Cottage Cheese Chicken Enchiladas
I have never made rolled enchiladas before (I usually make mine "stacked" - less labor intensive). So I tried these tonight & as I have a bariatric surgery patient in the house, I blended all the filling ingredients together (meat and cheese mixture) into a sort of paste. They came out great & went down real easy. Oh yeah & added a clove of fresh garlic to the filling mixture, too (yum). Thanks for a great recipe!

Slow Cooker Pepper Steak
I love this recipe. I usually prefer lots of spices in my dishes, but I took a chance on this. Wow, great flavor; seems like winter-time comfort food to me. I did double the water/bouillon so mine was more like soup. Used red bell pepper only & served it over rice. Maybe will try adding some ginger next time, but I just loved it as is. Definitely a keeper.

Greek Chicken Pasta
Oh my this tastes almost exactly like my favorite dish at Carino's! I absolutely love it!!! I will take others' advice on making more sauce to go with it. I might add capers next time also. What an amazing recipe!
