Chicken Enchiladas V

My husband and I really liked this. I used 1 whole package of taco mix instead of chili powder to my 4 shredded chicken breasts (doubled the recipe so I would have one to freeze). I added 1/2 can of red enchilada sauce to soup mix and added a dollop of refried beans to each enchilada, then used Mexican blend cheese on top. Nice adaptable recipe. Will make again.

Jen's Pressure Cooker Pot Roast

Adjusted cooktime for my 2.2 lb roast; used only 1/2 pack of onion soup mix. Added beef consomme instead of water. Cooked 45 minutes on high, released pressure, added potatoes (quartered), 1/2 onion sliced & quartered and 6 carrots (peeled and sliced in 2" logs); also added 1/2 can of chicken broth I had left over from lunch. Cooked on high for an additional 10 minutes. Great! Could have done 9 minutes on the vegetables in my Cuisinart PC; they were soft - but not mushy. Will make again and might try a variation of this recipe adding a can of cream soup. Note: My husband said I should have cooked the roast a little longer in my Cuisinart PC so I will add about 10 more mintues next time before adding the vegetables. It could have been a little more tender.

Garlic Cheddar Chicken

This was so moist and tasty. I didn't change any ingredients but did change the method only a little. My chicken breasts were really huge so I cut them in half horizontally before they were completely thawed (really easy then). Added a little garlic powder and pepper right onto the chicken before coating with garlic butter/evoo and dry mix. I used my mini food processor for the dry mix to crumble all finer. I lined a cookie pan with foil and topped with a cooling rack. Cooked on the rack for 35 minutes turning at the 15 minute mark, then broiled for 2 minutes to crisp the top. Perfect. My husband just kept raving about it. This is now my favorite baked chicken even though I found it time consuming - I am not a fast prepper. Will definitely make this again. Thanks

Bacon Ranch Pasta Salad

We liked this. I added a few small pepperoni (quartered). I chose to leave out the tomato to make the salad last a bit longer in the frig. We can always add tomatoes at the table. I used regular and lite mayo together. It is a versatile recipe. Thanks.

Strawberry Cream Cheese Cobbler

Very good cobbler. I made as directed except that I increased quantities by 1/3 so that I could make it in two 8x8 pans instead of a 9x13. I wanted an extra dish that my husband could take to work and the two of us can't eat a 9x13 size. Served warm with vanilla bean ice cream on top. Will make again...it's company good!

Spinach Stuffed Chicken Breast

This was a 4 star for us. Made as recipe stated and it was bland. Yes, I do ususally season my dishes, but wanted to try this as written. Next time, I am going to try a different recipe that uses feta cheese instead. I think feta would liven up this dish too.

Burrito Pie

We really liked this recipe for a quick week night dish. I used half turkey and half beef (hubby couldn't tell). I only had 8 oz of taco sauce so I used that and 8 oz of salsa; added extra olives because we love them. I followed others advice on doubling the the tortillas and spreading the beans onto the tortillas to make the job easier. I baked half of the recipe in a 9x9 dish and froze the other half in a 9x9 disposable foil pan covered with foil. A few weeks later, I removed the frozen one from the freezer and placed straight in a 325 degree oven for about 85 minutes (Uncovered the last 30 minutes); it was super and we did not find this soggy at all. Thanks for the recipe.

Best chicken I have had in a long time. This sauce is the best homemade Teriyaki! I made the sauce as directed except I cut back the sugar by 1/8 cup). I cooked 6 skinless bone-in thighs. I lined my dish with non-stick foil, covered for 30 minutes at 375 degrees then uncovered til done (about 45 minutes total). I served with rice and sauteed zuchinni with onion). My very picky husband said I could make this dish anytime. I told him I would like to try the sauce with baked Salmon and he was on onbard with that. Will make again routinely. Thank you!

Easy Meatloaf

This is the only meatloaf my husband will eat. I have made it many times. It is a very good meatloaf. Usally, I saute the onions first but if in a rush, I just chop them fine and throw them in. Sometimes add a splash of worchestershire sauce. (BTW - my husband wants meatloaf without breadcrumbs. LOL. He doesn't even know they are in there.)

Slow Cooker Pulled Pork

So good and so easy. I am making this for the second time; it's in the slow cooker now. My tenderloin is a little over 4 lbs so I added extra Root Beer. I make a large batch so that I can freeze quart bags of left overs for lunchs later in the month.

Jerky Lover's Jerky - Sweet, Hot and Spicy!

I have made this recipe twice without changing anything except trying several different cuts of meat. My husband wanted beef jerky so I put the first batch in and showed him how to do it. Over the next couple of days he had made several batches to take on a trip out of town. Yeah, now he can make it whenever he wants to. I don't eat jerly, but my husband said this is a 5-star recipe.
