Pumpkin Spice Cookie

Quick, simple, easy, spectacular. I did add some pumpkin pie spice to it, too. But, it was so good and so easy. Will keep this one for a long time.

Ramen Cabbage Salad

It needed some tweaking, but it was a good base (I already submitted to have a custom recipe made on it). I made it double, so I used a whole head of cabbage and two packages of ramen noodles. I recommend using the Oriental flavor because that matches right. I then, instead of sunflower seeds, used sesame seeds (eyeballed it), used sliced almonds, and also added four chopped green onions. For the dressing, as someone suggested, cut the oil in half, so I left it at a 1/2 cup, used about 5 Tbsp of sugar, and then used 4 tbsp of rice vinegar and 2 tbsp of apple cider vinegar, along with the seasoning packets from the soup package. It came out great and everyone loved it. The thing I didn't do, which I need to do and will do, is add salt and pepper (especially pepper) to taste. I needs that extra flavor and kick. That was added to my customized recipe.

Cucumber Salad I

Quick, easy, good. I cut the water down to 1 cup and used kosher salt instead of seasoning salt. But, it was wonderful. Will make it again.

Pineapple Carrot Salad

This was super easy and great. I couldn't find Pineapple yogurt, so I used Piña Colada yogurt instead. I also omitted the sugar because I thought it was unnecessary. I'll make it again and again.

This was super easy and great. I couldn't find Pineapple yogurt, so I used Piña Colada yogurt instead. I also omitted the salt and sugar because I thought it was unnecessary. I also didn't soak the raisins. I just let them soak in the salad as it cooled, and it worked just fine. I'll make it again and again.

Pat's Baked Beans (vegetarian version)

This recipe is absolutely fabulous. I omitted the bacon and the garbanzo beans (since garbanzo beans just don't seem right in baked beans) and doubled the pinto beans to compensate. I've made this a few times. It's wonderful. Moved now to my cookbook.

Dijon Yogurt Dressing

It wasn't the absolute best salad dressing I've ever had, but it was definitely good. I think part of our dislike was that we're not HUGE fans of creamy dressings. But, it was low fat (using low fat yogurt), had tons of flavor, so we cannot complain. We ran out of normal Balsamic vinegar (go fig), so I used White Balsamic Vinegar, and I used dried instead of fresh parsley. It was a dressing we'd use again. Next time, I'll try it with normal Balsamic. But, it had a good flavor and my wife and I both did like it. We just like vinaigrettes better than creamy dressings, as we found out.

Orange Citrus Vinaigrette

Quick and easy. I didn't exactly measure out the olive oil, dijon, garlic (used 2 cloves), or honey, but it worked well. Didn't have cilantro, so I didn't use it. But, it was a great, easy dressing that I made in a pinch. Will make it again and again.

Twelve Minute Pasta Toss

This was spectacular. Like someone else mentioned, I used sun dried tomatoes that were already in oil, then used the oil as the oil to cook with. Other than that, didn't change anything on the recipe. At first, I was concerned about it being dry, but if it was a tad dry, it still had tons of flavor so that it didn't matter. Everything was flavorful. It was spectacular!!! Will keep this and make it again!!

Healthy Garden Salad

This was a HUGE hit!! This was absolutely wonderful. I loved this salad. I made it exact, but I liked the suggestion of adding red onion. I will do that next time. I might add some more veggies too, like zucchini. But, it was spectacular and I've now added it to my cookbook!!!

Peanut Butter Bars I

What an unbelievable recipe!!! This was SOOOO easy to make, and it was incredibly good. I didn't have graham cracker crumbs (pre-done). I used my amazing Vitamix and it used about two packages of graham crackers ground up. Each package seemed to make one cup of crumbs. Will make this again and again. This is going in my cookbook, for sure!!! The only thing that confused me on this recipe is the serving of 12… This made WAY more than 12 bars. To get 12 bars, you would have to cut these into enormous bars… I made decent size squares and it came out to be about 42 squares.

Lime Cilantro Rice

Wow!!! How super easy is this!! I didn't really measure what I was putting in, so it was just the juice of one lime (that seemed to be really, really juicy). Omitted the lime zest. But, it was SOOO easy and VERY good. I didn't add the tablespoon of margarine in with the rice, and I felt the rice was lacking a flavor, and that was it. I will make sure to do that next time (got the wife's permission to do so; normally, she doesn't like that in anything). Will make this again in a heartbeat!!!

Chantal's New York Cheesecake

Wonderful recipes. I made this in our Vitamix blender to get the batter done, and it came out wonderful. Instead of the graham cracker crust, I used a cup of almond meal. I probably needed more than a cup (I'll possibly even double it next time to give it a slightly thicker crust), and I needed more than the 2 tbsp of margarine. That needs work. But, the cheesecake itself came out wonderful. I left it in the oven for 5 hours after I baked it, then fridged it overnight. It was wonderful. Will make it again.

Cinnabun Cookies

This recipe was good, but one change I made needed me to do lots of tweaking, and I'll have to re-do the recipe. I didn't like the thought of using shortening, let alone butter-flavored shortening. So, I used a half cup of applesauce instead. Well, it added too much liquidity, and after leaving the dough in the fridge for an hour, the dough was WAY too doughy. We had to add a lot more flour to it, and as a result, the dough didn't have as much flavor as it could have. So, with some tweaking, this could be a great recipe.

Spinach and Orzo Salad

Turned out great. As per someone else's suggestion, we added marinated artichokes chopped up and chopped olives, and it added to the flavor. It was spectacular. I might add more veggies to it to make it even healthier, but it was a great salad.

Bean Quesadillas

It was a good recipe, but a little bland. Next time, we need to add seasoning to it to give it some flavor. Otherwise, it was a great recipe. Needs some tweaking.

Black Bean, Corn and Turkey Chili

This was spectacular and SUPER easy. My wife is vegetarian, and so instead of turkey, I used Morningstar crumbles. Couldn't tell a difference (well, kinda; ground turkey still would have been better) ;-) But, otherwise, didn't change a thing. It was wonderful. My one year old loved it, too. WIll make it again in a heartbeat!!
