I'm a full time professional as well as a wife and mom of two beautiful kids, one teenager and a pre-teen who love to try new foods. Cooking for me is both a chore everyday plus a joy that provides both relaxation and a sense of accomplishment.
My favorite things to cook
Thai and Asian cuisine because its a challenge to combine all the flavors which aren't familiar to me. I also love to try new ingredients and combinations.
My favorite family cooking traditions
My mother was from Norway so I have some traditional dishes I re-create for my family. Marzipan fruits, Hardanger Lefse, Meatballs with Lingonberry jam, open face sandwiches with garnishes, Norwegian Christmas Cookies and of course, Salmon with dill sauce and asparagus.
My cooking triumphs
Mango Chutney Chicken Curry- its a quick and easy recipe and always a favorite which tastes like I spent hours cooking. Prime Rib was my Christmas dinner triumph. Hardanger lefse - something they do well in Norway but I mastered a few years ago finally. Rolling it thin enough is definitely the challenge.

Buffalo Chicken Dip
I made this for the superbowl 2011 - it was a big hit. Served it with plain crackers and celery because it is so rich! Yum

Mango, Peach and Pineapple Salsa
I couldn't find good peaches so just increased the pineapple, it was more tropical tasting that way and delicious

Beer Butt Chicken
Its good but just like a grilled chicken is...tastes pretty much the same to me -but fun to stuff the butt with beer ;)
