cooking, and a little s&p to the potatoes with a handful of cheddar cheese (or sprinkle some cheese over the top of the potatoes before baking) - yumm!! Great recipe that is easy to adjust to your personal tastes and preferences; we added some peas to our veggie mix. :)

Creamy Wild Rice Chicken Casserole

We loved the taste of the creamy alfredo sauce blended into this rice casserole mixture - such a nice change of pace from a typical "soup can" recipe. I love the suggestion to add broccoli and will definitely have to give that a try soon! :)

Alfredo Medallions

Fabulous recipe - used on pork chops, seasoned, browned and simmered for about 40 minutes in the sauce. SOOOO yummy. Tender, flavorful, moist and absolutely delicious. My husband and son both gave this one a big thumbs up.

Italian Mini Meat Loaves

Absolutely FANTASTIC recipe. I skipped the oil, and used some of the sauce to coat the bottom of the pan. I used a slightly smaller baking dish, and formed this into 3 loaves (so they would fit). My son ate a whole one by himself and my hubby and I split one. Delicious!! I really loved how moist and tender these were, and the Italian flare was such a great change of pace from our normal meatloaf recipe. Yumm!

Chicken Alfredo Pasta Salad

I omitted the vinegar and the green onions and otherwise followed the ingredients. I cooked the chicken in the bacon grease (one less dirty pan!) and otherwise followed the instructions / recipe. I thought this was tasty! (ETA: This is really best eaten when it's first made, in my opinion, the sauce isn't creamy anymore after it's refrigerated and the pasta has time to absorb a lot of it, but you can't really reheat it that well because of the cucumber. I ate this for lunch a couple times at work, but really didn't care for the leftovers that much. It made such a big dish and I ended up throwing almost half of it out because my husband and son wouldn't eat it which was disappointing. I like the idea of this - but it does make a lot and is probably best eaten right away.)

Choco Peanut Butter Cookies

I skipped the chocolate topping, but mixed in the chocolate chips (used 1 cup chocolate chips and about 1/4 cup peanut butter chips) and these cookies were absolutely FANTASTIC. I actually only made 28 cookies, large drop style cookies (baked about 11.5 - 12 minutes per batch on non-stick baking sheets). Everyone gave these BIG thumbs up. This is definitely going in my "keeper" pile! (I followed the ingredients list exactly as written, and I thought the texture adn teh peanut butter flavor was PERFECT. With how thick I made them, they came out lightly browned, with lightly crisp edges and soft and tender in the middle.)

Quick and Tasty Chicken Marsala

Quick and tasty! I used chicken breasts cut in half so I didn't have to pound them. The sauce was very tasty (I had to use half wine / half beef consomme since I didn't have enough wine). I reallllly loved the fresh mushrooms and the sauteed onions in this - they were so delicious! My son really enjoyed this dish as well.

White Fiber Mini Shells with Cherry Tomatoes, Basil and Parmigiano-Reggiano Cheese

Thin Spaghetti with Garlic, Red Pepper and Olive Oil

This makes a really big batch (obviously since you use the whole box! :) ) I used minced jarred garlic and dried parsley and otherwise followed the instructions. I thought this was very good, and a perfect side dish for just about anything, and also would be so easy to toss in some veggies or a protein if you want a more complete all in one meal. My 10 month old LOVED these noodles and I will mix in some of her veggie puree into some chopped noodles for her for lunch tomorrow. Very simple, easy to make, comes together quickly and very tasty with just a hint of heat (and I'm a spice wimp - and this was perfect for me).

Grilled Sausage Burrito

This was FANTASTIC. I don't like spicy things so really wasn't expecting to like this, but I really, really did. We charred the bell peppers on the stovetop since it was raining outside and I cooked the sausages in the oven on 350 for 20 minutes. I used pinto instead of black beans and corn tortillas since that's what we had on hand. Otherwise followed the recipe and will definitely use this again (the charred bell peppers really added a unique, smoky and wonderful flavor)! Yumm!!

Tina's Halloween Quesadillas

This is super simple and super tasty just as written! You could certainly spice up the sweet potato mixture with caramelized onion, sauteed garlic, and any number of spices / seasonings - however I really enjoyed the simplicity of the texture and flavor of the mashed sweet potato with the black beans and some salsa to top them off. I will definitely make these again! Yummy!

Turkey and Black Bean Burger

I really enjoyed this recipe! The ground turkey I used was a little on the wet / finely ground side and because of that my burger patties wanted to fall apart; but they tasted very good; I loved the caramelized onion and melted cheese on top and the garlic flavor of the turkey burger. I caramelized my onions for about 15 - 20 minutes to get them good and browned and tender, but other than that followed the recipe exactly. Thanks!!

Sesame Beef

Made this last night - it was very good, though I did add a splash more Worcestershire and soy once I tasted. The top round I used was fairly chewy, so we let it simmer in the sauce for probably an hour at least before it was getting tender and then we served with broccoli over rice. For quick stir frying I would probably use a more tender cut of meat, or cut the meat VERY thin next time (my husband diced the meat into fairly thick slices, so I think that's why it took so long to get them to where they weren't so chewy)!

Chicken, Sausage and Zucchini Pasta

This was SO GOOD. One of my favorite pasta dishes I've had in a long time. I used Johsonville ground Italian sausage (since that's what I had) and otherwise followed the recipe pretty much as written and LOVED it! Leftovers reheat great too. I did omit zucchini since my boys don't eat it - but I would have liked it in this a lot. I used fresh mushrooms instead of canned to use up what I had.

Ground Beef and Rice with Cheese

I made this for the http://6ingredientsorless.johnsonville.com/ Johnsonville Sausage 6 Ingredients or Less challenge so replaced the beef with mild Italian sausage. I cooked 1 cup brown rice with 2 cups water, and used only 2 cans of soup and 1 TBS chili powder (since the sausage had seasoning already). This was very tasty!! We liked it a lot - quick and easy. I used a 2-qt baking dish and layered twice, putting 4 slices of cheese on each layer.

We have made this recipe twice in one week - both times with steak so I am sure it is fabulous with chicken as called for! We will definitely try it with chicken soon - but we definitely loved this one with steak. Super tasty!!

Noodles Napoli

This was a good dish - I found the extra steps involved a little strange and think you could probably get the same results by cooking the ground beef, sausage, onion, and garlic all together in the skillet, then adding in the remaining ingredients and simmering. I thought this was a fresher tasting Hamburger-Helper type dish and my son and I really enjoyed it! I left the cheese off of mine since I can't have dairy but otherwise followed ingredients and instructions - I added a little extra s&p along with garlic powder after taste testing before serving.
