Beth's Spicy Oatmeal Raisin Cookies

The family loved these cookies! Since I never use shortening, I used 1 cup of butter. I also added 1/2 teaspoon nutmeg and 1/4 teaspoon ginger. I used golden raisins and soaked them in water before adding to the dough. Since I like soft cookies, I baked them for 10 minutes. I took them out of the oven when slightly brown around the edges, but they didn't really look done in the middle.

Ginger Glazed Mahi Mahi

Wonderful! I followed the recipe exactly except I used about 1 teaspoon of olive oil instead of vegetable oil to pan fray the fish. The ginger was very strong for my taste, so I think next time I will cut the amount to 1/2 teaspoon.

Delicious Pumpkin Bread

Delicious. The only change I made was to use pecans instead of walnuts. I made 4 mini-loaves and 1 small loaf (7x3 inch pan) from recipe. Four gifts and a loaf for family. Perfect amount.

Peach Crisp

I added about 1/2 cup sugar to the peaches. I also combined the cinnamon, nutmeg, allspice, and pecans to the granola topping. Served it with lowfat frozen vanilla yogurt.

Zippy Summer Shrimp
