I don't blog. Actually, this is a first for me. But I know that in some small way it has always enticed me, and just might be fun. The summer is here. I am always getting requests for my Potato Salad Recipe. I have been selfish, and refused to give it out, and just make it for those I care… MORE

About this Cook
I am a hard worker, and although very busy with kids and work and full-time schooling, I love to cook and enjoy baking to relieve stress. All my kids know how to bake-cook, and it's nice to turn the kitchen over to each of them a few nights a week for a break.
My favorite things to cook
I love love love to bake!! Cookies, cakes and candies are my specialty. But I enjoy trying new things, and challenging myself.
My favorite family cooking traditions
Holidays are always a tradition. But we are setting new traditions, and one of those include summer BBQ's. Our family loves to invite over friends and family, and break out the grill and my potato salad is always requested.
My cooking triumphs
I was cooking at a t young age out of necessity. I was horrible, but my brothers always told me it was good. So I had a lot of confidence in my cooking. After running restaurants and cooking for 15 years, I learned that cooking comes from the heart, and that was a major break through.
My cooking tragedies
I can't say as I have any.

Lime Chicken Soft Tacos
I made this with only one change-- the oregano ( I also used the chicken from Costco that was deboned from the rotisserie chickens. I just put the ingredients in a pan, brought it to a boil, then added the pre-cooked chicken. Then I turned off the heat and let it sweat for about 5-10 minutes while I prepared the tortillas in a cast iron skillet. I put the cheese on the tortilla to let it melt, and then added the chicken. To be honest, it didn't need all the fluff. it was perfect with just the meat and cheese. But my kids added the tomatoes, chopped romaine lettuce, cilantro (yes more cilantro.....fresh on top of the cooked cilantro with the chicken), and parmesan cheese ( we added about a tablespoon of fresh grated parmesan cheese sprinkled on top of a grated Mexican grated cheeses). no sour cream or salsa needed---it was that good!!! ) --I added fresh cilantro instead of the oregano when I cooked the chicken and fresh cilantro, in the end on top of the tacos ( about 2 tablespoons). Other than that, I made it according to the orginal directions. My family said "this was a taco comparable to the taco truck!! Best chicken taco you have made so far mom!" Thank you for the recipe. I will be making it again on Friday for my kids' friends (in 2 days). It was a big hit!!
