Cheeseburger Soup I
This turned out pretty well. I doubled the beef as others suggested to make it heartier. The recipe neglects to mention any seasoning, and it definitely needs salt and pepper throughout. I added s+p to the mirepoix, the beef, and after adding the liquids. I also used another's suggestion to use frozen diced potatoes (hash browns) because that's what I had on hand. It worked out well except the potatoes were a bit firmer than I would have liked, so if you go that route, simmer it a little longer and be sure to taste test the potatoes.

Balsamic Roasted Pork Loin
This was great, and so easy! I added a little garlic and dijon mustard to the marinade to help emulsify it and add some flavor. I also used Pomegranate balsamic vinegar because I happened to have some. I roasted it in my convection toaster oven on 350 for about 55 minutes, until the temp read 140 (really you don't need to cook it to 160!) and it was perfect. We loved the sauce!

Greek Green Beans
These were perfect, and very easy! I've pestered my Greek in-laws for years for their recipe but they don't have one written down and I never seem to be able to watch them cook these beans! Anyway, the flavor was just like we're used to from Greek family & restaurants. I used a 15oz can of whole tomatoes that I diced, instead of fresh. Worked great! This is a keeper.
