Tandoori Fish

I made this for a potluck tonight. I don't eat much hot and spicy food but made it per the recipe for others to enjoy. I used Atlantic cod and let it marinade almost 8 hours and cooked the fish on propane grill. I plated the fish on a bed of red and yellow bell peppers that I also grilled with the fish. I was surprised to find out there wasn't the "heat" in the sauce that I thought there would be with a whole tablespoon of cayenne pepper. In fact it was quite mild. Flavor was good and went will with some of the other Indian dishes that were served at the dinner. I would suggest making this as written the first time just to know how the flavors work for you before "adjusting" it!

The Best Potato Salad

A very nice salad and made it just as the recipe is written. Next time I make it I'll cut the onion way back or maybe try a Walla Walla or a Maui sweet onion. The yellow onion I used was WAY too strong. I know, not the fault of the author! There were left overs and the onion got so strong that I couldn't eat it! Just too hard on this old man's tummy! LOL!

Best Big, Fat, Chewy Chocolate Chip Cookie

Nothing I can add to all the great things said about this recipe! It WILL be the ONLY chocolate cookie I make now! I made them exactly as the recipe was written except I made mine a little smaller. Got 2 1/2 dozen cookies about 2+ inches.

Chili I

I received some wonderful warm "fuzzies" for this dish last night! Made the recipe almost to the letter and it was great. It had a fantastic and wonderful "mole sauce" flavor that is so different from everyday chili. Only changes, I used extra hamburger, sirloin and pinto beans (that's what I had). At the end I added an extra teaspoon of salt and an extra teaspoon of chili powder. Topped with Tillimook sharp cheddar and chopped Walla Walla sweat onion. I had started this in the morning and then cooled it down in a water bath so I could put it in the fridge. I wanted to let it cool to see if I could get the flavors to blend a bit more, you know how things always taste better the next day. Any way after 4 hours in the cold box I heated it up and eight of us enjoyed a wonderful dinner with some great cornbread (Honey Cornbread) from this site! Like others have said, "Don't change it before you've tried it" and DO make it the day before if possible!

Roasted Garlic Bread

Had a potluck tonight and made this recipe. It was a hit and was fun to do something new. I used 4 very large heads of garlic so I used 1 1/2c butter, added about 1 teaspoon of salt, about 3 teaspoons of dried parsley and whipped it up in the food processor. I baked the garlic for 1 hour at 350* and will try 45 minutes at 400* next time as there was a lot of the cloves in the center that just didn't get soft as some. I didn't add the Parmesan cheese to the mixture but sprinkled it on top after spreading the mixture on the bread. I also cut my bread into slices and broiled the bottom side before spreading the mixture on. Made it a bit more crunchy and not soggy. After the Parmesan melted I added a little mozzarella and melted that on top for a little more flavor. I would have given 5 stars if the directions were better roasting the garlic.

I nice potato salad. I'll keep the recipe for a stand by but I didn't think it was anything real spectacular. I've had a whole lot of others that didn't taste as good as this one but there have been some I liked better. Just don't have those recipes!!

Empanadas

I'm sure I will eventually give this recipe 5 stars but right now I'm sitting back and licking my wounded pride. I failed at what seemed to be a simple straight forward recipe! (I'd cry in my beer but I don't like salty beer LOL) I think the whole thing boils down to not having enough time to make these. I missed the part in the directions to make the dough the day before and with only four hours until party time I went for the freezer to make things happen... They did but not good. Just couldn't get the dough to hold together. I even tried to add more flour but to no avail. Next time I'll try it the right way and update this review. Geez they sounded so good to!!

Sweet Dinner Rolls

Very nice roll. I'm eating one right now! It is the 4th of July week end and I'm making 4 batches of these (72) for a party on Sunday. I love the texture and the flavor is wonderful. I made 2 batches of regular dough and made one each of red and blue! I know how awful does that sound!! LOL Hey, it's VERY patriotic!! I'm sure they'll all go down to the tummy just fine! If your curious, I used McCormick's food coloring. I added 40 drops of color to each batch. The recipe made right at 925-930 grams of dough and I made each roll 50g. I got 18 nice rolls out of each. Try them, you'll be glad you did!

Mexican Bride Cookies

Wonderful cookies. Very few ingredients and fast to make. Tried them as a "plan B" do to the failure of another dessert I was making for a Mexican potluck. With time running out I found this recipe and still made it to the party on time! Real keeper and a big hit at the potluck. UPDATE: 12/22, Six months, can't believe there hasn't been more kudos posted to this recipe!! Made it again tonight to give as gifts tomorrow. This is one fast and bullet proof cookie to make. It's easy, looks great, and tastes wonderful!

Baked Chicken and Brie

I've rated this 4 stars only because even watching very close I couldn't keep the brie on the chicken like in the photo. I made the recipe with 6 breasts for a cooking club dinner last night and cut each into about 5 pieces and plated on a bed of shredded cabbage. Look and tasted fine and was all gone at the end of the evening. I wish I had cut the rind off the brie as it didn't melt at the same rate as the rest of the cheese. and left unsightly white lines behind. Could have been the brand of the brie.... I don't know. Make it again? Sure! Tasted good and was a quick dish to put together.

Taco Seasoning

I'm glad I found this recipe. I hate buying those expensive little packets! Tasted wonderful and not hard to put together at all! **UpDate** I've used this recipe several times now. On Beef, Hamburger, and chicken. Wonderful flavor again and again. I do use the whole recipe for 1-1 1/2 pounds of meat. Another thing I have done is add almost a teaspoon of salt.

Cherry Ice Cream

Very tasty! My company enjoyed it a lot! I did make a few changes found in the reviews. I only used 1/2t of almond extract instead of 2t. Used Half and Half instead of the yogurt, and added half of a large semi sweet dark chocolate bar chopped into small pieces. Granted the texture isn't Ben & Jerry's but the flavor is!!

Cracked Wheat Bread I

Nice recipe. The people I bake bread for gave it 5 stars. I made a few changes that were mentioned in the reviews. Butter instead of margarine, 2 cups of bread flour, 1 cup whole wheat flour, and just a bit more cracked wheat. I did make one mistake and that was I soaked the cracked wheat in water that wasn't part of the bake so the hydration of the loaf was a bit wetter and had to add a bit more flour to compensate for that. Next time I'll read the directions a little better!!

Texas Caviar with Avocado

Made a half recipe of this today and it tasted so good. I made one change. I used black beans because I didn't have any black eyed peas on hand. I put the mixture on top French bread that I cut on the bias, toasted under the broiler. Rubbed half a head of garlic against each piece and then brushed just a bit of EVOO on it. Made a wonderful topping for brochette. I'll keep this one for future use for sure!

Cheddar Cabbage Casserole

It was nice and the people at the potluck didn't say much about it. I thought it was a little salty. May have been a slip on my part.. Don't remember. Next time I think I would try buttermilk or sour cream instead of the mayo though, I think it added too much oil to the mix. Taste was good and it was something new at the potluck. One thing to mention.... the cabbage cooks down quite a bit so next time I'll heap a little extra cabbage in, maybe another cup or so.

Black Bottom Cupcakes I

Took these to a 50th birthday party for a friend. They were a big hit to say the least! I made about 48 of them and followed the review about adding some jam to the filling. Oh, that is t he kicker! I used strawberry this time but will try raspberry next time. I will go along with other about doubling the chocolate cake part. There will be plenty of the cream cheese filling for more that a double batch of chocolate bottoms!
